This bread if fantastic. I couldn't find the cinnamon chips in the store for the past month, so was going to order some online. Low and behold last night they had them at Walmart..needless to say I stocked up, because we love this bread. I found this recipe on Making memories with your kids. Enjoy..your house will smell...

1/2 c butter
1/2 c sugar
1/4 tsp salt
1 tsp vanilla
2 egg yolks
1 - 1/2 c flour
1 tsp baking powder
1/3 c milk
2 egg whites
1/4 c sugar
1 bag(s) hersheys cinnamon chips
CREAM CHEESE FILLING
8 oz cream cheese, softened
1/2 c sugar
1 Tbsp flour
1 egg
GLAZE
2 Tbsp sugar
1/2 tsp vanilla
1 tsp water

Steps:

  • 1. Make the cream cheese filling first. Beat all of the ingredients until smooth. Set aside.
  • 2. Make the glaze. Mix all ingredients and set aside.
  • 3. Preheat oven to 350 degree F. Grease and flour a loaf pan.
  • 4. In a large bowl, cream the butter and sugar together until light and fluffy. Add the vanilla and mix. Add the egg yolks (the whites will be used later so save them!) and mix well. Whisk flour, salt and baking powder together. Alternate adding the flour mixture and the milk. Mix after each addition.
  • 5. In another bowl, beat the egg whites until soft peaks form. Add the 1/4 cup sugar, 1 Tbsp. at a time, until egg whites are stiff.
  • 6. Fold the egg whites into the batter mixture. All but about 1/2 cup of the cinnamon chips. Stir.
  • 7. Add the 1/2 cup of cinnamon chips to the cream cheese mixture (if you want.) Pour half of the batter into a greased and floured loaf pan. Top with the cream cheese layer and spread to make it even. Add the rest of the batter and spread it out.
  • 8. Pour the glaze over the uncooked batter. Bake for 55 - 60 minutes or until pick in the center comes out clean.

3/4 cup butter, softened
1 (8 ounce) package cream cheese
2 cups sugar
2 large eggs
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed bananas (about 4 medium)
1 cup chopped pecans, toasted
1/2 teaspoon vanilla
1/2 cup packed brown sugar
1/2 cup chopped toasted pecans
1 tablespoon flour
1 tablespoon melted butter
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 350º.
  • Beat butter and cream cheese together with an electric mixer until creamy.
  • Add sugar, gradually, and beat until light and fluffy.
  • Add eggs, one at a time, and beat until blended.
  • Gradually add flour and next three ingredients to butter mixture, beating at low until just blended.
  • Stir in bananas, pecans, and vanilla.
  • Spoon batter into 2 greased and floured 8x4 loafpans.
  • Batter will be thick.
  • For streusel: Stir together 1/2 cup packed brown sugar, 1/2 cup chopped toasted pecans, 1 tablespoon flour, 1 tablespoon melted butter, and 1/8 teaspoon cinnamon.
  • Sprinkle mixture evenly over batter in pans.
  • Bake for 1 hour or until a wooden pick inserted in center comes out clean.
  • Bread may be shielded with aluminum foil that last 15 minutes to prevent excessive browning of streusel.
  • Cool in pans on wire rack for 10 minutes.
  • Remove from pans and cool 30 more minutes before slicing.
  • For perfect slices, cut with a serrated or electric knife after cooling.

2 ½ teaspoons active dry yeast
3 tablespoons warm water
cooking spray
1 cup warm nonfat milk
5 tablespoons unsalted butter, melted and cooled to room temperature
1 egg
1 teaspoon salt
3 ½ cups bread flour, or more as needed
Filling and Topping:
½ cup white sugar
2 tablespoons ground cinnamon
2 tablespoons unsalted butter, melted
6 (1 ounce) squares semisweet baking chocolate, chopped
1 egg, beaten

Steps:

  • Dissolve yeast in warm water and let sit for 5 to 10 minutes.
  • Meanwhile, coat the inside of a large bowl with cooking spray.
  • Add warm milk, melted butter, egg, and salt to yeast mixture; whisk for 1 minute. Gradually stir in flour until dough is no longer sticky.
  • Knead dough by hand on a lightly floured surface or in a stand mixer fitted with a bread hook for 10 minutes. Transfer to the prepared bowl and turn until dough is covered in cooking spray. Cover with a damp cloth and leave in a warm place until doubled in size, about 1 hour.
  • Spray a 9x5-inch loaf pan with cooking spray. Mix together sugar and cinnamon in a small bowl; set aside.
  • Remove dough from the bowl. Punch it and fold in the sides. Flatten dough with a rolling pin into a 9x18-inch rectangle. Brush on melted butter and sprinkle with all but 3 tablespoons cinnamon-sugar mixture. Sprinkle with chopped chocolate. Roll dough carefully, starting at the short end, and pinch closed at the seam. Place seam-side down in the prepared loaf pan. Cover the pan and set in a warm place until doubled in size, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Brush beaten egg on top of dough and sprinkle with remaining 3 tablespoons cinnamon-sugar mixture.

3-1/4 cups all-purpose flour
1/3 cup plus 2 tablespoons sugar, divided
2-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1 cup buttermilk
1 package (10 ounces) cinnamon baking chips
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the flour, 1/3 cup sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Fold in chips. , Turn onto a lightly floured surface; knead gently 10-12 times or until dough is no longer sticky. Divide in half; gently pat or roll each portion into a 7-in. circle. Brush with butter and sprinkle with remaining sugar. , Cut each circle into six wedges. Separate wedges and place on an ungreased baking sheet. Bake at 425° for 10-13 minutes or until lightly browned. Serve warm.
