3 cups cubed honeydew melon
1/2 cup sugar
1/2 cup lime juice
1 tablespoon sweet white wine or water
2 teaspoons grated lime zest
2 to 3 drops green food coloring, optional

Steps:

  • In a food processor or blender, combine honeydew and sugar; cover and process until sugar is dissolved. Add the remaining ingredients; cover and process until blended. , Freeze in an ice cream freezer according to manufacturer's directions. Spoon mixture into a freezer-safe container; cover and freeze in the refrigerator freezer 2-4 hours before serving.

1 cup granulated sugar
1/2 cup loosely packed fresh mint leaves
1 1/2 cups freshly squeezed lemon juice (7 lemons)
1 tablespoon lemon zest
1 tablespoon orange zest
1 lime, zested
1 orange, juiced
Limoncello, for drizzling
Mint sprigs, for garnish

Steps:

  • In a small saucepan over medium-high heat, bring the sugar and 1 cup water to boil. Cook, stirring, until the sugar is dissolved, about 10 minutes. Remove from the heat, add the mint leaves and allow to steep until cooled, about 15 minutes. Strain the simple syrup into a medium mixing bowl. Add the lemon juice, lemon zest, orange zest, lime zest, orange juice and 1/2 cup water. Stir to combine.
  • Pour the mixture into the frozen bowl of an ice cream maker and churn according to the manufacturer's instructions. Transfer the sorbet to a deep baking dish or loaf pan, cover tightly and place into the freezer until frozen, at least 4 hours and up to overnight.
  • To serve, scoop the sorbet into a bowl, drizzle with limoncello and garnish with a mint sprig.

1 cup sugar
½ cup lime juice
1 tablespoon lime zest
2 cups honeydew melon, diced
½ cup lime juice

Steps:

  • Combine water, sugar, lime juice, and lime zest in a pot over medium heat. Once the sugar has dissolved, simmer for 30 minutes and reduce.
  • Pour simple syrup through a strainer and remove excess liquid, then let it cool to room temperature.
  • In a blender, combine simple syrup, honeydew, and the remaining lime juice. Blend until well-combined.
  • Pour into an 8×8 inch (20x20 cm) baking dish and freeze for at least 12 hours.
  • Take out of the freezer and let sit for 5-10 minutes before scooping.

1 vanilla bean, split in half
4 cups honeydew chunks
2 tablespoons lemon juice

Steps:

  • In a small pot, combine the honey with 1/3 cup water and the vanilla bean. Bring to a boil, reduce the heat and simmer for 10 minutes. Scrape the vanilla seeds into the pot and stir well. Discard the shell.
  • Pass the melon chunks through a food mill, or puree them in a food processor and pass them through a fine-mesh sieve. Discard the solids.
  • Stir all the ingredients together in a bowl. Freeze in an ice-cream maker according to the manufacturer's directions.

1 small honeydew melon
1 cup Minted simple syrup
1/4 cup packed fresh mint leaves
1 tablespoon fresh lemon juice

  • Remove and discard rind and seeds from melon and cut enough fruit into 1/2-inch cubes to measure 2 1/2 cups. In a blender puree all ingredients until smooth. Chill puree, covered, until cold, at least 1 hour, and up to 6. Freeze puree in an ice-cream maker. Transfer sorbet to an airtight container and put in freezer to harden.

1/3 cup Splenda sugar substitute, plus more
Splenda sugar substitute, if necessary
2 tablespoons lime zest (green part only)
1/2 cup lime juice, plus more
lime juice, if necessary
4 1/2 cups diced honeydew melon (about 1/2 in.)

Steps:

  • In a bowl, mash 1/3 cup Splenda and lime peel with a spoon to release oils.
  • Let stand 5 to 10 minutes.
  • Stir 1/2 cup lime juice into lime mixture.
  • Pour mixture through a fine strainer into a blender or food processor; discard lime peel.
  • Add melon, a portion at a time, and whirl until smooth.
  • Return puree to bowl. Taste, and if desired, add more Splenda and lime juice.
  • Nest bowl in ice and stir often until mixture is cold, 5 to 10 minutes.
  • Place the bowl in the freezer and allow to freeze until solid.
  • With a mixer, beat the mixture until creamy and return to the freezer. Freeze until solid.
