CINDY'S BANANA BREAD , REVISED

I received a vitamix for our anniversary and wanted to try using it to bake something.I thought banana bread was an easy recipe to start with. I like looking for ways to "tweak" my recipes & my husband loves apricots so I decided to put some in my banana bread. The results? Scrumptious! Hubby said "Save that recipe!" So.... here it is! Enjoy.

2 cup(s) all purpose flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 cup(s) plain yogurt
1/2 cup(s) granulated sugar
1/4 cup(s) brown sugar, firmly packed
1/4 cup(s) shortening
2 - large eggs
4 - very ripe med. bananas
1/4 cup(s) dried apricots
1/2 cup(s) walnuts
1 teaspoon(s) vanilla extract

Steps:

  • Place all dry ingredients in a bowl and mix well.
  • Put yogurt,eggs, shortening, bananas, apricots, & vanilla in vitamix and pulse until blended and apricots chopped. Alternately, you can cream all ingredients, except apricots together in a mixer. Chop the apricots and add with the nuts.
  • Fold creamed mixture into flour mixture. Stirring just until blended.
  • Stir in nuts and chopped apricots.
  • Pour into a greased and lightly floured loaf pan. (Hint: Cut a strip of parchment paper the width of the loaf pan, making sure ends extend over sides of pan. Grease & flour pan, then pour batter in. Makes it real easy to remove from pan after baking.)
  • Bake in 350 degree oven for approx. 1 hr. 25 minutes or until toothpick stuck in center of loaf comes out clean.
  • Remove from pan & cool on wire rack until completely cooled before wrapping.

Absolutely the best banana bread in the universe! The crust on most recipes is dry because the pan is buttered and floured... but the crust becomes the best part when the pan is buttered and cinnamon-sugared!

2 teaspoons butter
1 tablespoon white sugar
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup butter, softened
1 cup white sugar
2 eggs
1 cup mashed ripe bananas
¼ cup milk
1 teaspoon white sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9x5-inch loaf pan with 2 teaspoons butter. Mix 1 tablespoon of sugar with 1 teaspoon of cinnamon in a small bowl, and pour the mixture into the buttered pan. Swirl and tap the pan to distribute cinnamon-sugar all over the inside of the pan, up to the rim.
  • In a bowl, whisk together flour, baking powder, salt, 1 teaspoon of cinnamon, and the nutmeg. In a large mixing bowl, beat 1/2 cup of butter with 1 cup of sugar until creamy; beat in eggs, one at a time, until thoroughly incorporated. Stir in the mashed bananas and milk. Mix in the flour mixture just until thoroughly moistened (a few lumps are fine), and scrape the batter into the prepared loaf pan. Sprinkle the top of the batter with 1 more teaspoon of sugar.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Let cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

3 tablespoons Gold Medal™ all-purpose flour
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1 tablespoon butter, cut into pieces
4 very ripe bananas, mashed
6 tablespoons butter, melted, cooled to room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
1/4 cup milk
1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Lightly spray 9x5-inch loaf pan with cooking spray.
  • In small bowl, stir together Streusel ingredients except butter. Pinch pieces of butter into flour mixture until crumbly and looks like wet sand. Refrigerate.
  • In large bowl, mix mashed bananas, melted and cooled butter, 1 cup sugar, the egg, milk and vanilla to combine. In another small bowl, stir together 1 1/2 cups flour, the baking powder, salt and 1/2 teaspoon cinnamon. Fold banana mixture into flour mixture just until combined, taking care not to over mix. Spread batter in loaf pan, smoothing top. Sprinkle streusel evenly over top.
  • Bake in center of oven about 1 hour or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 5 minutes. Remove from pan; cool at least 15 minutes before slicing.

I was hungry for banana bread but wanted something a little different. I couldn't find a recipe I liked so made my own. My husband said it was the best banana bread he has had! I was pleasantly surprised and very pleased! This was moist and light and very flavorful! I'm thinking next time of adding a little cinnamon to it.

2 cup(s) flour ( i used 1 1/2 c. all purpose flour & 1/2 c cake flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 cup(s) granulated sugar ( i used splenda for half the sugar)
1/4 cup(s) light brown sugar, packed
1/4 cup(s) shortening or unsalted butter
2 large eggs
3 medium bananas, mashed (approx. 1 c.)
1/2 cup(s) chopped walnuts

Steps:

  • Cream sugar & butter together.
  • Add eggs, one at a time, and beat well after each addition.
  • Sift dry ingredients together 3 times.
  • Alternately stir in flour & bananas, ending with flour. DO NOT OVERSTIR! Overstirring will make your bread tough.
  • Stir in nuts.
  • Pour into a greased and lightly floured loaf pan. Top batter with whole walnut halves if desired.
  • Bake in 350 degree oven 55-65 mins. or until a toothpick comes out with only a few crumbs.

1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
1 teaspoon baking soda
1 teaspoon fine salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup sugar
1/2 cup vegetable oil
2 large eggs, beaten
2 teaspoons vanilla extract
2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
1 cup (about 4 ounces) fresh blueberries

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
  • In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
  • Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter.
