1 3/4 cups corn
3 1/2 cups black beans
1 bunch cilantro, chopped
1 red onion, small, chopped
1 lime, juice
1/4 cup olive oil
1 tablespoon garlic, minced
1 jalapeno, seeded, minced
2 teaspoons cumin
2 teaspoons cinnamon
1 teaspoon coriander
1 teaspoon paprika
1 teaspoon curry powder
1/2 teaspoon cayenne pepper
1/4 cup brown sugar
1 dash hot sauce
salt and pepper

Steps:

  • - Simply mix the ingredients as described. Tweak the spices / sugar / olive oil ratio to suit your taste. This stuff is increeeeeeeeeedible!

1 (15 ounce) can corn
1 (15 ounce) can white corn
2 (15 ounce) cans black beans
1 bunch fresh cilantro, chopped
1 small red onion, chopped
2 garlic cloves, minced
1 small jalapeno, seeded, minced
1 lime, juice only
1/4 cup olive oil
1/4 cup brown sugar
3 teaspoons cumin
2 teaspoons coriander
2 teaspoons cinnamon
2 teaspoons paprika
2 teaspoons curry powder
1 teaspoon cayenne
1 dash hot sauce
salt and black pepper

Steps:

  • Just mix it all together! It helps to rinse the corn and black beans in a colander first to get rid of the can slime. Also, this just represents a starting point from which to balance out the flavors. It usually takes some tweaking at the end to get it just the way you want it. Use your tongue-brain and have fun!

Number Of Ingredients 9

1 15-ounce can red kidney beans, drained
3 tablespoons sour cream
2 tablespoons fresh lemon juice
2 garlic cloves, finely chopped
3/4 teaspoon ground cumin
1/2 small red onion, chopped
1/4 cup chopped fresh cilantro
Assorted cut-up vegetables (such as carrots, celery, and bell pepper)
Pita bread triangles, toasted

Steps:

  • Place beans in medium bowl. Mash with fork until almost smooth. Add sour cream, lemon juice, garlic, and cumin; blend well. Mix in onion and cilantro. Season dip with salt and pepper. Transfer to small bowl. Let stand at least 30 minutes to blend flavors. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)
  • Place dip in center of platter. Surround with vegetables and pita triangles.

2 cans (7 ounces each) white or shoepeg corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 large tomato, chopped
3/4 cup chopped sweet red pepper
1/2 cup chopped red onion
1/2 cup Italian salad dressing
1/4 cup minced fresh cilantro
3/4 teaspoon hot pepper sauce
1/2 teaspoon garlic powder
Tortilla chips

Steps:

  • In a bowl, combine the corn, beans, tomato, red pepper and onion. In a small bowl, combine the salad dressing, cilantro, hot pepper sauce and garlic powder. Pour over corn mixture and gently stir to coat. Serve with tortilla chips.

I make this frequently in the summertime. I make a fresh salsa in my food processor, give it a quick rinse and whip this up right after. The two dips are great together and make easy work for a bbq. I use this with everything from my Southwest Turkey Burgers (recipe posted) to a spread on tortillas with eggs in the morning. I just love that it's virtually fat-free but tastes great.

White Bean and Cilantro Dip with Toasted Pita Chips image

2 (15.5-ounce) cans cannellini beans, rinsed and drained
1 bunch cilantro, washed and dried
2 garlic cloves
1/2 teaspoon cayenne pepper
2 tablespoons sour cream
1 teaspoon lime juice
1 to 2 tablespoons olive oil
Salt and freshly ground black pepper
Toasted Pita Chips, recipe follows
10 (6-inch) or regular-sized pita pockets
2 tablespoons olive oil
2 cloves garlic
Salt and freshly ground black pepper

Steps:

  • Special equipment: food processor
  • In a food processor add all ingredients and blend until smooth, adding more olive oil to loosen dip, if needed. Season with salt and pepper, to taste, and refrigerate at least 1 hour or overnight, then serve with Toasted Pita Chips.
  • Toasted Pita Chips:
  • Heat the oven to 400 degrees F.
  • Split the pita pockets along the edge to make 2 circles. Slice the garlic cloves in half and rub both sides of the pita disks with the cut side of the garlic. Stack a few pita halves at a time and like a pizza, cut them into 8 wedges. Arrange the wedges on 2 baking sheets and drizzle with olive oil. Mix and toss the wedges with your hands then sprinkle with salt and pepper to taste. Bake until golden brown, about 10 minutes. To store, let cool and put in an air tight container or plastic bag.
