CHRISTMAS SPAGHETTI

Original recipe that has remained the same for many years and has been declared as a Family Tradition. I am not sure about times because we used to know when it was ready by looking at the color of the salsa (sauce). It needs to be more orange than red or pink. It has to boil inside. Serve with bread and enjoy.

1 teaspoon olive oil
6 basil leaves
1 ½ pounds spaghetti
2 teaspoons butter
½ cup garlic herb butter, cut into 1-teaspoon chunks
2 (12 fluid ounce) cans evaporated milk
1 pound American cheese, shredded
1 pound red bell peppers, chopped
1 teaspoon salt
12 ounces shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Stir olive oil and basil leaves into the boiling water; cook spaghetti, stirring occasionally, until cooked through but firm to the bite, about 12 minutes. Drain.
  • Grease a large casserole dish with 2 teaspoons butter. Loosely pile about 1/3 of the spaghetti into the casserole dish; do not pack. Dot spaghetti with about 1/3 of the garlic herb butter.
  • Combine evaporated milk, American cheese, red bell peppers, and salt in a blender, working in batches if necessary; blend until smooth.
  • Sprinkle spaghetti in the dish with 1/3 the Monterey Jack cheese and pour 1/3 the blended American cheese sauce over the top. Layer 1/3 the remaining spaghetti, 1/3 the garlic herb butter, 1/3 the Monterey Cheese, and 1/3 the sauce twice more. Cover dish with aluminum foil.
  • Bake in the preheated oven until the dish is bubbling and the sauce has darkened slightly from pink to orange, about 30 minutes.

For Sauce
3 28oz cans of Tomato puree
3 cloves of garlic
1/2 onion
Salt & Pepper
2 lbs chop beef
2 lbs of Spaghetti
For Mixture
2 egg plants (peeled &? sliced into 1/2"
2-3 cans 14oz plain Artichoke Hearts
1 Cauliflower cut up
Finocchio (Italian Fennel) 2lg cups chopped with all stems and feathers removed
Lots of Parmesan Cheese
Olive Oil

Steps:

  • Note: boil each separately in same water Boiled Eggplant in a 3qt saucepan until just soft Drain and retain water Boil Cauliflower in a 3qt saucepan until just soft , Drain and retain water Boil Fennel in the same water for about 1 hour Remove Artichoke Hearts from can, separate with a fork After each ingredient has been boiled & drained fry in Olive Oil Mash the eggplant and cauliflower until chunky Puree Fennel in a blender Mix the Eggplant, Cauliflower & Artichoke (This mixture can be combined and frozen for future use, if so add the fennel in as well) Prepare Sauce Saute beef Add vegetables into sauce Drain beef and add to sauce Partially cook Spaghetti for 5 minutes or until just soft In a large bake pan add Spaghetti and alternately layer vegetables, cheese and meat over pasta until pan is full then bake @ 350* for 1 hour Cut into large squares and cover with sauce and parmesan to serve. Note: you can also add anchovies to tomato sauce if desired

1 (12 ounce) box spaghetti, cooked
1 onion, chopped
1 bell pepper, chopped
1 garlic clove, minced
1 lb ground beef
1 (12 1/2 ounce) can stewed tomatoes, mashed
1/2 cup stuffed green olive, sliced
1 1/2 teaspoons salt
1 teaspoon pepper
1/2 cup American cheese, grated
2 teaspoons Worcestershire sauce
1 (4 ounce) can mushroom pieces
1 (10 1/2 ounce) can tomato soup

Steps:

  • Sauté onions, bell pepper, and garlic in 5 tablespoons of olive oil.
  • Add beef and cook until no longer pink.
  • Add stewed tomatoes, olives, salt, pepper, and cheese.
  • Cover and simmer for 30 minutes.
  • Then add Worcestershire sauce, mushroom pieces and tomato soup.
  • Combine mixture with cooked spaghetti, refrigerate overnight.
  • To serve, heat in oven at 350°F for approximately 45-60 minutes, or until heated through.

CHRISTMAS EVE SPAGHETTI WITH ANCHOVIES



Christmas Eve Spaghetti With Anchovies image

This is a traditional meatless pasta recipe. If you like anchovies and crisp bread crumbs, try this one.

1 lb thin spaghetti (not angel hair)
2 (2 ounce) cans flat anchovies
1 cup canola oil
1 cup olive oil
1 cup plain breadcrumbs

Steps:

  • Bring water to a boil for the spaghetti. Cook till al dente.
  • Meantime, heat a heavy skillet (cast iron)and saute the bread crumbs till golden brown. Remove and set aside.
  • Heat oils till very warm. Add the anchovies to the warm oil. Turn up the heat and simmer till the anchovies disintegrate.
  • Drain the spaghetti but leave very wet.
  • Pour the oil/anchovy mixture over and toss.
  • Sprinkle with the browned bread crumbs.
  • My kids used to call this "dirty worms".
