CITRUS SALMON WITH ORANGE RELISH
Based on a recipe from a McCormick Spices for Health pamphlet extoling the power of super spices as natural antioxidants. This recipe covers both baking or grilling the salmon. Cook time includes 30 minutes marinating time.

Steps:
- MARINATE SALMON:.
- Add orange juice, oil and 1 teaspoon of thyme to small bowl and mix well.
- Place salmon in large resealable plastic bag or glass dish. Add marinade and turn to coat salmon. Marinate in refrigerator for 30 minutes or longer.
- ORANGE RELISH:.
- Add all relish ingredients to bowl and mix well. Cover and refrigerate until ready to serve.
- FINISH SALMON:.
- Preheat oven to 400°F.
- Mix the brown sugar, paprika, remaining ½ teaspoon thyme and salt in small bowl.
- Remove salmon from marinade; discard marinade.
- Rub paprika mixture onto salmon, covering completely.
- Place salmon on foil-lined baking pan.
- Bake salmon 10 to 15 minutes or until fish flakes easily with a fork. Or grill salmon over medium-high heat 6 to 8 minutes per side or until fish flakes easily with a fork.
- Serve salmon with Orange Relish.

CITRUS GLAZED SALMON

- Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper or foil. In small bowl, grate lime peel. Squeeze enough juice to equal 2 tablespoons; add to peel in bowl. Grate orange peel into bowl. Squeeze enough juice to equal 2 tablespoons; add to peel mixture. Stir in agave syrup, salt, pepper and garlic. In small cup, measure 1/4 cup citrus mixture for salmon (reserve remaining citrus mixture).
- On pan, place salmon fillets, skin-side down. Using 1/4 cup citrus mixture, brush tops and sides of salmon. Bake 13 to 17 minutes or until fish flakes easily with fork. Lift salmon pieces from skin with metal spatula onto serving plate. Sprinkle with green onions. Top each fish fillet with lime and orange wedges. Serve each fillet with 3 tablespoons reserved sauce.

- For salsa, finely grate enough peel from orange to measure 2 teaspoons; finely grate enough peel from lemon to measure 1/2 teaspoon. Place citrus zest in a small bowl. Cut lemon crosswise in half; squeeze 2 tablespoons lemon juice and add to bowl., Cut a thin slice from the top and bottom of orange; stand orange upright on a cutting board. With a knife, cut off peel and outer membrane from orange. Cut along the membrane of each segment to remove fruit., Add olive oil, capers, mint, parsley, pepper flakes and 1/8 teaspoon each salt and pepper to lemon juice mixture. Gently stir in mango, green onion and orange sections., Sprinkle salmon with the remaining salt and pepper. In a large skillet, heat canola oil over medium heat. Add salmon; cook 5-6 minutes on each side or until fish just begins to flake easily with a fork. Serve with salsa.
