1 cup diced zucchini

Steps:

  • Heat olive oil in a large saucepan or Dutch oven over medium-high heat. Cook onion, carrot, celery, garlic and rosemary until vegetables begin to soften, about 5 minutes.
  • Stir in tomato sauce, beans and 2 1/2 cups water. Add broth, zucchini, pasta and pepper; bring to a simmer. Cook, uncovered, 10 minutes or until pasta is tender, stirring occasionally. Stir in parsley. Serve topped with Parmesan cheese and additional parsley, if desired.

1 medium red onion, chopped
2 medium carrots, peeled and diced
1 large celery stalk, diced
1/4 teaspoon red-pepper flakes
1 teaspoon minced fresh rosemary, or 1/4 teaspoon dried
Coarse salt and ground pepper
1 can (14.5 ounces) whole peeled tomatoes, drained and finely chopped
1 large potato, peeled and diced
1/4 head Savoy or green cabbage (1/2 pound), cored and thinly sliced
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 pound green beans, trimmed and cut into 1-inch pieces
1 garlic clove, minced (optional)
1/4 cup thinly sliced fresh basil, plus torn leaves for serving (optional)
3/4 cup grated Parmesan, for serving

Steps:

  • In a large pot, heat oil over medium. Add onion, carrots, celery, red-pepper flakes, rosemary, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until onion begins to turn golden, 5 to 8 minutes.
  • Add tomatoes; cook until some of the liquid evaporates, 1 minute. Add potato, cabbage, cannellini beans, and 7 cups water; bring to a boil. Stir in green beans.
  • Reduce to a simmer, and cook until all the vegetables are tender, about 20 minutes. Season with salt and pepper; stir in garlic, if using, and basil. Serve sprinkled with Parmesan and, if using, torn basil. Drizzle with more oil, if desired.

3 tbsp olive oil, plus extra to serve
1 onion, finely chopped
1 celery stick, finely chopped
1 carrot, peeled and finely chopped
1 courgette, finely chopped
70g diced smoked pancetta
1 large garlic clove, crushed
½ tsp dried oregano
1 x 400g can cannellini beans
1 x 400g can chopped tomatoes
2 tbsp tomato purée
1.2 litre vegetable stock
1 bay leaf
70g small pasta
100g greens - kale, chard or cavolo nero work well
handful of basil
finely grated parmesan, to serve

Steps:

  • Heat the oil in a large saucepan or casserole pot over a low-medium heat and gently fry the onion, celery, carrot, courgette and pancetta for 10 mins. Add the garlic and oregano, and cook for 1 min. Tip in the beans, chopped tomatoes, purée, stock and bay leaf. Season to taste. Bring to the simmer and cook for 30 mins.
  • Add the pasta and greens, and cook for a further 10 mins. Ladle into bowls and scatter with the basil and some parmesan.

3 tablespoons olive oil
1 leek, sliced
2 carrots, chopped
1 zucchini, thinly sliced
4 ounces green beans, cut into 1 inch pieces
2 stalks celery, thinly sliced
1 ½ quarts vegetable stock
1 pound chopped tomatoes
1 tablespoon chopped fresh thyme
1 (15 ounce) can cannellini beans, with liquid
¼ cup elbow macaroni
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large saucepan, over medium heat. Add leek, carrots, zucchini, green beans and celery. Cover, and reduce heat to low. Cook for 15 minutes, shaking the pan occasionally.
  • Stir in the stock, tomatoes and thyme. Bring to a boil, then replace the lid, and reduce heat to low; simmer gently for 30 minutes.
  • Stir in the cannellini beans with liquid and pasta. Simmer for an additional 10 minutes, or until pasta is al dente. Season with salt and pepper to taste before serving.

I learned to love greens as a child. When school was out during the summer, I spent two weeks with my grandparents in the country. My grandmother was a former professional cook, and my grandfather always raised a large garden. There was always vegetables galore to choose from. Kale was my favorite. Kale and Swiss chard are in the same family of greens so when I saw a recipe with Swiss chard in it, I immediately decided to make it. 1/4 lb pork fat, chopped
2 lbs boiling potatoes, peeled and diced
1 head green cabbage, cored and chopped (about 1 1/ 2 pounds)
3/4 lb swiss chard leaf, no white part,chopped
1 medium red onion, chopped
2 cloves garlic, finely chopped
6 cups water
2 cans red kidney beans (drained and well rinsed)
1 ham hock, split longways into four equal pieces (about 1/ 2 pound)
1 large tomatoes, peeled,seeded and chopped (about 10 ounces)
1/4 lb elbow macaroni
1 tablespoon salt
fresh ground black pepper
extra virgin olive oil, for drizzling

Steps:

  • In a large casserole or soup pot, cook the pork fat over medium-high heat until there is some fat in the bottom of the pot, about 5 minutes, stirring constantly.
  • Then add the potatoes, cabbage, chard, onion, and garlic until the greens are wilted, about 5 minutes.
  • Pour in the water, bring to a boil, then reduce the heat to low, add the beans, ham or smoked bacon, and tomato, and cook until the beans are tender, 2 to 3 hours.
  • Add the elbow macaroni and continue to cook until a spoon can stand straight up in the center of the soup, and the pasta is tender--about 15 minutes.
  • Season with salt and pepper, drizzle with olive oil, and serve.

This cooks up fast, but is even better if let to rest for a couple of hours before re-heating and serving (great leftovers!)

2 garlic cloves, minced
1 medium onion, chopped
1 tablespoon extra virgin olive oil
1 large yellow sweet pepper, coarsely chopped
1 medium zucchini, coarsely chopped
2 (14 ounce) cans beef broth
1 (15 ounce) can cannellini beans, rinsed and drained
8 ounces green beans, trimmed and cut into 1-1/2-inch pieces
1 cup mostaccioli pasta
1/4 cup fresh basil (fresh- coarsely chopped)
2 medium tomatoes, coarsely chopped
2 cups baby spinach leaves (fresh)
parmesan cheese

Steps:

  • In a 4-quart Dutch oven cook garlic and onion in hot oil until tender. Add sweet pepper, zucchini, broth, and 2 cups water. Bring to boiling. Rinse and drain beans. Add drained beans and pasta; return to boil. Reduce heat. and simmer, covered, for 10 to 12 minutes or until pasta is tender, stirring occasionally.
  • Stir in tomatoes, spinach, and fresh basil (if using). Remove from heat. Season to taste with salt and ground black pepper.
  • Top with Parmesan cheese. Serves 6.

4 cups tightly packed spinach leaves ( I use a bag ) or even better 1 bag of baby Kale
¼ cup extra-virgin olive oil
2 medium leeks, trimmed, washed and white and light green parts thinly
2 medium carrots, peeled and chopped
1 medium onion, chopped
1 celery rib, chopped
7 cups Vegetable Stock or water (2 cartons)
1 medium baking potato or use red potatoes if you prefer (8 oz) cut into ½ inch dice ( I don't use)
1 or 2 medium zucchini, scrubbed, ends trimmed and diced
1 28-oz can diced tomatoes
1 ½ cups Cannellini Beans (white kidney) (use a 14-15 oz Can)
Salt
Italian Sausage ( I use 4, cook separately and add to soup at the end or just to individual bowl) remove from casing and brown. We get Chicken Parmesan sausage.
Parmesan Cheese (freshly grated) or Mozerella as desired.

Steps:

  • Rinse spinach leaves, set aside. If using large leaves, you may want to chop them. I just use the bag of small leaves, and don't chop. Heat oil in a large stockpot. Add the leeks, carrots, onion and celery and sauté over medium heat until softened, about 10 minutes. Add the stock or water, potato, zucchini, spinach and tomatoes. Bring to a boil, reduce the heat and simmer gently for 1 hour. Stir in the beans and salt to taste. Simmer just until the flavors have blended, about 10 minutes. (The soup can be refrigerated for 2 days and reheated just before serving.) I sauté Italian turkey sausage, or cut up precooked chicken/turkey pesto sausage (or anyone you like) and sauté it and then add it to the soup. It adds some additional protein and flavor or you can add basil pesto to taste instead ( ¼ cup is what is suggested in the recipe). Ladle soup into bowls and serve with grated cheese.

1 zucchini, thinly sliced
3/4 cup green beans, halved
2 stalks celery, thinly sliced

6 1/4 cups vegetable stock or 6 1/4 cups water
1 (14 ounce) can chopped tomatoes
1 tablespoon chopped fresh basil
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
1 (14 ounce) can cannellini beans or 1 (14 ounce) can kidney beans
2 ounces macaroni
salt and pepper
finely grated parmesan cheese (to garnish)
fresh parsley (to garnish)

Steps:

  • Place the first 6 ingredients into a large saucepan and heat until sizzling, then cover, lower the heat and sweat the veggies for 15 minutes, shaking the pan occasionally.
  • Add the stock or water, tomatoes, herbs and seasoning.
  • Bring to a boil, replace the lid and simmer over low heat for 30 minutes.
  • Add the canned beans and their liquid together with the pasta and simmer for 10 minutes more.
  • Check the seasonings and serve hot, sprinkle with parmesan cheese and parsley, if using.

1 each red potato and carrot, peeled, chopped
1/3 cup KRAFT Zesty Italian Dressing
1/2 cup small pasta shells, uncooked
2 cups tightly packed fresh spinach
6 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Bring all but last 3 ingredients to boil in large saucepan; cover. Simmer on medium-low heat 45 min.
  • Stir in pasta and spinach; cook 10 min. or just until pasta is tender.

3/4 cup diced carrot
3/4 cup diced onion
3/4 cup diced celery

3 cups spinach leaves
1 (28 ounce) can whole tomatoes, packed in juice, drained, and chopped
8 cups water
1 pinch salt
1 (15 ounce) can cannellini beans
1/4 cup basil pesto (or 1 tablespoon minced fresh rosemary mixed with 1 teaspoon minced garlic and 1 tablespoon extra-vir)
1 pinch ground black pepper

Steps:

  • 1. Bring vegetables, tomatoes, water, cheese rind, and 1 teaspoon salt to boil in a soup kettle or pot. Reduce heat to medium-low; simmer, uncovered and stirring occasionally, until vegetables are tender but still hold their shape, about 1 hour. (Soup can be refrigerated in airtight container for 3 days or frozen for 1 month. Defrost if necessary and reheat before proceeding with recipe.).
  • 2. Add beans and cook just until heated through, about 5 minutes. Remove pot from heat. Stir in pesto (or rosemary-garlic mixture). Adjust seasonings, adding pepper and more salt, if necessary. Ladle soup into bowls and serve immediately.

1 cup chopped onion
1 cup diced carrots

1/2 cup great northern beans, soaked
1 bay leaf
Sprig of thyme
4 cups beef stock
Rind of a piece of Parmesan cheese-optional
2 cups Italian canned tomatoes and their juice
Salt and pepper to taste
2 cups diced potatoes
2 cups zucchini, diced
2 cups shredded savoy cabbage
1 cup small pasta shells
Pesto, for serving

Steps:

  • In a casserole heat the olive oil. Add the onions and cook until golden, about 5 to 7 minutes. Then add the carrots and celery and cook over low heat, stirring occasionally, for 5 minutes. Add the beans, bay leaf and thyme and toss for 1 minute. Then add the beef stock, Parmesan rind (if using), plum tomatoes and their juice, and salt and pepper to taste. (Careful with the amount of salt since Parmesan rind will add a salty flavor.) Bring to a boil, reduce heat and simmer for 1 hour. Add the potatoes, zucchini and savoy cabbage and cook for 20 minutes more or until the vegetables are tender. Finally, add your pasta and cook, covered, for about 10 minutes. Season to taste with salt and pepper, ladle into bowls and serve with some pesto.
