FURIKAKE AHI WITH CILANTRO DIP



Furikake Ahi with Cilantro Dip image

1 1/2 cups furikake spice
Four 8-ounce ahi steaks (yellowfin or big eye tuna)
Butter, for searing
2 cups mayonnaise, preferably Best Foods
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
1 tablespoon olive oil
1 teaspoon Worcestershire sauce, preferably Lea & Perrins
1 bunch fresh cilantro
Juice of 1 lemon plus lemons, for garnish
Serving suggestions: rice and salad

Steps:

  • For the tuna: Put furikake spice on a large plate, then coat the ahi on both sides with furikake.
  • Preheat a nonstick pan, then add butter. Sear ahi steaks on both sides, 10 to 15 seconds per side for rare to medium-rare.
  • For the cilantro dip: Combine mayonnaise, garlic, ginger, oil, Worcestershire, cilantro and lemon juice in a food processor.
  • Serve tuna with rice, salad and the cilantro dip.

PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME

2 big handfuls fresh cilantro leaves, finely chopped
1/2 jalapeno, sliced
1 teaspoon grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 tablespoons soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 (6-ounce) block sushi-quality tuna
1 ripe avocado, halved, peeled, pitted, and sliced

Steps:

  • In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
  • Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

SPICY CILANTRO-LIME TUNA RECIPE

4 ahi tuna steaks
1 tsp. cumin
1 tsp. paprika
2 garlic cloves, minced
1/4 cup olive oil
Juice from 1 lime
1/2 cup fresh cilantro, chopped
1 tbsp. hot pepper sauce
Sea salt and freshly ground black pepper

Steps:

  • Preheat grill to medium heat. In a bowl combine the cumin, paprika, minced garlic, olive oil, lime juice, cilantro, and hot pepper sauce. Season the tuna steaks to taste with sea salt and freshly ground black pepper. Brush the seasoned tuna steaks with with the cilantro-lime sauce. Place the tuna on the grill and cook 3 to 4 minutes per side. Let rest 2 to 3 minutes before serving.

8 slices whole wheat bread, toasted if desired
4 slices Muenster or provolone cheese
1 medium ripe avocado, peeled and sliced

  • In a small bowl, mix the first 7 ingredients. Spread tuna mixture over 4 slices of bread; top with cheese, avocado and remaining bread. Serve immediately.

1/2 cup mayonnaise
1/4 cup sour cream
1 jalapeno pepper, seeded and finely chopped

  • Combine all ingredients. Chill for at least an hour.
  • If I don't have any jalapeno's on hand I use canned smoked jalapeno's, less heat.
