2 large oranges
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/2 cup chopped fresh flat-leaf parsley
2 scallions, finely sliced
3 tablespoons chopped fresh mint leaves
2 tablespoons capers, rinsed, drained and coarsely chopped
2 tablespoons orange zest
1 teaspoon lemon zest
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for oiling the grill
4 (4 to 5-ounce) center cut salmon fillets, skinned, each about 3-inches square
2 tablespoons amber agave nectar
Kosher salt and freshly ground black pepper

Steps:

  • For the salsa: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a medium bowl. Add the olive oil, lemon juice, parsley, scallions, mint, capers, orange zest, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.
  • For the salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the grilling rack with vegetable oil to keep the salmon from sticking. Brush the salmon on both sides with the agave nectar and season with salt and pepper, to taste. Grill until the fish flakes easily and is cooked through, about 3 to 4 minutes on each side. Transfer the salmon to a platter and allow to rest for 5 minutes.
  • Spoon the salsa verde on top of the salmon or serve on the side as an accompaniment.

1 medium lemon

  • For salsa, finely grate enough peel from orange to measure 2 teaspoons; finely grate enough peel from lemon to measure 1/2 teaspoon. Place citrus zest in a small bowl. Cut lemon crosswise in half; squeeze 2 tablespoons lemon juice and add to bowl., Cut a thin slice from the top and bottom of orange; stand orange upright on a cutting board. With a knife, cut off peel and outer membrane from orange. Cut along the membrane of each segment to remove fruit., Add olive oil, capers, mint, parsley, pepper flakes and 1/8 teaspoon each salt and pepper to lemon juice mixture. 2 lemons, peeled, segmented
2 teaspoons seeded serrano chilies, minced
3/4 cup canned tomatillo, diced
1/2 cup red onion, diced

2 teaspoons honey
2 teaspoons extra-virgin olive oil, plus more as needed

1 grapefruit
2 blood oranges
1 jalapeno chile, stemmed, seeded, and minced
1/4 medium jicama, peeled and julienned, about 1 1/4 cups

1/4 teaspoon chili powder
8 corn tortillas, warmed (see Cook's Note)

  • Preheat the broiler to high. Soak onion in a bowl of very cold water.
  • In a medium bowl, whisk together the lime juice, honey, 2 teaspoons of oil, and 1/2 teaspoon of salt.
  • Trim the top and bottom off the grapefruit to expose the inner fruit. Following the curve of the fruit cut off the skin and white pith. 1 salmon fillet (1 lb), cut into 4 pieces

1 small shallot thinly sliced
zest of 1 orange
2 clove garlic minced
zest of 1 lemon
1 Tbsp olive oil
4 salmon fillets
salt
1/2 c cilantro chopped
1/2 c parsley chopped
1/2 c olive oil
1/2 tsp smoked paprika
juice from 1 orange
juice from 1 lemon

Steps:

  • 1. Preheat oven 350 degrees/ Combine the shallot, orange zest , lemon zest, garlic and 1 tbsp olive oil. Season the salmon with salt and coat with zest mixture. Bake until fish flakes easily and opaque it the center. 25 to 30 minutes
