APPLE BREAD WITH CINNAMON PECAN CRUNCH



Apple Bread with Cinnamon Pecan Crunch image

This easy Apple Pecan Sweet Bread is full of apples chunks and pecans. It is lightly sprinkled with cinnamon pecan sugar giving it a light extra crunch on the crust. It is quick to come together and can easily be doubled.

1 3/4 c all purpose flour
2 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 tsp baking powder
2 large eggs
3/4 c sugar
1/3 c vegetable oil
2 Tbsp applesauce
2 c finely chopped peeled apples
1 c chopped toasted pecans
1 Tbsp sugar for sprinkling the top
1/4 tsp ground cinnamon

Steps:

  • 1. Preheat oven to 350 degrees. Grease a loaf pan.
  • 2. In large bowl mix together flour, cinnamon, nutmeg, salt and baking powder.
  • 3. In medium bowl mix together eggs, sugar, vegetable oil and applesauce.
  • 4. Add wet ingredients to dry and mix just until incorporated. Fold in apples and half of the pecans. Combine remaining pecans, 1 tablespoon of sugar, and 1/4 teaspoon ground cinnamon; sprinkle over loaf.
  • 5. Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, 55 to 60 minutes. Invert to remove loaf as soon as possible.
  • 6. NOTES To toast pecans just spread them on a baking and pop them in the oven at 350 degrees for about 6 - 8 minutes. Toast them whole and then chop them after they cool. If you don't want to purchase applesauce just substitute 2 more tablespoons of oil.

3 large Gala apples, peeled and cubed
12 tablespoons butter, divided
4 tablespoons honey
2 tablespoons ground cinnamon, divided
1 cinnamon stick
1 ¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon fine salt
1 cup white sugar
2 large eggs
½ teaspoon vanilla extract
1 cup chopped toasted pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
  • Combine apples, 4 tablespoons butter, honey, 1 tablespoon cinnamon, and cinnamon stick in a saucepan over medium heat. Cover with a lid and cook, stirring frequently, about 10 minutes.
  • While apples are simmering, sift flour, baking powder, and salt together in a bowl.
  • Combine remaining 8 tablespoons butter, remaining 1 tablespoon cinnamon, and sugar in the bowl of a stand mixer. Beat together until light and fluffy. Add eggs one at a time; beat until fully incorporated. Add vanilla extract.
  • Discard cinnamon stick and mash cooked apples. Add mashed apples and pecans to the batter. Use a rubber spatula to mix in flour mixture until just incorporated. Transfer batter to the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour. Cool on a wire rack.

2 cups milk
1/2 cup vegetable oil
1 cup packed brown sugar
1 package regular active dry yeast
4 1/2 cups Gold Medal™ all-purpose flour
2 teaspoons salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3 tablespoons butter, melted
3 tablespoons ground cinnamon
2 medium Granny Smith apples, thinly sliced
1 cup powdered sugar
1 teaspoon vanilla
1 to 3 tablespoons milk

Steps:

  • In 3-quart saucepan, stir together milk, oil and 1/2 cup of the brown sugar. Heat to simmering over medium heat, stirring occasionally, until sugar is dissolved. Remove from heat; cool until warm (between 90°F and 110°F).
  • Add yeast and 2 cups of the flour; stir until blended. Cover; let rise in warm place 1 hour or until doubled in size. Stir in remaining 2 1/2 cups flour, the salt, baking powder and baking soda.
  • Heat oven to 350°F. Spray 8x4- or 9x5-inch loaf pan with cooking spray.
  • On floured work surface, roll dough into 20x12-inch rectangle. Cut into 5 (4-inch strips), then cut crosswise 6 times, making 30 (4x2-inch) rectangles.
  • In small bowl, stir together melted butter, cinnamon and remaining 1/2 cup brown sugar. Spread mixture over rectangles. Place 1 or 2 apple slices on each rectangle. Create 5 stacks of dough with 6 rectangles in each stack. Place stacks in loaf pan, edges facing toward bottom of pan and sugared sides facing center of loaf, not ends of pan.
  • Bake 25 to 35 minutes or until puffed and golden brown. Cool 10 minutes; remove from pan to cooling rack. Cool about 1 hour.
  • In a small bowl, mix glaze ingredients with wire whisk until smooth and thin enough to drizzle. Drizzle glaze over loaf.

1 3/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup orange juice
1/3 cup (5 1/3 tablespoons) unsalted butter, melted and cooled slightly
2 large eggs, lightly beaten
1 1/2 cups coarsely chopped golden Delicious apples
1/2 cup coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9 x 5 x 3-inch loaf pan.
  • In a large bowl, sift together the flour, the sugar, the baking powder, and the salt, making a well in the center. Set aside. Stir in the liquid ingredients until just combined, being careful not to overmix. Gently stir in the apples and the pecans. Pour the batter into prepared pan and bake for 50-60 minutes or until a cake tester inserted into center of loaf comes out with moist crumbs attached. Do not overbake.
