2 ripe Hass avocados, pitted and peeled
1/2 cup drained canned white beans
2 cloves garlic, minced
1/4 cup chopped fresh cilantro leaves
2 teaspoons fresh lime juice
Salt and ground black pepper

Steps:

  • In a medium bowl, combine avocados, white beans and garlic. Mash with a fork until chunky. Fold in cilantro and lime juice. Season, to taste, with salt and black pepper.

1/2 cup KRAFT 2% Milk Shredded Cheddar Cheese
1/2 cup TACO BELLĀ® Thick & Chunky Medium Salsa
1/4 cup OSCAR MAYER Real Bacon Bits
2 each red and yellow peppers

Steps:

  • Combine all ingredients except peppers.
  • Cut peppers lengthwise in half; discard stems and seeds. Cut each half crosswise into 2 pieces. Cut pieces lengthwise into chunks forming scoops.
  • Serve bean mixture with pepper dippers.

I adopted this from the Recipezaar account. Suggested dippers: veggies, sausage, corn chips, and/or tortilla chips. After making this (7/08) I decided to reduce the amounts of spices - the original recipe called for 1 Tbsp/each, cumin & coriander - I used 1 tsp/each. Please feel free to experiment for your own taste though! :)

15 ounces light kidney beans, rinsed, drained
1/4 cup sour cream
1 teaspoon lemon juice
1 teaspoon hot sauce (I like Cholula brand)
1 teaspoon ground cumin
1 teaspoon ground coriander

Steps:

  • Mash the beans by hand, using a fork or the back of a wooden spoon.
  • Blend in the sour cream, mixing until smooth.
  • Add all the other ingredients and blend well.
  • Cover and chill for a couple hours to allow flavors to meld.

A chunky dip of chickpeas, cannellini beans, garlic, yogurt, and tomatoes, is the perfect complement to grilled herbed pita.

One 15 1/2-ounce can chickpeas, rinsed and drained
One 15-ounce can cannellini beans, rinsed and drained
2 cloves garlic, roughly chopped
One 8-ounce container plain fat-free yogurt
1 tomato, seeded and cut into 1/4-inch dice
1 teaspoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon freshly ground pepper
Juice of 1 lemon
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh flat-leaf parsley
8 rounds 6-inch pita bread
Cooking spray

Steps:

  • Place half the chickpeas and half the cannelloni beans in the bowl of a food processor along with garlic and yogurt. Puree until smooth. Add remaining beans, and pulse until coarsely chopped.
  • Set aside 2 tablespoons tomato for garnish. Transfer mixture to a bowl; stir in remaining tomato, cumin, 1/2 teaspoon salt, 1/4 teaspoon pepper, and lemon juice. Set aside.
  • Heat a grill or grill pan over medium-high heat. In a small bowl, combine remaining teaspoon salt, 1/4 teaspoon pepper, thyme, and parsley. Spray both sides of pitas with cooking spray, and place on grill. When bottoms are browned, about 30 seconds, flip pitas, and sprinkle one of the cooked sides with herb mixture. Cook until both sides are browned. Cut pitas into wedges; serve warm with reserved bean dip. Garnish with reserved chopped tomato.

2 tablespoons water (or broth)
2 tablespoons green chilies (mild, chopped)
2 ounces cheddar cheese, shredded (or 1/2 cup shredded Mexican or Cheddar cheese)
1/8 teaspoon cajun seasoning

Steps:

  • Reserve 2 tablespoons cheese for the top.
  • Heat all other ingredients until bubbly.
  • Pour into 2 cup serving bowl and top with cheese.
  • Serve with tortilla chips or quesadilla wedges.
