7 medium McIntosh, Empire or other apples (about 3 pounds)
1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice
1/4 teaspoon almond or vanilla extract

Steps:

  • Peel, core and cut each apple into 8 wedges. Cut each wedge crosswise in half; place in a large saucepan. Add remaining ingredients., Bring to a boil. Reduce heat; simmer, covered, until desired consistency is reached, 15-20 minutes, stirring occasionally.

¼ cup butter or margarine, softened
⅔ cup brown sugar
1 egg
1 cup applesauce
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
1 ½ cups confectioners' sugar
3 tablespoons margarine, melted
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
  • In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

8 cups chopped peeled tart apples (about 3-1/2 pounds)
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons vanilla extract

Steps:

  • In a Dutch oven, combine apples, brown sugar and cinnamon. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla. Mash apples slightly if desired. Serve warm or cold.

1/3 cup raisins

I ran across this recipe a few weeks ago in one of my cooking magazines and wanted to post them. You can either use the chunky applesauce or the regular applesauce in this recipe. It tastes great with both. PS. I made these this weekend for my son who just loves these, I made these with Splenda.

2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter or 1/2 cup margarine, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups applesauce
1 cup chopped pecans or 1 cup walnuts
1 cup raisins
powdered sugar, sifted

Steps:

  • In a bowl or other container, mix flour with baking soda, cinnamon, and nutmeg.
  • In a large mixing bowl, cream butter with sugar until light and fluffy.
  • Add eggs and vanilla; beat well.
  • Stir in flour mixture.
  • Add applesauce, pecans and raisins and stir until blended.
  • Pour into a greased and floured 15x10x1-inch jelly roll pan.
  • Bake in preheated 350° oven 25 minutes, or until done.
  • Cool applesauce bars on rack then cut in 2-1/2 x 1-inch bars and sprinkle with sifted powdered sugar.

2 cups all-purpose flour
1/3 cup sugar
3/4 cup dry sugar substitute (I used Splenda)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 1/2 cups hot unsweetened applesauce
2 teaspoons baking soda
1/3 cup vegetable oil
1/4 cup walnuts, chopped (I used pecans)
1/4 cup raisins

Steps:

  • Place flour, sugar, dry sugar substitute, cinnamon, nutmeg, and cloves in a mixer bowl and mix at low speed to blend well.
  • Combine hot applesauce and baking soda. (Don't try to be modern and use cold applesauce and mix the baking soda with the flour; it doesn't work as well that way.).
  • Add the applesauce mixture, along with oil, nuts, and raisins, to flour mixture.
  • Mix at medium speed until flour is moistened and batter is creamy.
  • Spread batter evenly in a 9 x 13-inch cake pan that has been sprayed with cooking spray or greased well with margarine or butter.
  • Bake at 375 degrees for 20 or 25 minutes, or until bars pull away from the sides of the pan and a cake tester comes out clean from the center. Cool on a wire rack.
