4 large eggs
Kosher salt
4 slices buttered brioche toast, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment and coat with nonstick cooking spray.
  • Coat 4 small bowls with nonstick cooking spray. Separate the eggs and put the whites into a medium bowl and the yolks in the small bowls (1 yolk per bowl). Add a large pinch of salt to the egg whites and beat with an electric mixer on low speed until stiff peaks form, 2 to 3 minutes.
  • Dollop 4 large spoonfuls of the egg whites onto the prepared baking sheet and make a small well in the middle of each with the back of a spoon. Bake the whites until they are firm, no longer wet and just beginning to turn brown, about 6 minutes. Gently pour 1 yolk into the well of each white. Bake until the edges of the yolk just start to set while still being runny, 3 to 4 minutes. Season with salt.
  • Serve on top of buttered brioche toast.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Beat egg whites, salt, and pepper in a bowl with an electric mixer until stiff peaks form. Fold Parmesan cheese in gently.
  • Make 2 mounds of egg whites on the prepared baking sheet. Create a small indent in the centre of the egg whites with the back of a spoon.
  • Bake egg whites in the preheated oven until lightly browned, 2 to 3 minutes. Remove egg whites from the oven and carefully place 1 yolk in the centre of each indent. Place back in the oven until yolks look set, about 3 minutes.
  • Carefully remove cloud eggs from the parchment paper with a spatula or fish slice; slide onto plates. Sprinkle chives on top.

¼ teaspoon white vinegar
1 pinch salt
1 teaspoon unsalted butter, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone liner (such as Silpat®) and butter lightly.
  • Crack 1 egg into a clean hand and then separate carefully by letting the egg white drip down between your fingers into a large bowl. Reserve the yolk in a separate, smaller bowl. Repeat with second egg.
  • Pour vinegar into the egg whites, add salt, and whip with a whisk until we have relatively firm, but not dry, peaks.
  • Spoon onto the prepared baking sheet, making sure they are not too wide, as we want some height here. Shape as desired and make a small depression in the top centers using a spoon for yolks.

2 tbsp chives , chopped
2 spring onions , finely sliced
wholemeal toast or gluten-free alternative, to serve (optional)

Steps:

  • Heat oven to 230C/210C fan/gas 8. Separate the egg whites from the yolks. Tip the whites into a large, clean mixing bowl and beat with an electric whisk until aerated and fluffy.
  • Gently fold through 1½ tbsp of the chives and the spring onion. Line a baking sheet with baking parchment, then pile on the egg whites in two mounds. Use the back of a spoon to make a dip in the centre of each one. Bake for 8-10 mins until set and turning light golden brown. Gently tip the egg yolk into the centre of the egg whites and return to the oven for a further 2-3 mins, or until the yolk has just set. Serve sprinkled with the remaining chives. 2 pieces of sprouted bread (toasted)

Steps:

  • Preheat the toaster oven broiler.
  • Toast the bread in your toaster.
  • Get two ramekins and one medium bowl and separate the egg whites into the medium bowl and the egg yolks into the ramekins so that each yolk is in its own ramekin. Try not to break the yolks.
  • Whip up the egg whites to the stiff peak stage.
  • Once the toast is done spread the margarine on it and divide the egg whites in half and put one half on each piece of toast.
  • Make a well in the middle of the egg whites on each piece of toast.
  • Carefully slip the egg yolk into each egg white being careful not to break the yolk. The idea is to keep the egg yolk whole inside the white.
  • Sprinkle with some pepper.
  • Put under the hot preheated broiler. Try not to put it any closer then 3" or it might cook the whites too fast or even burn them.
  • After about 3 minutes, check the eggs because some toaster ovens are hotter then others.
  • When done, the egg whites should be browned on top and the yolks will be runny much like a soft boiled egg.
  • Remove from the broiler put them on a nice plate and dig inches.

4 slices bread
4 slices pre-cooked ham
4 slices swiss cheese (I recommend Baby Swiss)
4 large eggs, separated

Steps:

  • Preheat oven to 350 degrees. Lightly toast bread slices and place on a cookie sheet lined with parchment paper or aluminum foil for easy clean up.
  • Top each slice of bread with a slice of ham; top ham with a slice of cheese.
  • Using an electric mixer, beat egg whites in a mixing bowl until fluffy and stiff peaks have formed.
  • Mound egg whites attractively atop each slice of bread, forming a well in the center. Slide an egg yolk into the center of each egg white well.
  • Place cookie sheet in the center of oven and bake for 10-15 minutes, or until the egg whites are lightly golden and egg yolks are just set (egg yolks will be over-easy to over-medium in doneness).
  • Remove cookie sheet from oven. Plate immediately and serve warm.

I have been eating this egg dish since I was a teenager. I learned it in Home Economics Class at School. It's fun to make and looks really pretty on the plate.

2 whole eggs
2 slice sprouted bread (toasted)
pepper to taste
2 tsp vegan margarine

Steps:

  • 1. Turn on the broiler. Toast the bread. I did this in my regular toaster because it takes too long in the toaster oven, though its up to you. This step is important because it needs to be stiff to hold the eggs. Spread with the Vegan Margarine.
  • 2. Get 2 small custard cups and separate the egg yolks from the whites. Put each yolk in it's own custard cup.
  • 3. In a medium bowl, whip up the egg whites until stiff peaks form.
  • 4. Put the toast on the broiler pan. Divide the egg whites in half and put half the egg white on each piece of toast.
  • 5. Make a small well in the middle of each egg white and carefully slip one yolk in one and one yolk in the other. Try not to break the yolk, otherwise it may run down onto the toast. The idea here is to keep the yolks in their own little cloud.
  • 6. Sprinkle with the pepper.
  • 7. When the broiler is hot put the broiler pan with the toast and egg under it and broil for about 5 minutes. Try not to put the eggs any closer then 3" to the boiler or it might burn. You can also do this in a regular oven if you prefer. Keep an eye on it, some ovens are hotter then others. When the whites are brown, the egg yolk should be runny like a soft cooked egg.
  • 8. Put your eggs on a cloud on your serving plate and dig in!
  • 9. Enjoy

1 large farm-fresh egg
1 pinch cream of tartar
2 Tbsp parmesan cheese, finely grated
cooked breakfast sausage, bacon, or ham
1 slice provolone or swiss cheese
salt, kosher variety, to taste
black pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. You will need an ovenproof baking dish about 4-inches (10cm) in diameter, with a 1-inch (2.5cm) side.
  • 3. Gather your Ingredients (mise en place).
  • 4. Cook your breakfast sausage patty, bacon or ham, and reserve.
  • 5. Place a rack in the middle position, and preheat the oven to 450f (230c).
  • 6. Add a slice of provolone, or Swiss cheese to the bottom of a greased ramekin, or other small ovenproof bowl.
  • 7. Add the sausage, bacon, or ham.
  • 8. Crack the eggs, and separate the yolks from the whites.
  • 9. Add the cream of tartar to the egg whites, and then manually whip them, or use a blender, until, stiff peaks begin to form.
  • 10. Season with some salt and pepper, and gently fold in the parmesan cheese.
  • 11. Evenly spread them into the ramekin.
  • 12. Place in the preheated oven, and bake until they start to lightly brown, about 3 minutes.
  • 13. Remove from the oven, make a small indentation in the middle, add the yolk, and sprinkle on a bit of salt and pepper.
  • 14. Return to the oven, and bake until the yolk just begins to set, about 3 additional minutes.
  • 15. Chef's Note: I like my yolk a bit runny, so I take it out after about 2 minutes.
  • 16. PLATE/PRESENT
  • 17. Serve while still hot with some toast or yummy biscuits, and do not forget to remind your guests that the ramekin is hot. Enjoy
  • 18. Keep the faith, and keep cooking.

3 tablespoons cream cheese, room temperature
1 (1 ounce) packet artificial sweetener
3 eggs
2 egg yolks
1/2 cup butter, melted
1 pinch cayenne
1/2 teaspoon mustard
1/2 teaspoon lemon juice

Steps:

  • Beat the egg whites and cream of tartar at medium speed for 1-2 minutes, or until a medium peak.
  • Beat the egg yolks, cream cheese, and sweetener until completely smooth. Mix 1⁄3 of the egg whites into the egg yolk mixture to lighten, and then fold in the remaining egg whites.
  • Spoon 1⁄2 cup dollops evenly on a parchment lined baking sheet. Spread into roughly 4-inch wide circles about 1⁄2-inch thick.
  • Bake for 20-25 minutes, until golden brown. Let cool for at least 1 hour.
  • To poach the eggs, bring a medium pot of water to a simmer. Swirl to create a whirlpool and then drop the egg into the center. Let the egg cook for 3 minutes, and then carefully remove with a slotted spoon, blotting on a paper towel and setting aside. Keep warm and repeat with remaining two eggs.
  • Combine the egg yolks, cayenne, mustard, and lemon juice in a blender and while running the blender on low, add the butter in a slow stream to emulsify. Season with salt and pepper and set aside.
  • Assemble the eggs Benedict with two cloud breads, a piece of Canadian bacon, poached egg, and then a drizzle of hollandaise. Garnish with chopped chives and serve.
