6 cups green cabbage, cut into large pieces
3 cups baby carrots
2 medium onions, wedged
3 potatoes, sliced
12 ounces cooked ham, cut (leftovers)
4 cups low-fat chicken broth
1 cup crushed pineapple, including juice

Steps:

  • Layer cabbage, carrots, onions, potatoes and ham pieces in crock pot. (add ham bone if you have one, remove it before serving).
  • Add chicken broth and pineapple.
  • Cook for about 4 hours on high or until potatoes are done.
  • This goes great with french bread.

This was passed down from generation to generation. I don't have a recipe for this soup, but I will try to esitmate the portions. It is a sour soup but it is delicious. People either love it or not. My neice never liked it and now she loves it, can't wait till Christmas Eve. My grandmother used to use mushrooms my grandfather and dad would pick up in the woods. I believe they called them sheephead. My grandmother would then clean them and hang them to dry. We can't find the mushrooms for sale and are afraid to go and look for them in the woods. We don't know the good from the bad.

1 -2 lb onion, chopped
1 1/4 cups butter, divided (May need a little more)
2 lbs mushrooms, finely chopped (we use white mushrooms)
1 quart water
10 (7 1/2 ounce) cans sauerkraut juice
1/4 cup flour

Steps:

  • Saute chopped onions in 1 cup butter until golden brown.
  • Add finely chopped mushrooms to onions, and cook until mushrooms are done.
  • Add water and cans of sauerkraut juice, bring to boil, lower heat and simmer 1/2 hour.
  • In a small sauce pan brown remaining 1/4 cup butter, adding flour to make a roux.
  • Slowly add some soup juice (about 2 cups) to the roux, stirring to blend.
  • Add roux to soup and cook another 15 minutes to 30 minutes. Serve.

This is a very special Slovak Christmas soup made with sausage, ham and sauerkraut. I have made it for many foreigners and they were always amazed.

1 (32 ounce) package sauerkraut, chopped
2 ½ quarts chicken broth
6 black peppercorns
4 bay leaves
salt to taste
2 cups dried forest mushroom blend
¾ pound Hungarian style dry paprika sausage
¾ pound smoked ham
¾ cup chopped pitted prunes
2 tablespoons vegetable oil
1 large onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons sweet Hungarian paprika
1 cup water
1 cup sour cream

Steps:

  • Place the sauerkraut, chicken broth, peppercorns, bay leaves, salt and mushrooms into a large pot, and bring to a boil. Add the sausage and whole piece of ham. Let it simmer over medium heat for 1 1/2 hours. Add the prunes after the first hour.
  • Remove the meat from the soup, and set aside. Remove bay leaves, and discard.
  • Heat the oil in a large skillet over medium heat. Add the onion, and fry until clear. Sprinkle the flour and paprika over the onion; cook and stir for a minute. Gradually stir in the water with a fork so that no lumps form. Bring to a boil, and allow to thicken. Pour into the soup pot. Cube the sausage and ham, and stir into the soup. Bring to a boil, and cook for another 10 minutes.
  • To serve, ladle into bowls, and top with a dollop of sour cream.

This is a family tradition to be made on Christmas Eve. If you love sauerkraut, you'll love this soup. Tart and delicious. Simple to make and smells heavenly. It can be very hard to find cans of straight sauerkraut juice, which is probably why it's such a coveted recipe and we only get it once a year. (if we're lucky enough to find the juice) This soup is supposed to bring you good luck for the upcoming new year! Happy cooking! *note: this is a handed down recipe and therefore I don't always have exact measurements, what is listed below is how my aunt and I made the recipe*

1 (4 ounce) package dried oyster mushrooms
1 (4 ounce) package dried shiitake mushrooms
1 (8 ounce) package white button mushrooms
7 (14 ounce) cans sauerkraut juice (more or less depending on how tart you want the soup)
2 cups water (or to taste)
1 (12 ounce) box tiny noodles (ex. Pastina or Acini di pepe)
1/4 cup butter
1/2 cup flour

Steps:

  • Directions:.
  • Remove dried mushrooms from packages and soak in water to re-hydrate.
  • Wash button mushrooms and coarsely chop. Do the same with the re-hydrated mushrooms.
  • Pour the kraut juice and water into a large pot. Add mushrooms. Bring to a boil and simmer for a minimum of two hours. (you can go longer)
  • Cook pasta till al-dente and set aside.
  • Once the soup has simmered for at least two hours, make the roux. Melt the butter in a small skillet. Add the flour. Cook until the flour has thickened and you have a nice blond-like color. Add the roux to the soup.
  • You're done!
  • How to serve:.
  • Have pasta in one bowl and soup in another. Scoop some noodles into your bowl and add the broth on top. Oh, heaven in a bowl. Wishing you years of good luck! :).

1 pound kielbasa, sliced 1/4-inch thick on bias
Vegetable oil, as needed
8 cloves garlic, minced
1 pound red kidney beans, soaked at least 4 hours and up to overnight
2 quarts chicken broth
1 pound red bliss potatoes, cut into 1/2-inch cubes
6 ounces fresh kale, approximately 4 handfuls
1/4 cup red wine vinegar
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the kielbasa into a 7-quart Dutch oven and set over medium-low heat. Cook until the kielbasa has browned well and rendered its fat, approximately 15 minutes. If you do not have at least 2 teaspoons of fat, add enough vegetable oil to make 2 teaspoons. Remove the kielbasa from the pan and set aside.
  • Add the garlic and cook for 1 to 2 minutes, stirring constantly to prevent the garlic from burning. Add the beans and the chicken broth and cook, covered, for 45 minutes. After 45 minutes, add the potatoes, cover and cook for 15 minutes, stirring occasionally.
  • Wash, rinse and trim the kale and tear into bite size pieces. Add the kale to the pot, cover and cook for an additional 10 minutes or just until it is tender, but not mushy.
  • Add the red wine vinegar and black pepper and stir to combine. Evenly distribute the kielbasa between 8 soup bowls. Laddle the soup into bowls and serve.

1 can (28 ounces) crushed tomatoes in puree
8 ounces fresh spinach, rinsed, stemmed and chopped

Steps:

  • Heat the olive oil in a Dutch oven over medium heat. Add pancetta. Cook until crisp. Add chopped onions; cook 3-4 minutes or until soft. Add garlic; cook 1 minute longer. Add chicken broth and Italian seasoning. Bring to a boil, and simmer for 5 minutes., Meanwhile, cook tortellini according to package directions; drain. Add cooked tortellini to soup mixture. Stir in crushed tomatoes; simmer for 5 minutes longer. Add spinach; cook until spinach is wilted. Season with salt and pepper. Garnish with Parmesan cheese.

1 ham bone, with visible meat
1 medium onion, diced
4 cups water
1/2 teaspoon celery seeds or 1 stalk celery, chopped

1/2 cup butter
1/2 cup flour
2 cups half-and-half

Steps:

  • Place first 6 ingredients in a Dutch Oven, bring to a boil over medium heat, and simmer for 30 minutes or until meat easily comes off the bone with a fork. Shred ham from the bone, discard any fat, return meat to the pot. Add diced potatoes, bring to a boil, reduce heat and simmer until potatoes are tender.
  • While potatoes are cooking, in a medium saucepan, melt butter over medium heat being careful not to brown. Add flour, stirring constantly until incorporated well. Bring heat to medium/high and gradually stir in the Half n Half until creamy, thick and bubbly, stirring constantly, being careful not to scorch. Once it thickly coats the spoon, remove from heat.
  • When the potatoes are tender, stir the sauce mixture into the potato pot over medium heat, stirring constantly. Let simmer until soup reaches the desired consistency. You can add milk to adjust.
  • There has been no salt added to this point. You may add salt, pepper, garlic, herbs or seasonings to your taste.

CHRISTMAS CLEMENTINE, CARROT AND CORIANDER SOUP W/ CITRUS TWISTS



Christmas Clementine, Carrot and Coriander Soup W/ Citrus Twists image

This is not just for Christmas, but I always associate clementines with Christmas, and the addition of spices also lends a festive feel to this delightful soup. It is so easy to make and makes an elegant and colourful soup starter for any formal or special dinner. The smell is redolent of Christmas pasts for me - plus, the vibrant colours just "leap" out of the bowls! Serve it with an assortment of interesting little dinner rolls and maybe some citrus flavoured butter. I have suggested 4 to 6 clementines - they vary so much in size - we like this with a real citrus tang to it, but please adjust the quantities of the clementines to suit your personal tastes. One final tip - do try to use the crushed coriander seeds rather then the ground coriander, they add a complex and interesting flavour to the soup, as well as a wonderful fragrance!

1 large onion, peeled and finely diced
2 ounces butter
1 1/2 pints hot vegetable stock

Steps:

  • Sweat the finely diced carrots and onion in large saucepan with the butter - keep the lid on and keep stirring them until soft, for about 10 minutes.
  • Add the crushed coriander and heat through for about 2 minutes to release the fragrance, and then add the hot stock, ground cumin and ground ginger. (If you are using ground coriander add with the other spices and the stock.).
  • Bring to the boil and then cover the pan and simmer for 15 to 20 minutes.
  • Add the ground rice, clementine juice and zest - stirring well, and continue to simmer for a further 30 minutes.
  • Remove from the heat and allow to cool slightly, then liquidise in a food processor or with an immersion blender. Adjust the consistency by adding extra clementine juice or stock if the soup is too thick.
  • Return the soup to the pan and reheat for 5 minutes or until piping hot but NOT boiling; remove from the heat and season with salt and pepper to taste.
  • Serve in pre-heated soup bowls with twists of clementine zest on top of the soup, as well as an assortment of dinner rolls and flavoured butters.

1 pound walleye fillets, cut into pieces
¾ pound bean sprouts

1 sprig fresh mint leaves for garnish

Steps:

  • Stir the chicken stock, water, and lemon juice in a large pot with the onion, garlic, ginger, and parsnips. Season with thyme, red pepper flakes, salt, and pepper. Bring to a simmer over medium-high heat, and cook until the parsnips are tender and the onions are translucent, about 10 minutes.
  • Remove and discard the thyme sprigs. Stir in the honey to your desired level of sweetness. You don't want the broth too sweet. Lower the heat to a gentle simmer, and stir in the walleye and bean sprouts. Cook gently for 5 minutes, then add the basil and green onion. Continue cooking until the fish is flaky and opaque, about 5 minutes more. Season to taste with salt and pepper. Garnish with mint leaves to serve.

1 1/2 cups sugar
7 egg yolks
1/2 cup water
cinnamon

Steps:

  • Mix the sugar with the water and bring to the boil to make a thick syrup (225 to 230F/105 to 110C).
  • Remove from the heat.
  • Using a slotted spoon, dip each slice of cake into the syrup, and place them on a large serving dish.
  • Beat the egg yolks and mix them with the remaining syrup.
  • Bring to heat for one moment and stir, only to thicken, without allowing the yolks to curdle.
  • Pour this custard over the slices, sprinkle with cinnamon and serve cold.

This recipe from the New Covent Garden Food Co new book "Soup for all Seasons" is a twist on traditional turkey leftovers. It stars your leftovers in a lightly creamed soup that I modified to be a bit more hearty than the original by increasing the amt of stuffing & turkey. It also features the stuffing as meatballs for another twist. I saw it in the IcelandAir magazine on the plane as we were flying home from the US a few dys ago & was impatient to share it w/you. I hope you enjoy it as much as we do.

400 g prepared stuffing
30 g dried cranberries
25 g butter
1 leek (finely sliced)
1 stalk celery (finely chopped)
1 small onion (finely chopped)
750 ml chicken stock
1 bay leaf
fresh thyme sprig
150 ml single cream
400 g cooked turkey (diced)
salt
fresh ground black pepper

Steps:

  • Preheat oven to 190°C.
  • Roll the stuffing into 24 balls & cook in the oven for approx 20 min, till golden brown. Remove & set aside.
  • While the stuffing balls are cooking, soak the dried cranberries in boiling water for 15 min, drain & set aside.
  • Melt the butter in a pan. Add the leek, celery & onion. Cook for 5 min or till softened.
  • Add the stock, bay leaf & thyme. Cover & simmer for 20 min till the veggies are tender. Remove the herbs & discard.
  • Use your stick blender or food processor to blend the stock mixture till smooth.
  • Return the blended mixture to the pan. Add the cream, turkey & cranberries & season w/salt & pepper to your taste preferences.
  • Reheat GENTLY for 10 min, stirring occ.
  • To Serve: Place 3-4 stuffing "meatballs" in ea of 6-8 soup bowls, ladle the soup over them & serve immediately.
  • NOTE: Try not to omit the dried cranberries as they really add such a flavor dimension to this soup. I actually added more than the recipe suggested & was glad I did.

1/2 tsp black pepper, fresh cracked

Steps:

  • 1. Slice up your kielbasa.
  • 2. Cook up the kielbasa till browned about 15 minutes. Once cooked remove from crockpot or dutch oven. See is you have 2 tablespoons of fat, if not add enough vegetable oil to equal that.
  • 3. Add your garlic to the pot and cook for 2 to 3 minutes stirring often so not to burn. Add your beans and chicken broth and cook for 45 minutes on medium heat, covered. Next, add your potatoes and cook for another 15 minutes covered. Stirring occasionally. Add your torn kale (no stems) and cook for another 10 minutes just till the kale is tender not mushy. Add the red wine vinegar and pepper; stir.
  • 4. (I added the kielbasa to the soup) but Alton Brown prefers to keep it separate and divide it up into 8 bowls first and then add a ladle's worth of soup over it to assure everyone gets kielbasa.

My family's Christmas Eve food tradition is potato soup for supper. This is my very favorite. Made "Christmas Soup" by parsley and red pepper; made Confetti Soup by parsley and minced red, orange, yellow and green peppers; I'll try purple too the next time I make it.

4 cups peeled diced potatoes
1 large onion, chopped
1 teaspoon salt
3 cups boiling water
1 lb sage sausage
1 cup milk
1 cup light cream or 1 cup evaporated milk
1/2 teaspoon ground sage
1 -2 tablespoon chopped parsley
1/2 red bell pepper

Steps:

  • Simmer the potatoes, onion, salt and water for 20 to 30 minutes until the potatoes are very tender. Do not drain. Mash it all up in the pot.
  • In the meantime, cook the sage sausage in a skillet, breaking up large pieces. Drain fat.
  • Add the milk, cream, sage and the cooked sausage to the potato mixture. Combine, stirring well to incorporate the additions.
  • Heat 5-10 minutes.
  • For Christmas soup, very thinly slice red pepper. For Confetti soup, mince various colors of bell peppers.
  • Add parsley and bell pepper to soup; cook until peppers are just tender.

1 lb kielbasa, sliced 1/4-inch thick on bias
vegetable oil, as needed
8 garlic cloves, minced
1 lb dried red kidney beans, soaked at least 4 hours and up to overnight
2 quarts chicken broth
1 lb red potatoes, cut into 1/2-inch cubes
6 ounces fresh kale, approximately 4 handfuls
1/4 cup red wine vinegar
1/2 teaspoon fresh ground black pepper

Steps:

  • Place the kielbasa into a 7-quart Dutch oven and set over medium-low heat. Cook until the kielbasa has browned well and rendered its fat, approximately 15 minutes. If you do not have at least 2 teaspoons of fat, add enough vegetable oil to make 2 teaspoons. Remove the kielbasa from the pan and set aside.
  • Add the garlic and cook for 1 to 2 minutes, stirring constantly to prevent the garlic from burning. Add the beans and the chicken broth and cook, covered, for 45 minutes. After 45 minutes, add the potatoes, cover and cook for 15 minutes, stirring occasionally.
  • Wash, rinse and trim the kale and tear into bite size pieces. Add the kale to the pot, cover and cook for an additional 10 minutes or just until it is tender, but not mushy.
  • Add the red wine vinegar and black pepper and stir to combine. Evenly distribute the kielbasa between 8 soup bowls. Laddle the soup into bowls and serve.

4 pounds dried salt cod, cut into 3-inch pieces, soaked
8 to 10 all-purpose potatoes, peeled and quartered
1 cup fine quality olive oil
1 bunch celery, trimmed, well washed, and cut into 3-inch pieces
1 large onion, chopped
2 cups Gaeta olives, pitted
4 (28-ounce) cans hand crushed San Marzano plum tomatoes, with juice
12 cups chicken broth
Salt, to taste

Steps:

  • Soak the cod in cold water to cover in a cool spot or refrigerator for at least 24 hours or up to 3 days, changing the water frequently. After 24 hours, break off a tiny piece of fish and taste for saltiness. If fish is still quite salty, continue soaking until water is very clear and fish is almost sweet in taste. Place potatoes in cold water to cover. Bring to a boil over high heat and cook for about 15 minutes or until potatoes are almost cooked through. Drain. Heat oil in a large, heavy bottomed casserole over medium heat. Add the celery and saute for about 5 minutes, then add the onion and saute until vegetables begin to get soft. Add the olives and saute for an additional minute. Stir in the tomatoes and their juice. Bring to a boil. Lower heat and simmer for 10 minutes. Stir in broth and return to simmer. Stir in the potatoes and the soaked baccala and simmer for about 10 minutes or until the potatoes are cooked and the baccala flakes when poked with a fork. Taste and, if necessary, add salt. Serve hot. Note: Often, salt cod dishes will require no additional salt. Therefore, always taste before adding any seasoning.

CHRISTMAS EVE SOUR MUSHROOM SOUP



Christmas Eve Sour Mushroom Soup image

Graciously given to me by my husband's Great Aunt Dorothy, this sour soup is traditionally served as part of the Sweet and Sour Christmas Eve celebration. It's a uniquely flavored soup that's quite simple to make.

2 (8 ounce) packages white button mushrooms, sliced
1 tablespoon butter
salt and pepper
1/2 cup sauerkraut, drained and rinsed
2 tablespoons oil
1/2 cup chopped onion
2 tablespoons flour
3 tablespoons white vinegar (or more)
1 cup cooked rice

Steps:

  • In a 3-quart saucepan, saute mushrooms in butter for about 5 minutes, stirring occasionally. Season mushrooms with pepper when the mushrooms first go into the pan. Wait a few minutes before adding the salt as this will draw moisture out and prevent them from coloring.
  • Add water to pot, making sure there's about an inch of room at the top.
  • Bring to a low boil and cook for about 30 to 45 minutes.
  • Stir in rinsed sauerkraut.
  • In a separate saute pan over medium/medium low heat, add oil and onion, cooking for a minute or so. Sprinkle flour over oil/onion mix to form a roux. Cook for a few minutes until a light blond.
  • Gradually add a cup of liquid from the soup pot into the roux mixture. Allow it to fully incorporate.
  • Gradually add the roux mixture into the soup pot, whisking to avoid lumps.
  • Add white vinegar to soup. If you're not sure about how sour you'd like it, add 1 Tablespoon at a time, tasting between each addition.
  • About 30 minutes before serving the soup, stir in cooked rice.
