I have been collecting recipes for 60 years...I think it is about time I share my collection..of some of my favorites. This is one of them, picture and recipe is from from General Foods Corp. EVEN A WHITE CHRISTMAS SHOULD HAVE A RAINBOW. (cake) I probably tore this recipe out of a magazine..way back in 1980. I have made this...

1 pkg super moist white cake mix
1 pkg 3oz jell-o brand raspberry flavor gelatin
1 pkg 3oz jell-o brand lime flavor gelatin
2 c boiling water
1 container 8oz birds eye cool whip

Steps:

  • 1. Prepare cake miz as directed on package. Pour batter into 2 round cake pans. Bake time as directed. Cool 10 minutes. Remove from pans and cool completely.
  • 2. Place cake layers, top sides up..back into clean cake pans. prick each layer with a large utility fork at 1/2 inch intervals. Pour 1 cup of boiling water over raspberry gelatin in a bowl. Stir till dissolved.Spoon over i cake layer. Repeat with the lime gelatin on second cake layer. Refrigerate pans 3-4 hours.
  • 3. Dip one layer pan into warm water for 10 seconds. Invert cake onto a plate shaking the pan gently to loosen . Remove from pan and cover with a layer of COOL WHIP. Remove second cake from pan the same way. Place cake on top of the first layer. Refrigerate. Garnish with flattened gum drops to resemble holly. 1 (18 ounces) white or french vanilla cake mix
+ eggs, oil and water called for on cake mix
1 (3 ounce) box strawberry, raspberry or cherry jello
1 (3 ounce) box lime jello
2 cups boiling water
1 (16 ounce) container whipped topping or Cool Whip frosting
Holiday sprinkles

Steps:

  • Prepare and bake cake according to package directions for a 2 layer round cake. Place cooled cake layers, top-sides up, in clean 8 or 9-inch round pans; pierce with large fork at 1/2-inch intervals. In separate bowls, add 1 cup boiling water to each flavor dry gelatin mix. Stir 2 minutes or until completely dissolved. Slowly pour 3/4 of the red gelatin mixture over 1 cake round and 3/4 of the lime gelatin over second cake layer. When pouring the Jell-O over the cake layers it will look like the whole cake is saturated with color, but the gelatin mixture will only enter the holes that you made with the fork. Discard the remaining jello or save for another purpose. Frost cake layers with whipped topping or Cool Whip frosting. Add sprinkles. Refrigerate cake at least 1 hour before serving.

1 chocolate cake mix, prepared and baked according to the directions on the box.
1 cup peppermint dairy creamer
14.5 ounces sweetened condensed milk
1 jar Smuckers hot fudge sundae sauce
1/4 cup peppermint dairy creamer
1 cup crushed Oreos
8 ounces Cool Whip
Andes Peppermint Chips for topping (approximately 1 1/2 cups)
Crushed Oreos for topping (approximately 1 cup)

Steps:

  • Once the cake has cool, use the bottom of a wooden spoon to poke 20+ holes in the cake. In a small bowl, whisk together the sweetened condensed milk and 1 cup of the peppermint dairy creamer. Pour over the cake, trying to fill in the holes. In the same bowl, whisk together the hot fudge sundae sauce and 1/4 cup peppermint dairy creamer. Mix in 1 cup crushed Oreos. Pour and spread the fudge mixture over the cake as evenly as possible. Spread the cool whip over the fudge. Sprinkle on the Andes candy bits and crushed Oreos (as much or as little as you want). Refrigerate for 4 to 6 hours, until the sweetened condensed mixture has soaked into the cake and it's thoroughly chilled. Cut and serve.

My mom found this as a Jello advertisement in a magazine back when I was a little girl. She made it once around Christmas time and I loved it so much that I asked for one every year as my Birthday Cake. Everyone loves this cake and it is so pretty around the holidays!

2 baked 9" round white cake layers, cooled
2 c boiling water
1 pkg (4 oz.) red jello
1 pkg (4 oz.) green jello
1 (8 oz.) container of cool whip

Steps:

  • 1. Remove the cakes from cake pans and cool.
  • 2. Place cooled cake layers, top sides up in 2 clean 9 inch round cake pans.
  • 3. Pierce layers with a large fork at 1/2 inch intervals. (I use a chop stick or skewer)
  • 4. Stir 1 cup of boiling water into each flavor of dry jello mix in separate bowls at least 2 minutes until completely dissolved.
  • 5. Carefully pour red gelatin over 1 cake layer and green gelatin over the second cake layer. Refrigerate 3 hours.
  • 6. Dip 1 cake pan in warm water for 10 seconds; unmold onto serving plate. Frost with cool whip. Refrigerate for 1 hour or more before serving.
