4 boneless skinless chicken thighs (about 1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
10 garlic cloves, peeled and halved
1/4 cup white wine or chicken broth
1-1/2 teaspoons minced fresh rosemary
1/2 teaspoon minced fresh sage
1 cup chicken broth
Hot cooked rice of your choice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, heat butter over medium-high heat; brown chicken on both sides. Remove from pan, reserving drippings., In same skillet, saute garlic in drippings over medium-high heat until light golden brown. Add wine and herbs; bring to a boil, stirring to loosen browned bits from pan. Cook until mixture is almost evaporated. Add broth and chicken; bring to a boil. Reduce heat; simmer, covered, until a thermometer inserted in chicken reads at least 170°, 10-12 minutes., To serve, spoon pan juices over chicken. Serve with rice.

MIDDLE EASTERN-INSPIRED HERB AND GARLIC CHICKEN



Middle Eastern-Inspired Herb and Garlic Chicken image

This recipe was inspired by the Middle Eastern dried seasoning mix called za'atar, a combination of herbs (usually thyme, oregano and marjoram), sesame seeds and sumac, often spiked with salt. Here, fresh herbs are substituted for the dried, which, along with fresh parsley and mint and plenty of lemon and garlic, are used to marinated boneless chicken thighs. If you can't find sumac, just leave it out. It does add a nice tang and vibrant color, but the dish will work without it. Optimum marinating time here is 8 hours. But feel free to leave it for as little as 15 minutes or as long as 24 hours. If you would rather use white meat, substitute boneless skinless breasts but reduce the cooking time by a few minutes.

6 boneless skinless chicken thighs (about 1 3/4 pounds)
6 garlic cloves, grated on a Microplane or minced
Juice and zest of 2 lemons
3 tablespoons extra-virgin olive oil, more for serving
2 tablespoons minced fresh parsley, more for serving
2 tablespoons minced fresh mint
1 tablespoon minced fresh thyme
1 tablespoon minced fresh oregano or marjoram
1 1/2 teaspoons kosher salt, more as needed
1 tablespoon sesame seeds, more for garnish (optional)
3/4 teaspoon sumac, more for garnish (optional)
2/3 cup plain Greek yogurt, preferably whole milk yogurt
1/4 teaspoon ground black pepper

Steps:

  • Combine chicken with all but 1 teaspoon of the grated garlic (save that teaspoon for the yogurt sauce), the zest and juice of 1 lemon, oil, parsley, mint, thyme, oregano, 1 1/2 teaspoons salt, and the sesame seeds and sumac, if using. Cover and marinate for 15 to 30 minutes at room temperature; you can refrigerate it for up to 24 hours.
  • Heat grill or broiler. If grilling, cook chicken over high heat until charred in spots, 4 to 7 minutes. Flip pieces and continue grilling until just cooked through, another 4 to 7 minutes. If broiling, arrange a rack 3 to 4 inches from flame. Line a rimmed baking sheet with foil and spread chicken out in a single layer. Broil chicken, turning halfway through cooking, until well colored and charred in spots, 4 to 7 minutes per side. Be careful that it doesn't burn.
  • While chicken cooks, place yogurt in a small bowl. Stir in the reserved grated garlic and lemon zest and season to taste with salt. Serve the chicken drizzled with olive oil, remaining lemon juice to taste, black pepper, parsley and sesame seeds and sumac, if using, with the yogurt alongside for dipping.

Pungent from the fish sauce and garlic, sweet and sour from the honey and lime, and spicy from the jalapeño, the Houston chef Chris Shepherd likes to serve these golden-skinned chicken thighs with a green papaya salad. But anything crunchy and coleslaw-like will fare just as well. The longer you marinate the thighs, the more complex they become; four hours is a bare minimum. If you'd like to use white meat, choose bone-in, skin-on breasts for the juiciest result.

1 bunch scallions, chopped
1/2 bunch cilantro, plus more for garnish
5 garlic cloves, roughly chopped
1 jalapeño, seeded if you like
1/4 cup fish sauce
1 1/2 tablespoons honey
Juice of 2 limes, plus 1 lime for garnish
3 tablespoons neutral oil, such as sunflower or grapeseed
2 pounds boneless chicken thighs, preferably with skins attached (ask your butcher)
Green papaya salad, for serving (optional)

Steps:

  • Place scallions, cilantro, garlic, jalapeño, fish sauce, honey, lime juice and 2 tablespoons oil in a blender. Purée until smooth.
  • Scrape marinade into a large bowl or resealable plastic bag. Add chicken, tossing to coat, and refrigerate for at least 4 hours or overnight.
  • Heat oven to 400 degrees. Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Use tongs to remove chicken from marinade, letting any excess drip away. Do not pat dry.
  • Place chicken in skillet skin-side down and sear until golden brown, 3 to 5 minutes (2 to 3 minutes if using skinless chicken), being careful not to let it burn as the sugars from the honey will start to caramelize.
  • Flip chicken, transfer to oven, and continue to cook until it reaches an internal temperature of 165 degrees, 10 to 15 minutes. Transfer chicken to a cutting board and let it rest for 3 to 4 minutes. Serve with more cilantro, limes wedges and green papaya salad if you like.

1 lime, juice and zest of
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/2 cup fresh cilantro, chopped
1 teaspoon ground cumin
salt & pepper
1 dash cayenne pepper
fresh cilantro (to garnish)

Steps:

  • Arrange the chicken in a baking dish in a single layer.
  • Mix together remaining ingredients Pour over chicken, turning pieces to coat.
  • Cover the dish with lid or plastic wrap, and refrigerate for 1 hour.
  • Place uncovered dish in oven, bake at 350 for 30-45 until tender when pierced with a fork and juices run clear.
  • Baste chicken with the pan juices a couple of times while baking.
  • Serve the chicken garnished with fresh coriander leaves.
  • Equally good cold.

Every time someone new tries this they insist it is the best chicken they have had. It also provides a wonderful aroma with the balsamic vinegar and clilantro mixture when cooking.

6 boneless skinless chicken breasts
2 cups balsamic vinegar
1 bunch fresh cilantro
6 cloves fresh garlic
1 lb fresh mushrooms, cut into slices
2 tablespoons olive oil
fresh ground black pepper, to taste

Steps:

  • Preheat oven to 425 degrees.
  • Place the chicken breasts into a baking pan.
  • Pour the olive oil over chicken.
  • Add the garlic cloves, chopped, to the pan over chicken.
  • Grind the black pepper over chicken to suit your taste.
  • Layer the fresh mushrooms over the chicken in the pan.
  • Cut or chop the fresh cilantro into small pieces over the chicken.
  • Include the stems and leaves.
  • Pour the Balsamic vinegar over chicken to cover the breasts.
  • Cover the baking dish an place on center rack of oven for 40 minutes.
  • I have also made this recipe using frozen chicken breasts from the freezer when in a hurry for a dish.
  • If chicken is frozen cook for a total of 1 hour 20 minutes and check to insure chiken is done by cutting into one of the breasts.
