4 medium potatoes (about 2 pounds), peeled and cubed
3/4 cup chopped onion
1 small carrot, chopped
1/4 cup chopped celery
1-1/2 cups chicken broth
3 tablespoons butter, cubed
3 tablespoons all-purpose flour
2-1/2 cups whole milk
1 tablespoon minced fresh parsley
3/4 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Swiss cheese

Steps:

  • In a large saucepan, combine the potatoes, onion, carrot, celery and broth. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender; lightly mash., Meanwhile, in a small saucepan, melt butter; stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into potato mixture. Cook and stir until thickened and bubbly. Add parsley, salt and pepper. Remove from the heat; stir in cheese until melted.

1/2 teaspoon pepper
1/8 teaspoon hot pepper sauce
1/8 teaspoon Worcestershire sauce

5 cups diced potatoes
1-1/2 cups fat-free milk
1 can (12 ounces) fat-free evaporated milk

Steps:

  • In a lightly greased nonstick skillet, cook leeks and onion for 5 minutes or until tender and just beginning to brown; set aside., In a large saucepan, cook flour and garlic powder in oil for about 2 minutes or until lightly browned. Gradually whisk in broth. Stir in the bay leaves, salt, pepper, pepper sauce, Worcestershire sauce and nutmeg. Steps:

  • Melt the butter in a large saucepan over medium heat, and cook the onions until tender. Mix in the potatoes, celery, carrots, and garlic. Season with Italian seasoning. Pour in milk, gradually stir in cornstarch, and bring to a boil. Mix in tomatoes, broth, and tomato paste. Return to boil, reduce heat to low, and simmer 20 minutes. Season with salt and pepper.

5 medium potatoes
2 cups water
1 small onion
1/2 cup chives
3 tablespoons flour
3 tablespoons butter
crushed red pepper flakes
ground black pepper
3 cups milk or 3 cups half-and-half
1/2 teaspoon sugar
1 cup cheddar cheese, shredded
1 cup crumbled bacon

Steps:

  • Peel potatoes and cut into 1" cubes.
  • Bring water to a boil in large saucepan and add potatoes.
  • Cook until tender and drain reserving liquid.
  • Set aside potatoes and measure 1 cup cooking liquid (adding water if necessary) and set aside.
  • Peel and finely chop onion and chives.
  • Melt butter in saucepan over medium heat.
  • Add onions and chives to saucepan and cook, stirring frequently until tender, but not brown.
  • Add flour to saucepan.
  • Season with red pepper and black pepper to taste.
  • Cook 3 to 4 minutes.
  • Gradually add potatoes, reserved 1 cup cooking liquid, milk/cream, and sugar to onion/chive mixture in saucepan.
  • Stir well and add cheese and bacon.
  • Simmer on low heat for 30 minutes, stirring frequently.
  • Serve with fresh chives, cheese, and bacon.

5 slices bacon
3 tablespoons red wine vinegar
1 tablespoon sugar
1 bunch fresh spinach, washed, stems removed
1 tomato, chopped

Steps:

  • In a large pot, cook the bacon until it is browned and crispy. Remove the bacon strips and crumble, leaving the drippings in the pot.
  • Cook the onion and potatoes in the bacon drippings until they are tender, approximately 15 minutes. Stir in the cream, salt, and pepper. Dredge the cheese in flour and slowly add the cheese to the pot until it is melted. Add the crumbled bacon to the pot and stir everything together until it reaches your desired consistency.
  • Serve in a hollowed out bread roll.
  • In a medium sized pan, cook the bacon until it is browned and crispy. Remove the bacon strips from the pan, leaving only the drippings. Slowly add the vinegar to the pan, whisking constantly. Whisk in the sugar. Put the spinach into the pan and toss the leaves with the dressing until they wilt slightly. Remove the salad from the pan and garnish with chopped tomatoes and crumbled bacon.

1 tsp. parsley flakes

  • In large saucepan over medium heat, cook bacon until crisp. Remove and set aside. In bacon drippings, saute leeks until softened, about 3 minutes. Add potatoes and chicken broth. 258 g cauliflower (3 servings)

1 medium onion

1 (24 ounce) container sour cream
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of chicken soup
1 (12 ounce) can evaporated milk
1 -1 1/2 lb bacon (cooked crisp and crumbled)
2 tablespoons bacon grease
1 teaspoon parsley flakes
instant mashed potatoes (for thickening)
shredded cheese (we use cheddar)

Steps:

  • In a Dutch oven or large stock pot cover potatoes with water, to about 1-2 inches above potatoes.
  • Add in onions and salt and pepper.
  • Boil potatoes to right consistency.
  • Do NOT pour off water.
  • Leave on low heat.
  • In a separate bowl mix together sour cream, both cream soups, and evaporated milk with a whisk.
  • Pour this mixture into pot of potatoes; mix well.
  • Add in bacon, grease and parsley flakes.
  • Lower heat to simmer.
  • Add a little instant potatoes in at a time and mix well till you get your desired consistency.
  • Pour into bowls and garnish with cheese.

Dredge the cheese in flour and slowly add the cheese to the pot until it is melted. Add the crumbled bacon to the pot and stir everything together until it reaches your desired consistency. Serve in a hollowed out bread roll. In a medium sized pan, cook the bacon until it is browned and crispy. Remove the bacon strips from the pan, leaving only the drippings. Slowly add the vinegar to the pan, whisking constantly. Whisk in the sugar. Put the spinach into the pan and toss the leaves with the dressing until they wilt slightly. Remove the salad from the pan and garnish with chopped tomatoes and crumbled bacon.

A warming comfort food, this soup is served frequently at our house in the cooler months. Fabulous when served in bread bowls! Prep time considers cleaning and chopping fresh vegetables.

6 -8 medium red potatoes
2 cups water
1 small onion, chopped
1 cup mushroom, sliced
1/2 cup chopped celery
1/4 cup bacon or 1/4 cup bacon bits (optional)
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
2 cups cubed cooked ham
ground black pepper
crushed red pepper flakes

Steps:

  • Peel Potatoes and cut into 1 inch cubes.
  • Boil in water until done, about 15 minutes.
  • Drain & Set aside, but save 1 Cup of the cooking liquid for later.
  • Melt butter in a large saucepan over medium heat.
  • Add onion, celery, and mushrooms, stirring frequently until onion is soft and translucent.
  • Add flour, bacon, red and black pepper to saucepan.
  • Mix well, cook 3- 4 minutes.
  • Slowly add potatoes, reserved cup of liquid, milk, and sugar.
  • Stir well.
  • Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.

3 medium potatoes, cubed (2 1/4 cups)
2 cups vegetable broth or 2 cups chicken broth
1 small green pepper, chopped (1/2 cup)
1 small sweet red pepper, chopped (1/2 cup)
1 small yellow sweet pepper, chopped (1/2 cup)
1 small onion, chopped (1/3 cup)
1/4 cup margarine or 1/4 cup butter
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
3 cups milk

Steps:

  • In a medium saucepan combine potatoes and vegetable or chicken broth.
  • Bring to a boil; reduce heat, cover and simmer for 10 minutes or till potatoes are tender-- Do not drain.
  • Meanwhile, in a large saucepan cook the green pepper, red pepper, yellow pepper, and onion in hot margarine or butter till tender but not brown.
  • Stir in flour, salt, black pepper, and ground red pepper.
  • Add milk all at once.
  • Cook and stir till thickened and bubbly.
  • Cook and stir for 1 minutes more.
  • Stir in undrained potatoes- Heat through.
  • To serve, ladle soup into individual bowls.
