3 cups grated peeled apples

Steps:

  • Dissolve candy in water over medium high heat, stirring often.
  • Remove from heat; add jello and stir until dissolved.
  • Stir in pecans and apples when cooled.
  • Pour into serving dish.
  • Refrigerate until jello is firm and you are ready to serve the salad.

1/2 cup red-hot candies
1 cup boiling water
1 package (3 ounces) lemon gelatin
1 cup applesauce
1 package (8 ounces) cream cheese, softened
1/2 cup Miracle Whip
1/2 cup chopped pecans
1/4 cup chopped celery

Steps:

  • In a bowl, dissolve candies in water (reheat if necessary). Add gelatin; stir to dissolve. Stir in applesauce. Pour half into an 8-in. square pan that has been lightly coated with cooking spray. Refrigerate until firm. Cover and set remaining gelatin mixture aside at room temperature. , Meanwhile, combine the cream cheese, Miracle Whip, pecans and celery; spread over chilled gelatin mixture. Carefully pour remaining gelatin mixture over cream cheese layer. Chill overnight.

1 cup boiling water
1 (3 ounce) package cherry flavored Jell-O®
⅓ cup cinnamon red hot candies
¾ cup cold water
½ cup tart apples, diced
½ cup celery, chopped
½ cup walnuts, chopped

Steps:

  • In a medium bowl, add boiling water to the cherry gelatin and stir to dissolve. Carefully add the cinnamon candies. Let them sit for a minute, then stir to dissolve the candies into the gelatin mixture. Once they are fully dissolved, add the cold water. Allow the mixture to sit for ten minutes to come to room temperature.
  • At room temperature, mix in the apples, celery, and walnuts. Pour gelatin mixture into a decorative mold or serving bowl and refrigerate overnight to set.

4 cups spinach leaves, torn

Steps:

2 tablespoons pancake syrup
8 cups mixed baby greens

1/2 cup butter, softened
1/8 teaspoon cinnamon
1/4 cup cranberry raisins

Steps:

  • Whisk dressing and syrup in large bowl and set aside.

3 cups Water
2 packages 3 Oz Lemon Jello
1 Tablespoon Cinnamon
2 cups Unsweetened Apple Sauce (I Use Bottled Apples)
1 Tablespoon Lemon Juice
1 dash Salt
½ cups Chopped Walnuts
6 ounces, weight Cream Cheese, Softened
¼ cups Milk
2 Tablespoons Mayonnaise

Steps:

  • Boil water. Add lemon jello and cinnamon. Cool, stirring occasionally until starts to set.
  • Add applesauce, lemon juice, salt and nuts.
  • Pour into 9X13 baking dish. Put in fridge for 30 minutes.
  • Combine cream cheese, milk and mayo. Stir until smooth.
  • Pour over jello and use butter knife to swirl in. Put back in fridge for 3-3 1/2 hours until completely set.

This is one of the recipes from my HS cooking class 1963. This is one of those simple but elegant recipes that gives a lovely presentation for a special occasion. It could easily switch from "salad" to "dessert", too. Enjoy!

IN A SAUCE PAN MAKE A SYRUP OF:
1 c sugar
1 1/2 c water
1/3 c cinnamon drops (tiny red candies)
1/2 tsp red food coloring (optional)
PARE AND CORE:
1 medium apple per person (any kind you like)
SERVE WITH:
1 lettuce leaf (or a small amount of shredded lettuce) per apple
2 Tbsp softened cream cheese per apple
1 Tbsp chopped walnuts (or pecans) per apple

Steps:

  • 1. Add apples to syrup and cook gently until just tender -- Baste the apples with the red syrup as they cook. Turn the apples from time to time so that they cook evenly on top and bottom. Slow boil for about 30 minutes. NOTE: This should be enough syrup for 4-6 apples -- if you need more just had half again of the ingredients and make more!! It all cooks the same.
  • 2. Remove from syrup, drain, chill thoroughly (place them in a glass baking dish to put in the refrigerator and chill.)
  • 3. TO SERVE: Place on lettuce leaf Fill centers with softened cream cheese and nuts
  • 4. NOTE: the apple could also be cut in half for easier serving. Your choice. That way you simply put a dollop of the softened cream cheese and sprinkle with nuts on top to serve. The red cinnamon candies give the whole apple a lovely old fashioned red color.
  • 5. NOTE: Makes a lovely salad for a Christmas party or dinner -- you know: red apple, green lettuce... you could even add a sprig of parsley to add a touch of dark green to the plate.
  • 6. NOTE: When you remove the apples from the sauce pan, you will still have the syrup left and it is perfectly fine to cook more apples in the same syrup.

1 stick cinnamon (3") or 1/2 cup cinnamon red hot candies
6 to 8 drops food colors red (if using cinnamon candies, omit food color)
6 apples Winesap, cored, peeled and halved
2 (3-ounce) packages cream cheese softened
1/4 cup nuts chopped
1/4 cup sour cream
1 tablespoon lemon juice fresh
3/4 cup nuts chopped

Steps:

  • 1. In a large saucepan mix water, sugar, cinnamon or red hot candies and food color. Bring to a boil over medium-high heat reduce heat to low and simmer for 10 minutes.2. Add apples. Basting frequently so apples will absorb color and flavor, simmer for 10 to 15 minutes or until apples are barely tender cool. Remove apples, cover and chill reduce syrup over medium heat until about 3/4 cup remains. Cover and chill.3. In a small bowl mix cream cheese, nuts, sour cream and lemon juice. Cover and chill for 30 minutes.4. Form cream cheese mixture into 12 balls. Roll in nuts and place in center of each apple half. Spoon 1 tablespoon syrup over each apple half.
