2 large eggs
2 tablespoons honey
1 1/2 cups all-purpose flour
1 cup yellow cornmeal
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cumin
1 teaspoon fine sea salt
Pinch of cayenne
5 tablespoons unsalted butter, melted and slightly cooled
Nonstick pan spray
3 cloves garlic, roughly chopped
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
1/2 Spanish onion, chopped
1 serrano chile, sliced into rounds
2 1/2 cups canned plum tomatoes, with their juices
2 tablespoons ground ancho chile powder
2 tablespoons ground pasilla chile powder
1/2 cup water
2 tablespoons pureed chipotles in adobo sauce
2 tablespoons honey
Splash of red wine vinegar
1 cup cilantro leaves
1 clove garlic
2 tablespoons grated cotija cheese
2 tablespoons pine nuts
3/4 cup crema (Mexican sour cream)
1/4 cup soft goat's milk cheese, at room temperature
Finely grated zest of 1 lime
Kosher salt and freshly ground black pepper
8 large eggs
2 cups grated sharp Cheddar
2 cups grated Monterey Jack cheese
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
8 scallions, thinly sliced
Handful of fresh cilantro leaves

Steps:

  • Make the waffle batter: Whisk together the buttermilk, eggs and honey in a small bowl. Whisk together the flour, cornmeal, baking powder, baking soda, cumin, fine sea salt and cayenne in a large bowl. Make a well in the center of the dry ingredients, add the wet ingredients and gently whisk together until just combined (do not over mix). Fold in the butter, cover the bowl with plastic wrap and refrigerate the batter for 30 minutes.
  • While the waffle batter rests, make the red chile sauce: Put the garlic on a cutting board, sprinkle with kosher salt, and use the flat side of your knife blade to smear the garlic and salt to a coarse paste. Heat the oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until soft, about 4 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the tomatoes and their juices, the ancho and pasilla chile powders and some salt and pepper and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the sauce is slightly reduced, about 15 minutes. Use a potato masher to mash the tomatos and cook slightly thickened, about 10 minutes longer. Mash again to make a chunky sauce. Stir in the chipotle puree, honey, vinegar and salt and pepper to taste, cook another 1 to 2 minutes then remove from the heat.
  • Make the crema: Combine the cilantro, garlic, cotija and pine nuts in a small food processor and puree the mixture until it is smooth. Whisk together the crema and goat cheese in a medium bowl until smooth. Stir in the cilantro mixture and lime zest and set aside. Season with salt and pepper.
  • Make the waffles: Heat the waffle iron according to manufacturer's instructions. Spray with nonstick pan spray, then ladle about 1/4 cup of the batter into each grid, close, and cook until golden brown on both sides and steam stops coming out from the iron, about 4 minutes. Transfer the waffles to a baking sheet.
  • Make the eggs: Preheat the broiler to high. Crack 4 eggs into each of 2 small bowls. Heat 2 medium nonstick skillets over medium-high heat (or use 1 skillet and cook the eggs in 2 batches). Add 2 tablespoons butter to each skillet; once the bubbles mostly subside, slip 4 eggs into each skillet and season the tops with salt and pepper. When the whites start to set, after 1 to 2 minutes, cover the skillet and cook until the whites are set and the yolks are still runny, about 2 minutes longer.
  • While the eggs cook, assemble the waffles: Combine the Cheddar and Moneterey Jack cheeses in a medium bowl, then top each waffle with about 1/2 cup of cheese and broil until the cheese is bubbly, 2 to 3 minutes. Top each waffle with a fried egg, a generous amount of chile sauce and a dollop of crema. Garnish with scallions and cilantro leaves and serve immediately.

5 cups 1/2-inch cubed cornbread made from an 8.5-ounce box mix
1 ½ pounds tomatoes, stemmed and cut into medium dice
salt, to taste
2 medium garlic cloves, minced
½ large red onion, cut into small dice
¼ cup chopped fresh cilantro
2 ripe avocados cut into medium dice
¼ cup olive oil
2 tablespoons red wine vinegar
Ground black pepper, to taste

Steps:

  • Adjust oven rack to center position and heat oven to 250 degrees.
  • Place cornbread cubes on a cookie sheet with a rim; bake until bread is dried out, about 30 minutes, then set aside to cool.
  • Salt the tomatoes, stir in the garlic and let stand until juicy, about 30 minutes.
  • Prepare remaining ingredients; toss with tomatoes. Add bread; toss. Let stand 10 minutes before serving.

MOMAPHET'S CILANTRO LIME CORNBREAD

This recipe was developed for the Southern USA Cornbread Challenge of the Food Friends and Fun 2014 Culinary Quest on Yuko.com. I added to a basic buttermilk cornbread one of my favorite flavor combinations lime, cilantro & garlic. The cilantro and lime really pair well together and are the dominant flavors. I haven't tried the chipotle addition but it's another flavor I like with these so I thought I would suggest it. The smaller amounts will give you fairly subtle flavors add more for greater umph.

1 cup cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/8 teaspoon baking powder
3/4 teaspoon salt
1/2-1 teaspoon garlic powder
3 -4 tablespoons cilantro, chopped fine
3 -4 green onions, sliced (include a little of the green)
1 medium lime, zested
1 cup buttermilk
1/3 cup vegetable oil
1 large egg
2/3 cup monterey jack cheese, shredded
for a little kick add 1/4- 1/2 tsp dried chipotle powder or 1/2-1 chipotle pepper, with adobe blended into the milk mixture

Steps:

  • Pre heat oven to 400 degrees, butter well one 10" cast iron skillet, or an 8" square pan. If using the pan, you can also use non-stick cooking spray.
  • Whisk or beat well together with a fork: buttermilk, egg, & oil; set aside.
  • Stir or whisk together all the dry ingredients, add in lime zest, onions and cilantro stir well.
  • Gently stir the wet ingredients into the dry mixing just until everything is incorporated, don't over mix.
  • Pour batter into prepared pan, sprinkle with shredded cheese and bake 18-25 minutes. If using the skillet check at 18 minutes and should be done by 22. Using the square pan check at 20, with either test by inserting a thin knife or toothpick it should comes out clean (don't mistake melted cheese for uncooked batter). Serve warm.

2 large eggs

1/4 cup vegetable oil
1/4-1/2 cup chopped fresh cilantro

Steps:

  • Preheat oven to 375°F.
  • Stir together cornmeal, flour, baking powder, baking soda, salt and sugar in a large bowl.
  • Stir grated cheese into mixture.
  • Whisk eggs with buttermilk and veggie oil in a separate bowl.
  • Stir in cilantro.
  • Stir wet ingredients into cornmeal mixture just until combined.
  • Spoon into well greased 9 inch round or square cake pan.
  • Bake on middle rack of oven for 20 to 25 minutes.
  • (Substitute cheddar or monterey jack for the havarti, but the havarti is so good!).
  • While great served warm, this bread has more flavour when eaten at room temperature.

4 tsp baking powder
1/2 tsp salt
1 egg
1 c tomatillo salsa-see link
1/4 c butter, melted
1 1/2 c milk
1 c fresh cilantro, chopped
1 c grated cheese-your favorite mexican flavor
2 tsp black pepper, opt

If you love cornbread, then this is the recipe for you! The first time I ate this at the Grand Hyatt's Achiote Restaurant on the Riverwalk in San Antonio I fell in love with it! Now, when I want cornbread with a twist, this is the recipe I use! Go on and try it! I know you'll love it too!

4 stick butter (at room temperature)
2 1/2 c sugar
9 large eggs
3 c cornmeal
3 c cake flour
2 Tbsp baking powder
4 c sour cream
2 c diced green chillies (e.g. jalapenos, fresh or bottled)
1 Tbsp salt
1/4 tsp cayenne pepper
1/4 tsp red chili flakes
1 bunch fresh cilantro (washed, dried, and large stems removed)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix butter and sugar in a mixer until light and fluffy. Add eggs a little at a time while mixer is on low speed.
  • 3. Sift together cornmeal, cake flour and baking powder. Mix in sour cream, then add dry ingredients and mix for 30 seconds. Add green and red chiles, salt, cayenne and red chile flakes; mix for an additional minute.
  • 4. Remove one third of the batter and purée with the cilantro in a blender.
  • 5. Spray two (9-inch) cake pans or two 9-by-5-inch loaf pans with non-stick spray. (You can also prepare muffin pans for a yield of 48 muffins) Spoon in some of the plain batter, then pour in some of the green batter and drag a knife across back and forth to create a marbled effect. Top it with remaining plain batter.
  • 6. Bake until the center feels firm, the edges are beginning to brown, or a knife inserted in the middle comes out clean, approximately 40 minutes for the cakes, 50 minutes for the loaves, and about 25 minutes for the muffins. Recipe can be halved.

2 c sweet onion, diced
4 clove garlic, minced
1/4 c olive oil
2 c diced green pepper and green pepper
5 lb skinless/boneless chicken breasts and thighs
1/4 c all purpose flour
1 tsp chili powder
4 tsp cumin
2 tsp ground oregano
4 can(s) 15 oz cannellini beans (do not drain)
9 c chicken stock, light
2 can(s) (4.25 oz) diced green chiles
1 can(s) (15 oz) navy beans
2 c fresh corn kernels (use frozen if unavailable)
2 c shredded montery jack cheese
1/2 c chopped fresh cilantro
to taste salt and pepper
FOR THE CILANTRO CORNBREAD
1 1/3 c all purpose flour
1 1/3 c yellow cornmeal
2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
2 Tbsp dried cilantro
1 tsp ground corriander
1/2 c salted butter, melted
1 1/3 c buttermilk
2 large eggs, at room temperture, lightly beaten
FOR THE GREEN CHILE SOUR CREAM
1 8 oz container sour cream
1 can(s) (4.25 oz) diced green chiles, do not drain
1 lime juiced

Steps:

  • 1. For the chili: In a large Dutch oven or pot over medium heat, sauté onion and garlic in olive oil until translucent, about 10-15 minutes, stirring occasionally. Add diced peppers and continue to cook until peppers are soft, about 10 more minutes. Add chili powder, cumin and oregano to pot and stir to combine.
  • 2. In a medium bowl, toss chicken with flour and salt and pepper. Add to vegetables and cook 10 minutes, stirring frequently and scraping browned bits from the bottom of the pan until chicken is cooked.
  • 3. In the bowl of a food processor or in a blender, puree cannellini beans and one cup chicken broth until smooth. Add to the chicken and vegetable mixture, along with remaining chicken broth. Stir to combine. Add corn and navy beans and simmer for about an hour. Mixture will thicken. Before serving, stir in Monterey jack cheese and chopped cilantro. Serve with cornbread and chile sour cream
  • 4. For the cornbread: Preheat oven to 350 degrees. Butter a 9 x 9 baking dish and set aside. In a medium bowl whisk together dry in ingredients and spices. Add ½ cup butter, buttermilk and eggs and stir till combined. Bake in preheated oven 30-35 minutes until tester in the center comes out clean.
  • 5. For the Green Chile sour cream: Combine all ingredients in a medium bowl. Refrigerate until ready to use

Entered for safe-keeping, Reggie Dwork (bread-bakers) found this on bigoven.com, said they are "moist and chewy, spicy and sweet", so I have to try this! When handling serrano chilies, do not touch your eyes; I wear latex gloves. If you don't like chilie peppers, just saute 1/2 cup onions in 1 tablespoon of extra-virgin olive oil and use them in lieu of the chilie peppers.

2 small serrano chilies or 2 ounces canned diced green chiles
1 1/2 cups unbleached white flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt

2/3 cup milk or 2/3 cup soymilk
2 large eggs
1/2 cup expeller-pressed canola oil or 1/2 cup grapeseed oil
3 tablespoons pure maple syrup or 3 tablespoons sugar

  • BROILER-BLACKENED CHILIES:.
  • Put the chilies on a baking pan on the top rack under the broiler until they blister and turn black. Turn them over and repeat. Remove them from the broiler and drop them into a brown bag to cool. The skin will become loose and flaky as they cool.
  • OPEN-FLAME-BLACKENED CHILIES:.
  • Alternatively, roast the chilies over a flame or over a barbecue grill. Hold the chilies 4" away from the flame and rotate until all sides of the pepper turn black (I would use a grilling basket or a soaked bamboo skewer in case you wanted to use your hands again someday.).
  • MIX:.
  • Preheat oven to 350 degrees F. If using cast iron pans (for the best crust), grease them and put them in the oven during preheating.
  • In a large bowl, mix together all the dry ingredients.
  • In a separate bowl, whisk together the milk, eggs, oil or butter, maple syrup or sugar, and the cilantro.
  • Stir the wet ingredients into the dry ingredients with a wooden spoon until thoroughly mixed.
  • Take the chilies out of the bag and slice them in half, directly down the middle. Open them up. Remove and discard the seeds. Peel off and discard the blistered skin. Cut the chilies into small pieces and stir them into the batter until they are completely mixed inches.
  • Smear a little butter or oil on the bottoms and sides of a 9-inch square baking pan or 12 muffin molds and pour the batter inches
  • Bake 20 minutes if using a muffin pan, or 25 minutes if you're using a baking pan.
  • Remove from the oven and let cool.
  • HONEY BUTTER:.
  • Blend the softened butter and honey in a bowl with a fork, whipping lightly to create a creamy spread. Scoop the spread into a ramekin and serve with the cornbread.
  • PRESENTATION OF SQUARE PAN CORNBREAD:.
  • Make 1 slice directly down the middle of the baking pan and 4 slices across to make 10 rectangular pieces.

If you'd like to use an alternative to chile peppers, just sauté 1/2 cup onions in a tablespoon of extra-virgin olive oil and use them in place.
