'FANCY' EGG SALAD



'Fancy' Egg Salad image

This recipe dresses up basic egg salad with parsley, capers, shallots and bacon. The writer, David Latt, cooks his eggs on a low, gentle boil for 30 minutes and finds they come out perfectly done, with the yolk flaky, but feel free to use whatever method you like, as long as the eggs are hard-boiled. (We give instructions for boiling and steaming in our guide to cooking eggs.) You can also add other spices: mustard, ground mustard seed, cumin or rosemary. The parsley can be replaced with cilantro, and the mayonnaise can be flavored.

4 eggs
1 tablespoon Italian parsley, finely chopped
1 tablespoon capers, dried, finely chopped
1 tablespoon finely chopped shallots
1 slice of bacon, crisp, finely chopped
1 1/2 tablespoons mayonnaise
Salt and pepper

Steps:

  • Put the eggs into a gently boiling pot of water and cook for 30 minutes. Cool with water, peel and chop.
  • Toss the eggs in a bowl with the parsley, capers, shallots and bacon. Season with salt and pepper to taste, then add the mayo and mix well. Serve with fresh bread or crackers, on hearts of romaine, or in a salad.

1/4 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon freshly grated gingerroot
Salt and freshly ground black pepper
6 cups mixed greens
2 tomatoes diced
1 cup peeled and diced cucumber
1 cup sliced red onion
1/8 cup chopped fresh mint leaves
3/4 cup fresh picked cilantro leaves

Steps:

  • Whisk all the vinaigrette ingredients together in a small bowl. Season, to taste, with salt and freshly ground black pepper.
  • In a salad bowl, combine all the salad ingredients. Add a little bit of the vinaigrette and toss to coat. Serve the remaining vinaigrette on the side.

If you like cilantro, this is an easy and quick dish to make. Prior to a small out of town trip I emptied out the fridge of perishables and this is what I came up with.

2 slices toasted good bread
2 -4 eggs
1 bunch cilantro, roughly chopped
2 celery ribs, roughly chopped
1/4 cup salsa
2 tablespoons ranch dressing
salt and pepper
parmesan cheese, shredded (optional)

Steps:

  • Mix together the cilantro, celery, salsa, ranch dressing and salt and pepper to taste.
  • Poach eggs (can use 1 or 2 per person).
  • Place cilantro mixture over toast.
  • Place eggs over cilantro mixture.
  • Sprinkle with parmesan cheese if desired.

6 hard-boiled eggs, peeled
3 tablespoons mayonnaise, or more as needed
1 ounce cream cheese, softened
1 tablespoon finely chopped fresh parsley
1 teaspoon finely chopped fresh chives
1 teaspoon finely chopped fresh dill
1 teaspoon Dijon mustard (such as Grey Poupon®)
1 teaspoon paprika
½ teaspoon salt

Steps:

  • Cut hard-boiled eggs in half, removing egg yolks from egg whites.
  • Combine egg yolks, mayonnaise, cream cheese, parsley, chives, dill, mustard, paprika, and salt in a food processor. Blend until creamy and mixed well together, adding more mayonnaise if consistency is too thick.
  • Coarsely chop egg whites and place in a medium bowl, add egg-herb mixture, and mix with a spoon.
