My Chunky Monkey Banana Bread recipe is moist and tender with an intense banana flavor, sweet chocolate chips and crunchy walnuts.

1 cup granulated sugar
1/2 cup butter (1 stick) (room temperature)
2 large eggs
3 ripe bananas
1 tablespoon milk
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2/3 cup chocolate chips
2/3 cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F and spray a 9" loaf pan generously with cooking spray or line with parchment paper.
  • Cream together the butter and sugar until light and fluffy. Stir in eggs one at a time until well combined.
  • In a separate bowl, mash the bananas with a fork. Stir in milk. Add the banana mixture to the butter mixture and stir until combined.
  • In another bowl, sift together the flour, baking soda, baking powder and salt. Add the dry mixture to the wet mixture and still just until combined - do not overmix.
  • Gently fold in chocolate chips and walnuts.
  • Pour batter into the prepared loaf pan. Bake for 1 hour or until golden brown and a toothpick inserted into the center comes out clean.
  • Cool in the pan for half an hour before removing and transferring to a wire rack to cool completely.

Banana, walnut, and chocolate are always an amazing combination of ingredients, no matter what the delivery system, but it really doesn't get any better than in this ganache-frosted cupcake. A close second would be a chocolate-dipped frozen banana, rolled in walnuts, which is also a great treat, although much more awkward to eat in public. Feel free to omit the frosting and just enjoy these as muffins.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
3 ripe bananas
2 tablespoons milk
¼ teaspoon vanilla extract
½ cup butter, softened
1 cup white sugar
2 large eggs
1 cup chopped walnuts
1 cup dark chocolate chunks
1 cup very hot, but not boiling cream
1 cup dark chocolate chips
12 dried banana chips

  • Preheat oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with liners.
  • Whisk flour, baking powder, baking soda, and salt together in a bowl.
  • Mash bananas with milk and vanilla extract until smooth.
  • Mix butter and sugar together with a spatula until creamy. Whisk in eggs, 1 at a time, then whisk in the banana mixture. Add walnuts, chocolate, and the flour mixture. Mix batter with a spatula until no dry spots remain.
  • Fill muffin cups to the top with batter, then distribute excess batter as needed. Tap pan against the counter to expel any air bubbles.
  • Bake in the preheated oven until tops are lightly browned, about 25 minutes. Let cupcakes cool to room temperature, at least 20 minutes.
  • Pour hot cream over chocolate chips in a bowl. Let sit for a few minutes, then whisk, increasing speed gradually, until color is uniform. Spread ganache over the cooled cupcakes and garnish with banana chips. Refrigerate to firm up the frosting, if desired.

I love banana pancakes and my daughter loves chocolate chip pancakes, so we came up with this yummy recipe to make us both happy! Serve with a dollop of soft butter, a sprinkle of powdered sugar, sliced bananas, and whipped cream with a side of butter pecan or maple syrup.

2 teaspoons baking powder

3/4 cup unsalted butter, at room temperature
1 1/2 cups packed light brown sugar
1 1/2 cups granulated sugar
3 large eggs
6 medium-size ripe bananas, mashed
1 (16-ounce) container sour cream
2 teaspoons pure vanilla extract
4 1/2 cups all-purpose flour
1 tablespoon baking soda
Salt
1 cup chopped pecans, optional
1 cup mini semisweet chocolate chips
1 (13-ounce) container chocolate-hazelnut spread (recommended: Nutella)
1 (8-ounce) block cream cheese, softened
1/2 cup confectioner's sugar
1 teaspoon pure vanilla extract
2 cups heavy whipping cream

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease 3 (9-inch) round cake pans with cooking spray. In large bowl, cream together the butter, light brown sugar, and granulated sugar until light and fluffy. Mix in the eggs, mashed bananas, sour cream, and vanilla until smooth.
  • In a separate bowl sift together the flour, baking soda, and 1/2 teaspoon salt. Add the sifted ingredients to the batter.

1/2 c shortening
1 c sugar
2 eggs
1/2 c milk
2-3 ripe bananas, mashed
2 c all purpose flour (or for whole wheat, use whole wheat white flour)
1 tsp baking soda
1/2 tsp salt
2/3 c dark chocolate chips
2/3 c chopped walnuts

Steps:

  • 1. Cream shortening; gradually add sugar, beating at medium speed of electric mixer until light and fluffy.
  • 2. Add eggs, one at a time, beating well after each addition.
  • 3. Stir in mashed bananas, milk and vanilla.
  • 4. Combine flour, soda and salt; add to creamed mixture, mixing well.
  • 5. Stir in chocolate chips and walnuts.
  • 6. Spoon batter into a greased and floured 9 inch loaf pan. Bake at 350 for 55-60 minutes.
  • 7. Cool in pans for 5-10 minutes. Remove to wire wrack and cook completely.
