This salad combines high fiber fruits with a little yogurt. Other fruits that could be used are apples, pears, blackberries, cherries, peaches, plums and grapes.

2 tablespoons low-fat yogurt (try key-lime or lemon)
Juice of 1/2 lime (about 1 tablespoon)
1 tablespoon fresh mint leaves, torn
1 cup cubed cantaloupe
4 medium strawberries, stemmed and quartered
1/4 cup raspberries
1/4 cup blueberries

Steps:

  • Whisk the yogurt, lime juice, and mint together in a medium bowl. Add the fruit and toss to combine. Serve.

3 clementine oranges (peeled and separated)
3/4 cup fresh raspberries
3/4 cup fresh blackberries
3/4 cup fresh strawberries (sliced)
1/3 cup chopped walnuts
1/4 cup Feta cheese crumbles
1/2 cup orange juice
2 Tablespoons olive oil
1 1/2 Tablespoons balsamic vinegar
1/4 cup honey

Steps:

  • Combine spinach leaves, oranges, raspberries, blackberries and strawberries in a large bowl.
  • Top your salad with chopped walnuts and feta cheese crumbles.
  • In a medium size bowl, whisk together orange juice, olive oil, balsamic vinegar, and honey until fully incorporated.
