GRILLED CHICKEN WITH CILANTRO MARINADE
This has become a quick and easy favorite that we frequently make on the grill. Despite the ease of prep, it is bursting with flavor. It is from the Black Dog Tavern's Summer on the Vineyard Cookbook.

Steps:
- Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
- Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
- Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.
- Serve and enjoy.
LIME-CILANTRO MARINADE FOR CHICKEN

- In a blender, combine the first eight ingredients; cover and process until smooth. Place marinade in a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for at least 2 hours. , Drain and discard marinade. Lightly oil the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°.

GRILLED CHICKEN WITH CILANTRO MARINADE
Definitely make this grilled chicken at your summer cookouts. After marinating, the slow cooked chicken legs are moist and juicy. The marinade is slightly sweet from the brown sugar with a bold, spicy flavor from the mustard. You'll definitely taste the jalapeno flavor but it doesn't add any heat to the chicken.

- 1. In a large measuring cup mix the sugar, mustard, jalapeno, cilantro, salt, and pepper.
- 2. Place chicken drumsticks in a resealable bag and pour marinade over the top. Seal bag; turn to completely coat chicken. Remove air from bag; seal tightly. Place in refrigerator for a least one hour; overnight is best.
- 3. Grill over low heat to medium heat depending on your grill, turning occasionally to achieve doneness and beautiful grill marks. Cooking over very low heat will take about 1 hour or more to completely cook meat.
- 4. Another option, instead of standing over the grill, is to place chicken on the grill over medium heat and turn to achieve grill marks. Place semi-cooked chicken in 13 x 9 pan, cover with foil, and place in a 250 F oven for about 30 to 45 minutes to complete cooking. You will have wonderfully moist chicken either way. Do not overcook or your chicken will be dry.
CHICKEN STRIPS WITH CILANTRO-YOGURT MARINADE
All that chicken in the freezer? Here's an easy weeknight recipe with a satisfying crunch. Fage yogurt is available in many supermarkets, including Trader Joe's. The small (8 oz.) container is just right for this recipe. (This is an original recipe, just so you know.)

- In a food processor or blender, thoroughly blend the yogurt, cilantro, chopped garlic, green onion, lime zest and juice, cumin, and cayenne. Season well with salt and pepper.
- Mix the chicken strips with the marinade and marinate for a few hours in the refrigerator (or overnight), stirring occasionally. In a pinch, you can marinate at room temperature for 1/2 hour, stirring occasionally.
- Dredge the chicken to coat it thoroughly in the bread-crumbs. Place on a lined, lightly greased baking sheet and roast in a 350 oven until cooked through, about 30 minutes, flipping halfway through. (Note: Since there's little fat here, the chicken won't be golden brown as you might expect. You can spray it with olive oil or cooking spray for a more attractive color.).
- Serve chicken sprinkled with cilantro with a lime wedge on the side for squeezin'. (Note: I like to serve this dish over my recipe for "Creamed Corn with Bacon and Chipotle").

CILANTRO CHICKEN MARINADE
Steps:
- Add garlic and cilantro stems to food processor and pulse until minced. Add rest of ingredients and puree until smooth. Marinate chicken in puree for four hours, or up to 24 hours. Pam chicken before cooking. If cooking tenders, 2 minutes per side should be sufficient
