3 cups all-purpose flour
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
3/4 teaspoon salt
1/4 teaspoon ground allspice
4 eggs
2-1/4 cups sugar
1 can (15 ounces) solid-pack pumpkin
3/4 cup canola oil
2 cups chopped peeled tart apples
1 cup golden raisins
TOPPING:
1/2 cup sugar
1/3 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup cold butter

Steps:

  • In a large bowl, combine the first seven ingredients. In another large bowl, whisk the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in apples and raisins. Transfer to two greased 9x5-in. loaf pans., For topping, in a small bowl, combine the sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over each loaf., Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 cup canned pumpkin
1/2 cup water
2 large eggs, room temperature
1/3 cup canola oil

1 package (1/4 ounce) active dry yeast
2/3 cup warm water (110° to 115°)
1/2 cup canned pumpkin
1 large egg
1/4 cup butter, softened
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon pumpkin pie spice
2-1/2 to 2-3/4 cups all-purpose flour
FILLING:
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
FROSTING:
1-1/4 cups confectioners' sugar
2 to 3 tablespoons 2% milk
1/8 teaspoon pumpkin pie spice

Steps:

  • Dissolve yeast in warm water. In a large bowl, combine pumpkin, egg, butter, sugar, salt, pie spice, yeast mixture and 1 cup flour; beat on medium speed 3 minutes until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Do not knead. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., For filling, mix brown sugar and cinnamon. Stir down dough, beating about 25 times; turn dough onto a well-floured surface (dough will be sticky). Roll into a 12x10-in. rectangle. Brush with melted butter to within 1/2 in. of edges; sprinkle with brown sugar mixture. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices., Place in a greased 9-in. round pan, cut side down. Cover; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°., Bake until golden brown, 20-25 minutes. 3 ½ cups unbleached all-purpose flour
3 tablespoons ground cinnamon
1 ½ tablespoons ground nutmeg
2 teaspoons ground cloves
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
2 cups dark brown sugar
1 cup white sugar
1 cup unsweetened applesauce
4 eggs, lightly beaten
1 (15 ounce) can solid-pack pumpkin
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with cooking spray.
  • Mix flour, cinnamon, nutmeg, cloves, ginger, baking soda, salt, and baking powder together in a large bowl.
  • Combine brown sugar, white sugar, applesauce, and eggs in a large bowl. Add pumpkin and mix well. Add flour mixture alternately with water, mixing well between additions. Divide between the prepared loaf pans.
