1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup sugar
1-1/2 teaspoons ground cinnamon
1-1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 large egg, room temperature, beaten
1/3 cup canola oil
1/4 cup unsweetened applesauce
1/4 cup honey
1 cup chopped walnuts
ICING:
1 cup confectioners' sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 tablespoon water
2 tablespoons honey

Steps:

  • Preheat oven to 350°. In a large bowl, combine flours, sugar, cinnamon, baking powder and baking soda. In another bowl, combine egg, oil, applesauce and honey. Stir into dry ingredients just until moistened. Fold in walnuts., Spread batter into a 13x9-in. baking pan coated with cooking spray. Bake 15-20 minutes or until a toothpick inserted in the center comes out clean. , Combine icing ingredients; spread over warm bars. Cool completely before cutting into bars.

2 cups all-purpose flour
1/2 cup sugar
3/4 cup butter (softened)
4 eggs
1 cup granulated sugar
1 cup corn syrup
1/4 cup butter (melted)
225 g cinnamon baking chips
1 cup dried cranberries
3/4 cup walnuts (chopped)

Steps:

  • CRUST:
  • COMBINE all ingredients, mixing until crumbly. Press firmly into greased 13"x9" cake pan.
  • BAKE at 350°F for 15-18 minutes, or until light golden.
  • TOPPING:
  • BEAT eggs, sugar, corn syrup and melted butter together until blended. Stir in cinnamon chips, cranberries and walnuts. Pour evenly over crust.
  • BAKE for about 30-35 minutes longer, or until set and golden. Cool completely, then cut into bars.

These bars are AWESOME!! the original recipe called for 2 cups sugar, I decreased the sugar amount to 1-1/2 cups which was plenty sweet. To reduce the fat, use half oil and half applesauce. If you like more spice then increase the nutmeg and cloves. These make a ton of bars!

2 cups flour
1 1/2 cups sugar
1 tablespoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon clove
1 (15 ounce) can pumpkin puree
4 large eggs
3/4 cup oil
2 teaspoons vanilla
1 1/2 cups chopped walnuts
1/2 cup butter, softened
1 (18 ounce) package cream cheese
1 teaspoon vanilla (optional)
2 tablespoons whipping cream
3 1/2 cups icing sugar

Steps:

  • Set oven to 350 degrees (second-lowest rack).
  • Grease a 15 x 10-inch baking sheet.
  • In a large bowl blend together the first 8 ingredients.
  • Add in pumpkin puree, eggs, oil and vanilla, beat until well blended.
  • Mix in the nuts.
  • Spread into prepared baking sheet.
  • Bake for about 25-30 minutes, or until the bars test done.
  • Cool bars completely before icing.
  • For the icing; in a large bowl beat the cream cheese, vanilla (if using) butter and 2 tablespoons whipping cream until light and fluffy (about 2 minutes).
  • Add in the 3-1/2 cups icing sugar and beat until smooth and well combined (add in more whipping cream or icing sugar if needed to acheive desired consistancy).

3/4 cup (1 1/2 sticks) butter or margarine, softened
1/3 cup granulated sugar
3/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1 1/2 cups chopped nuts
COOKIE LAYER
1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1/4 cup (1/2 stick) butter or margarine, cut into pieces
1 1/4 cups packed brown sugar
3 large eggs
1 teaspoon vanilla extract
1/8 cup powdered sugar

Steps:

  • FOR COOKIE CRUST:
  • PREHEAT oven to 350° F.
  • BEAT flour, butter, granulated sugar, baking powder and cinnamon in large mixer bowl until crumbly. Stir in nuts. Press onto bottom of ungreased 13 x 9-inch baking pan. Bake for 15 to 18 minutes or until firm.
