CINNAMON FRENCH TOAST

A simple go-to recipe for French toast, perfect for almost any type of bread. Extra cinnamon gives it a potent sweet spice and half-and-half makes the custard rich without being too heavy.

1 cup half-and-half
2 tablespoons granulated sugar
2 teaspoons ground cinnamon, plus more for serving
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
6 large eggs
2 to 3 tablespoons unsalted butter
8 slices challah or brioche bread (3/4 inch thick) or 12 slices sandwich bread
Confectioners' sugar, for dusting
Fresh fruit, for serving
Maple syrup, for serving

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the half-and-half, granulated sugar, cinnamon, vanilla, salt and eggs in a large bowl until very well combined and no visible egg white remains. Pour the mixture into an 8- or 9-inch square baking dish.
  • Heat a large nonstick skillet over medium heat. Add 1/2 tablespoon butter and when it melts, swirl to coat the skillet.
  • Put 2 slices of bread at a time in the custard until moistened through, about 10 seconds on each side for the thicker bread and 5 seconds for the thinner sandwich bread.
  • When the butter begins to sizzle, transfer the soaked slices to the skillet and cook until the custard is heated through and the slices are very golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and hold in the oven while you repeat with the remaining butter, bread and custard.
  • To serve, fan out the slices on a platter or individual plates and dust with confectioners' sugar and additional cinnamon. Serve with fresh fruit and maple syrup.

1/3 cup butter
1 1/3 cups brown sugar
3/4 cup evaporated milk (6 oz)
1/4 cup dark corn syrup
3 tablespoons hot water
1 tablespoon cinnamon

Steps:

  • Heat butter in a saucepan over medium heat.
  • Take off heat and add the sugar, milk and corn syrup. Mix well.
  • Place back on heat and add hot water.
  • Stir well until the sugar is dissolved, be careful not to boil.
  • Add cinnamon and stir well.
  • Serve drizzled over french toast. Enjoy!

4 tablespoons butter, divided
6 eggs
½ cup milk
⅛ teaspoon salt
8 slices bread
1 cup brown sugar
½ cup water

Steps:

  • Melt two tablespoons of butter in a frying pan or skillet over medium high heat.
  • Beat together eggs, milk and salt. Dip bread one at a time into egg mixture and fry until light brown and egg is cooked.
  • After 4 slices of bread have been cooked, melt remaining 2 tablespoons butter. Cook remaining bread slices until light brown on both sides and egg is cooked.
  • After all bread slices have been cooked and removed from pan, add brown sugar to pan. Stir until melted and sticky. Add water and stir. Place French toast in caramel sauce. Turn to coat, then remove from pan. Serve.

1/4 cup butter, melted
4 large eggs
1 cup 2% milk
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
8 slices Texas toast
BLUEBERRY SAUCE:
1/4 cup sugar
1-1/2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1-1/2 cups fresh or frozen blueberries
2 tablespoons thawed orange juice concentrate

Steps:

  • Pour melted butter into a 15x10x1-in. baking pan; lift and tilt pan to coat bottom evenly. In a large shallow bowl, whisk the eggs, milk, vanilla and nutmeg. Dip both sides of Texas toast into egg mixture; place on prepared pan. Bake at 375° until lightly browned, 20-25 minutes., For sauce, in a large saucepan, combine the sugar, cornstarch, cinnamon and cloves. Stir in blueberries and orange juice concentrate.
