CINNAMON STREUSEL APPLE CIDER MUFFINS

Cinnamon Streusel Apple Cider Muffins image

The streusel topping is what turns this from a good apple muffin recipe to a great apple muffin. The muffin itself is moist with a very mild flavor from the apples. But that streusel... oh my. Full of cinnamon, it bakes to a nice sugary crunch and really complements the apple flavors in the muffin. Just delicious!

APPLE & CINNAMON MUFFINS WITH A COCONUT WALNUT STREUSEL RECIPE - (4.6/5)

Apple & Cinnamon Muffins with a Coconut Walnut Streusel Recipe - (4.6/5) image

Provided by karenluvslife

Number Of Ingredients 15

STREUSEL:
1 1/3 cups ground sunflower seeds, pepitas and flaxseed or almond meal
1 cup coconut sugar or xylitol
2 apples, peeled and grated
1 1/2 tablespoon coconut flour
1 tablespoon ground cinnamon
1 1/2 teaspooon baking powder
2 free range eggs
2 tablespoon oil
1/2 cup walnuts, rolled oats, pepitas or sunflower seeds
1/3 cup coconut, shredded
2 tablespoon coconut sugar or xylitol
1 large teaspoon ground cinnamon
2 tablespoon maple syrup or rice syrup
1 tablespoon coconut oil or butter

Steps:

  • Note: If you don't want to go to the trouble of making the streusel then add the 1/2 cup walnuts and 1/3 cup coconut to the muffin mix at stage 1. Preheat oven the 350°F. (180°C) Add ground seeds or almond meal, sugar, coconut flour, cinnamon and baking powder to a large mixing bowl and stir to combine. Add the grated apple and stir through making sure that there are no clumps and the dry mix is evenly distributed through the grated apple. This will ensure that the apple doesn't end up in clumps when baked. The mix will be very wet. Make a well in the centre then add the egg and oil. Mix them together quickly to break up the eggs and combine with the oil Quickly fold the egg mixture through the mix then spoon or pour into the muffin pans. Bake for 15 minute then add the streusel and bake for another 5 minutes or until done. It's ok to take them out of the oven, just be quick! If not adding the streusel then bake for 20 minutes or until done. Add the walnuts, coconut and cinnamon to a blender or food processor and light pulse to combine and break up the mixture until it resembles course bread crumbs. Alternately you can chop the walnuts into small pieces then add them to the coconut. Add the syrup and oil/butter the pulse again until they cover the whole mix. If you're not using a blender then distribute evenly with your fingertips until the mixture is moist and sticky. Use the seed mix for the flour and sunflower seeds, pepitas or oats for the streusel.

APPLE CINNAMON MAPLE STREUSEL MUFFINS

APPLE CINNAMON MAPLE STREUSEL MUFFINS image

Yield 18 muffins

Number Of Ingredients 18

2½ cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1¼ tsp. ground cinnamon
¾ cup old-fashioned oats
8 tbsp. unsalted butter, at room temperature
½ cup packed brown sugar
2/3 cup applesauce
2 large eggs
1½ tsp. vanilla extract
1 cup milk
¾ cup butterscotch chips
¾ cup chopped apples
For the streusel topping (optional):
1/4 cup flour
2 tbsp maple syrup
2 tbsp brown sugar

Steps:

  • Preheat the oven to 350˚ F. Line the wells of two muffin pans with paper liners (about 18 liners total). Set aside. In a medium mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Mix lightly with a fork to blend. Stir in the oats. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter and sugar until light and smooth, 1-2 minutes. Beat in the applesauce, eggs and vanilla extract until incorporated. With the mixer on low speed, mix in the dry ingredients in three additions alternately with the milk, beginning and ending with the dry ingredients and beating just until incorporated. Fold in the butterscotch chips and apples with a rubber spatula. In a small bowl, stir together the flour, syrup, and brown sugar until combined. It will likely be thick and clumpy but that's what you want. Divide the batter evenly between the prepared muffin cups (a large cookie/ice cream scoop works great for this). If desired, divide the streusel topping between each muffin cup. Bake about 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.

Steps:

  • 1. Preheat the oven to 350 degrees F. Line two muffin tins with paper liners or spray with cooking spray. Set aside. 2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside. 3. In a large bowl, whisk together sugar, oil, water, pumpkin, eggs, and vanilla extract. Whisk until smooth and combined. 4. Slowly stir in the flour mixture. Mix until ingredients are combined. 5. For the brown sugar cinnamon filling: in a small bowl, mix the brown sugar and cinnamon together. Set aside. 6. For the streusel topping: in a small bowl mix together the oats, flour, brown sugar, cinnamon, and nutmeg. Mix in the butter with your hands until the mixture is crumbly. 7. Fill muffin cups half way full with the pumpkin batter. Sprinkle the brown sugar cinnamon filling over each half filled muffin cup. Fill the muffins cups with the remaining batter. Top each muffin with streusel topping. 8. Bake for 17-20 minutes or until a toothpick comes out clean. Remove pans from oven and cool on a wire rack. Remove muffins from tins and enjoy.
