CHRISTMAS JELL-O SHOTS
These layered red and green Jell-O shots are a welcome boozy treat for the holidays. We like the flavor of white rum, but you can use your own favorite (clear) liquor, such as tequila or vodka, to make these simple spiked drinks that will bring Christmas cheer to your adult friends and partygoers alike.

- For the lime layer: Heat 1 1/2 cups water in a small saucepan (or in a heatproof bowl in the microwave) until just simmering. Pour the lime gelatin powder into a medium bowl, then add the hot water. Stir until the powder has completely dissolved, about 2 minutes. Stir in the rum until combined. Transfer to a large liquid measuring cup. Divide evenly among 34 plastic shot glasses (1-ounce glasses). Refrigerate until the gelatin has set, about 45 minutes.
- For the strawberry layer: Heat 1 1/2 cups water in a small saucepan (or in a heatproof bowl in the microwave) until just simmering. Pour the strawberry gelatin powder into a medium bowl, then add the hot water. Stir until the powder has completely dissolved, about 2 minutes. Stir in the rum until combined. Transfer to a large liquid measuring cup. Carefully pour this mixture on top of the set lime layer in each shot glass, then return the glasses to the refrigerator to set completely, about 2 hours.
- For the topping: Meanwhile, with an electric mixer on medium speed, whisk the cream in a large bowl until it holds stiff peaks. Cover and refrigerate until ready to serve.
- Pipe or dollop the whipped cream on each shot, then decorate lightly with sprinkles. Serve chilled.
LAYERED CHRISTMAS GELATIN
Steps:
- Dissolve lime gelatin in boiling water; stir in pineapple juice. Stir in pineapple. Pour into an 11x7-in. dish; refrigerate until set., In a small saucepan, sprinkle unflavored gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Transfer to a small bowl. Beat in cream cheese and milk until smooth. Spread over lime layer; refrigerate until set., Dissolve strawberry gelatin in boiling water; stir in cranberry sauce. Cool for 10 minutes. Carefully spoon over cream cheese layer. Refrigerate until set. , Cut into squares. If desired, serve with whipped topping, lime wedges and fresh strawberries.

- Add 1-1/3 cups boiling water to 2 pkg. gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Pour into 8-inch-square dish sprayed with cooking spray. Refrigerate 25 to 30 min. or until gelatin is set but not firm.
- Meanwhile, add remaining boiling water to remaining gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in evaporated milk. Refrigerate 15 min. or until slightly thickened; pour over gelatin layer in dish.
- Refrigerate 4 hours or until firm. Unmold onto cutting board just before serving; cut into 4 rows, then cut each row into 7 alternating triangles. Garnish with sprinkles. Reserve gelatin trimmings for snacking.

- Cream butter and confectioners' sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk together flour, baking soda and cream of tartar; gradually beat into creamed mixture. Shape into a disk; wrap in plastic. Refrigerate until firm enough to roll, 2-3 hours., Preheat oven to 375°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with floured 2-in. cookie cutters. Place on ungreased baking sheets., Bake until edges begin to brown, 7-8 minutes. This colorful salad with its red and green layers is fun to serve for a festive dinner or brunch. It's been my family's favorite for many years- everyone loves the Jell-O and cream cheese combination. It goes with all kinds of entrees.

- In a bowl, dissolve cherry gelatin in 1 cup boiling water. Drain pears, reserving 1 cup juice (discard remaining juice or save for another use). Stir pears and reserved juice into cherry gelatin. Pour into a 10-in. fluted tube pan or 3-qt. ring mold coated with cooking spray. Refrigerate until nearly set, about 1-1/4 hours., In a bowl, dissolve the lemon gelatin in 1 cup boiling water; refrigerate until slightly thickened. Beat in the cream cheese until blended. Pour over the cherry layer. , In another bowl, dissolve lime gelatin in remaining boiling water. Drain pineapple well, reserving juice. Add enough water to juice to measure 3/4 cup. Stir pineapple and reserved juice into lime gelatin; spoon over lemon layer. Refrigerate until firm. Unmold onto a serving plate.
