ROSEMARY-CITRUS GRILLED SWORDFISH



Rosemary-Citrus Grilled Swordfish image

Number Of Ingredients 20

1/4 cup sliced garlic cloves
2 cups vegetable oil
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup balsamic vinegar
1/8 cup fresh orange juice
3 sprigs fresh rosemary
8 whole peppercorns
Twelve 8-ounce pieces swordfish
Roasted Artichoke Ragout, recipe follows
6 whole artichokes, cleaned
Lemon and salt
4 tablespoons butter
Salt and pepper, to taste
2 tablespoons sliced garlic
3 tablespoons minced shallots
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh Italian parsley
1 1/4 quarts roasted chicken veloute sauce
1 cup pine nuts, toasted

Steps:

  • Steep garlic in the vegetable oil by adding both at room temperature to a saute pan. Bring to a boil, then remove from the heat and let sit for 10 minutes. Add all of the remaining ingredients except the fish. Let the marinade cool, then add the fish. Marinate for 6 to 8 hours, refrigerated. Season with salt and pepper. Preheat grill. Grill the fish on both sides until cooked through. Serve with Roasted Artichoke Ragout.
  • Poach the artichokes in water with lemon and salt. Drain and cool. Cut the artichoke hearts into quarters. Preheat the oven to 350 degrees. Roast the artichokes in a pan with 1 tablespoon butter and salt and pepper.
  • Saute the garlic and shallots in 1 1/2 tablespoons of the butter. Add the artichokes and toss together. Add the veloute and pine nuts and bring to a gentle simmer. Add the herbs and adjust the salt and pepper. Swirl in the remaining 1 1/2 tablespoons butter.

CRAYFISH SUSHI

2 cups boiled potatoes (fingerling)
1/2 teaspoon salt
1/2 teaspoon wasabi
1 teaspoon rice wine vinegar
1 teaspoon mustard
1 tablespoon mustard oil
1/2 cup crayfish tails

Steps:

  • Mash the potatoes with a fork. Add the salt, wasabi, rice wine vinegar, mustard, and mustard oil. Let cool down and set aside. Roll out the potatoes 1/2-inch by inches wide cut into 1-inch pieces put 1 tail of crayfish on top of each potato piece. Serve warm.

1 1/4 cups water
1/3 cup sugar
1/4 cup lemon juice
1/4 cup orange juice
1/4 cup maple syrup
1/4 cup lemon and orange zest
1/4 cup shredded mint, optional

Steps:

  • In a saucepan, mix water, sugar, lemon juice, orange juice, maple syrup and bring to a boil. Reduce heat to low and simmer without stirring until all the sugar has dissolved, about 3 to 5 minutes. Remove pot from the heat and let syrup cool completely. Add the lemon, orange zest, mint leaves, and pour into a shallow baking dish or plastic container and place in the freezer. (The 6 cup capacity shallow plastic containers with a lid that measure 6 inches by 10 inches by 2 inches deep, and which you can get in grocery stores would be ideal for the purpose.)
  • Check after about 2 hours and stir the mixture. After about 4 hours, the mixture will have begun to set up, and you can score the surface by turning a spoon backwards and using the tip to scrape the frozen syrup into "ice curls." Repeat this scraping process periodically, every 2 hours or so, until all of the syrup is scraped into the consistency of water ice. Serve after 8 hours.

TOMATO AND GRILLED CORN SALAD WITH ALMOND VINAIGRETTE

2 tablespoons sliced almonds
2 teaspoons harissa paste
4 cloves garlic, thinly sliced
3 tablespoons extra-virgin olive oil
1 tablespoon sherry vinegar
2 shallots, thinly sliced
Juice of 1 lime
1 cup grilled corn kernels
2 tablespoons torn fresh mint leaves
2 tablespoons torn fresh Italian parsley
1 tablespoon capers, rinsed
1 jalapeno, thinly sliced
1/2 teaspoon salt
Freshly ground pepper
6 heirloom tomatoes, roughly chopped (about 2 1/2 pounds)
1/2 cup crumbled goat cheese

Steps:

  • For the vinaigrette: Combine the almonds, harissa and garlic in a small saute pan over medium heat and saute for 3 minutes. Remove from the heat. Whisk together the olive oil, vinegar, shallots and lime juice in a separate bowl, and then whisk in the almond-harissa mixture. For the salad: Toss together the corn, mint, parsley, capers and jalapenos in a large bowl. Season with the salt and a few grindings of fresh pepper. Add the tomatoes and toss with the vinaigrette. Garnish with the goat cheese and serve immediately.

SALMON SALAD ON CHARRED FLATBREAD

2 tablespoons kosher salt
Juice from 2 limes
2 tablespoons sugar
1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 teaspoon fish sauce
1 jalapeño, thinly sliced
2 to 4 ounces salmon fillet
Handful dill stems
1 tablespoon miso
1 teaspoon Dijon mustard
2 tablespoons olive oil
1 teaspoon honey
Juice of 1 lime
2 tablespoons chopped fresh herbs, such as dill, parsley or mint
1 teaspoon ground cumin
1 tablespoon berbere spice
2 tomatoes, cut into 6 wedges each
1/2 cucumber, peeled, chopped
1 avocado, roughly chopped
1 teaspoon kosher salt
Juice from 1 lime
1 cup chopped mixed fresh herbs, such as dill fronds, parsley, mint and chives
Chive blossoms, for the salad and for topping
2 pieces pita bread
1 lemon, cut in wedges

Steps:

  • For the salmon cure: Bring the salt, lime juice, sugar, vinegar, soy, fish sauce and jalapeño to a boil in a small pot over medium-high heat; simmer for 5 minutes. Reserve a splash for the miso glaze, then pour the rest over the salmon and dill stems in a heatproof container and let it sit for 20 to 30 minutes.
  • For the miso glaze: Mix together the miso, mustard, olive oil, honey, lime juice and reserved splash of salmon cure, for thinning, in a bowl.
  • For the spice and herb coating: Mix the herbs, cumin and berbere together in a bowl. Set aside a little for the salad; put the remainder in a shallow dish.
  • Pat the salmon fillets dry with a paper towel. Brush on some of the miso glaze. Roll the salmon in the spice and herb coating. Slice the salmon into thin slices.
  • For the salad with miso vinaigrette: Add the tomatoes, cucumber, avocado, salt and reserved spice and herb coating to a bowl. Add the lime juice and remaining miso glaze and toss until evenly coated. Stir in the herbs and chive blossoms.
  • Char the bread and lemon wedges in a pan.
  • To assemble: Place a large spoonful of salad on a plate, then top with the sliced salmon. Garnish with more chive blossoms. Serve with slices of charred pita and lemon wedges.
