3 cups chopped peeled tart apples
2 cups fresh or frozen cranberries
1 cup sugar
3 tablespoons all-purpose flour
TOPPING:
1-1/2 cups quick-cooking oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup chopped pecans

Steps:

  • Combine apples, cranberries, sugar and flour. Pour into a greased 11x7-in. baking dish. In a bowl, mix topping ingredients until crumbly; sprinkle over apple mixture. Bake at 350° for 50-55 minutes or until fruit is tender.

1-1/2 cups fresh or frozen cranberries, thawed
3/4 cup packed brown sugar, divided
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/3 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. In a large bowl, combine apples, cranberries, 1/4 cup brown sugar, lemon juice and cinnamon. Pour into a greased 8-in. square baking dish. 2 cup all-purpose flour sifted
2 cup dark brown sugar
1 1/2 cup quick cooking oats
1 cup or 2 sticks margarine melted
2 teaspoon cinnamon
4 Cortland apples peeled and cut into small chunks
1 14-oz can whole berry cranberry sauce
2 tablespoon all-purpose flour

Steps:

  • Preheat oven to 375°. Coat a 9x13 baking tin (aluminum tins work as well) with nonstick spray.
  • In a bowl, mix the 2 cups of flour, brown sugar, oats, margarine and cinnamon.
  • Set 1 1/2 cups of this mixture aside for later use. Press the rest of the mixture into the pan.
  • In a new bowl, combine the apples, cranberry sauce and 2 tablespoons of flour. Mix with a spoon.
  • Pour apple mixture into the crust.
  • Sprinkle the remaining crust mixture on top to cover evenly. Bake for 40 minutes.

2 cups cranberry juice
1 (6-ounce) bag sweetened dried cranberries
1 cinnamon stick, broken in half
1 cup sugar
2 Gala apples, peeled, cored and diced
2 teaspoons corn starch

Steps:

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.
  • Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

1 1/2 cups cranberries (fresh or partially defrosted frozen)
1 teaspoon cornstarch
1 teaspoon ground cinnamon
Coarse salt
1/2 cup honey
3 small or 2 large McIntosh apples (about 1 pound), peeled if desired, cored and cut into 1 1/2 inch wedges
2 tablespoons unsalted butter
6 sheets phyllo dough

Steps:

  • Heat oven to 375 degrees. In an 8-by-8-inch baking dish, toss cranberries with cornstarch, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Drizzle with 1/4 cup honey. Arrange apples on top of cranberries in one layer, skin sides down. Drizzle with 3 tablespoons honey. Sprinkle with 1/4 teaspoon cinnamon and 1/4 teaspoon salt.
  • Melt together butter, remaining honey, and remaining 1/4 teaspoon cinnamon. Working with one sheet of phyllo at a time and keeping the others covered with plastic wrap, brush very lightly with butter mixture. Lay a second sheet over first and brush with butter mixture. Repeat with one more sheet. Tear the phyllo crosswise into 4 pieces, and loosely crumple (as youwould a tissue) as you place on top of the apples. Repeat with remaining three sheets of phyllo and butter mixture.
  • Bake for 20 minutes, then reduce to 350 degrees. Bake until juices bubble in center and apples are tender, 40 to 50 minutes more. If top darkens too quickly, tent with foil. Cool 30 minutes.
