2 pounds ground turkey, preferably a blend of thigh and breast meat
1/2 cup minced red onion
1/4 cup minced green onion, green parts only (about 1 scallion)
1 or 2 serrano peppers, minced, to taste
1 egg, whisked
1 tablespoon olive oil
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon hot paprika
1 teaspoon ground coriander
1 teaspoon ground cumin
6 burger buns or potato rolls, warmed in oven
1 cup grated Monterey jack cheese
12 small lettuce leaves
12 slices tomato
1 cup thinly sliced red onions
1 avocado, thinly sliced
1 recipe Emeril's Cilantro Mayonnaise, for serving

Steps:

  • Preheat a grill to medium high. In a large bowl, combine ground turkey with minced red onion, green onion, peppers, egg, olive oil, Worcestershire sauce, chili powder, paprika, coriander, and cumin. Divide mixture into 6 equal portions and, using your hands, shape into 6 burgers. Place burgers on grill and cook until just done and a thermometer inserted into the centers registers 165 degrees, about 3 minutes per side.
  • Serve burgers on buns with cheese, lettuce, tomato, sliced red onions, and avocado. Garnish with Cilantro Mayonnaise.

1 cup barbeque sauce
1 teaspoon garlic powder, or to taste
1 cup chopped fresh cilantro
4 slices Monterey Jack cheese
8 slices sourdough bread, toasted
4 lettuce leaves
4 slices tomato

Steps:

  • Preheat a grill for medium heat. When hot, lightly oil the grate.
  • In a medium bowl, lightly mix together the ground beef, barbeque sauce and garlic powder. Separate into 4 portions and flatten into patties.
  • Grill the burgers for about 8 minutes per side, or until well done. Place a slice of cheese on top of each burger and allow it to melt for a minute. Press chopped cilantro into the melted cheese on each burger. Serve burgers on toasted sourdough bread topped with lettuce and tomato. Feel free to use other condiments to your liking.

Steps:

  • For Pico: Combine all vegetables. Add lime juice, olive oil, salt, pepper, and cayenne, and stir. For best taste, allow to chill for an hour.
  • For burgers: Mix all ingredients together except for salt and pepper, and form into six medium patties. Sprinkle freshly ground pepper and salt on both sides, to taste. Grill on medium high for about ten minutes, flipping once. Juice should run clear. For a fresh new take, serve burger bun-less with the pico. Or, serve on bun with monteray jack cheese and pico. Great with grilled pineapple and rice.
  • NOTE: make sure the jalepenos are completely seeded, and that the white inner ribs have been removed.

  • Sauce: Char peppers over gas flame or under broiler until blistered on all sides. Enclose in a paper bag and let stand 15 minutes. Peel peppers, remove stem and seeds, and dice. 14 ounces garbanzo beans, drained
1 lemon (zest of whole lemon and juice of half of it)
1 teaspoon ground cumin
1 ounce cilantro, chopped
1 egg
4 ounces fresh breadcrumbs
1 red onion (1/2 sliced and 1/2 diced)
1 tablespoon olive oil
4 wholewheat hamburger buns
1 tomatoes, sliced
1/2 cucumber, sliced

Steps:

  • In a food processor, whiz the garbanzo beans, lemon zest, lemon juice, cumin, half the cilantro, egg and some salt and pepper. Scrape into a bowl and mix with 3oz of the breadcrumbs and the diced onions.
  • Form 4 burgers, press remaining breadcrumbs onto both sides and chill for at least 10 minutes
  • Heat the oil in a large frying pan until hot. Fry the burgers for 4 mins each side, keeping the heat on medium so they don't burn.

4 portabella mushrooms
4 slices monterey jack pepper cheese or 4 slices monterey jack cheese
1 large tomatoes, sliced
1/2 red onion, sliced thin
2 avocados, peeled, pitted and sliced

1/4 cup chopped cilantro
4 whole wheat hamburger buns

Steps:

  • Over a hot charcoal grill or a in a pan over high heat cook the mushrooms. Season them with salt and pepper while on the grill and cook until soft and dark, about 3 minutes on each side.
  • After you turn the mushroom over place the cheese on top so that it melts.
  • Meanwhile mix the cilantro and mayonnaise together and set aside.
  • Toast the buns on the grill or in the pan. While hot slather them with 2 tablespoons each of the cilantro mayonnaise.
  • Place each mushroom on the bottom halve of a bun and layer with once slice of tomato, a couple of pieces of red onion, 1/2 avocado slices, and the lettuce.
  • Top with the other bun and serve.

These burgers are very healthy and have a bright, piquant flavor. I'm not a big fan of beef, and my husband would eat a cow a day if he could, but I make these and we're both happy. The amounts of cilantro, garlic, and lemon zest are very flexible. Also, the burgers are great by themselves with a little mustard on bread, if you don't want to shred cabbage, but the toppings all really pull it together and make it a favorite around here. This recipe will make 2-3 large or 4 smallish burgers.

1 large egg
10 saltine crackers
1/2 cup fresh cilantro, chopped
3 teaspoons lemon juice

You either like cilantro or you don't. If you're in the pro-cilantro camp, these burgers are for you. They're moist and tender, with a hint of heat from the sambal and curry powder.

1 Tbsp finely chopped scallions, whites only
1/2 c fresh bread crumbs- i use 1 slice italian bread ground in my spice mill
1 Tbsp fresh cilantro chopped
2 tsp sambal olek- chinese chili paste
1/8 tsp curry powder
1/4 tsp paprika
1/2 tsp kosher salt
1/4 tsp black pepper
1 large egg slightly beaten
1 lb lean ground beef
condiments of your choice

Steps:

  • 1. Combine all ingredients (except beef) in a large bowl. Now add the ground beef, and with fingertips mix gently until incorporated. Don't over mix.
  • 2. Make 4 patties. **TIP** When making the patties, indent your thumb in the center of each patty to make a small well. This will ensure the burgers will cook flat and not puff up.
  • 3. Prepare grill. I use a stove top grill and heat it to high, then lower the temp to medium. Coat grill with cooking spray and add the burgers. Cook 5 minutes on the first side, then 4 minutes on the second. You're burgers will be medium to well done. Serve with whatever condiments you like. I like lettuce, tomato, mayo and Dijon mustard.

1 large vine-ripened tomatoes, sliced
radishes (1 pkg.) or sunflower sprouts (1 pkg.)

Steps:

  • Sauce:
  • Char peppers over gas flame or under broiler until blistered on all sides. Enclose in a paper bag, and let stand 15 minutes.
  • Peel peppers, remove stem and seeds, and dice.
  • Measure 1/4 cup diced peppers into a small bowl, and add mayonnaise, sour cream, cilantro, lime juice, ginger, garlic, and salt. Stir well.
  • Burgers:
  • Meanwhile, in large bowl, beat egg and stir in panko, soy sauce, sugar, sesame oil, ginger, garlic, lime juice and zest, red pepper flakes, and salt.
  • Add ahi and combine gently. Form 4 patties.
  • Heat vegetable oil on non-stick griddle, over med-high heat.
  • Add patties, and cook 3-4 minutes per side.
  • Toast rolls under broiler during last few minutes of cooking.
  • Spread sauce on roll bottom and top with onion, tomato, sprouts, and additional sauce.
  • Add roll tops.

1 can (15 ounces) black beans, rinsed and drained
1/2 cup shredded carrots
2 tablespoons minced fresh cilantro
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons lime juice
2 garlic cloves, minced
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup soft bread crumbs
1/4 cup egg substitute
3 teaspoons cornmeal
3 teaspoons canola oil
Salsa, guacamole and tortilla chips, optional

Steps:

  • In a food processor, combine the first 10 ingredients; cover and pulse until blended. Transfer to a large bowl. Stir in bread crumbs and egg substitute; refrigerate for 30 minutes., Shape bean mixture into four patties; sprinkle each side with cornmeal. In a large nonstick skillet, cook patties in oil for 4-5 minutes on each side or until lightly browned. Serve with salsa, guacamole and tortilla chips if desired.

4 slices monterey jack pepper cheese
1 avocado, thinly sliced
4 slices tomatoes
12 canned jalapeno slices (optional)

Steps:

  • In a large bowl mix together turkey, cilantro, garlic, Worcestershire, paprika, cumin, granulated garlic, onion powder, salt, and pepper, until combined. Form into 4 patties.

2 Tbs. chopped fresh cilantro
2 Tbs. finely chopped red onion or scallion
2 Tbs. mayonnaise
1 tsp. minced fresh ginger
1/2 tsp. minced fresh hot green or red chile, such as cayenne, Thai bird, or serrano
Kosher salt and freshly ground black pepper
2 Tbs. canola oil

  • With a very sharp knife, cut the tuna into 1/4-inch dice. Alternatively, cut the tuna into 1-inch chunks and pulse in a food processor until just chopped, about 4 quick pulses. take care not to overprocess. An adaption of Rachael Ray's beef and bean burrito burgers with a few extra ingredients and an awesome topping. Hopefully you will find that these are ingredients you have on hand. A family favorite! I like to serve on whole wheat brioche buns or in a pita pocket for fewer carbs :)

1 lb extra lean ground beef
3/4 cup cooked brown rice
1/2 cup corn kernel
1/2 cup black beans, mashed with fork
1 tablespoon chili powder
1 tablespoon cumin
4 green onions (or chives)
1/2 cup shredded cheddar cheese
1 bunch fresh cilantro, minced
1 lime, juice of
chipotle hot sauce (such as Trader Joe's)
1 cup sour cream

Steps:

  • Combine all ingredients with your hands, be sure to mix spices around well.
  • Form into 4 large patties or 7-8 regular size burgers.
  • Grill burgers to desired color/temp. and top with Cilantro Sauce.

  • Mince cilantro.
  • Combine with sour cream and hot sauce to taste.
  • Whisk in juice of one lime.
