DANISH CHRISTMAS RED CABBAGE

In Denmark it is traditional to serve a cooked pickled red cabbage for the Christmas Eve dinner. This is my mother's, and it is so easy to make and will be a great sidedish to any roast duck, turkey or goose. When reheating, I like to add a tablespoon of black currant jam to enhance the flavor.

1 small head red cabbage, cored and shredded
2 cups white sugar
2 cups white vinegar
2 teaspoons salt
3 cups water

Steps:

  • Place the cabbage in a large saucepan, and stir in the sugar, vinegar, salt and water. Bring to a boil, then cover and simmer over medium heat for 1 hour. This can be served immediately, or chilled and reheated later in smaller portions.

Norwegian Christmas Cabbage is essentially a kind of sweet and sour sauerkraut, spiced with caraway seeds.

8 slices bacon
1 large head cabbage, cored and shredded
¼ cup all-purpose flour
1 tablespoon caraway seed
1 pinch salt and pepper to taste
½ cup white vinegar, or to taste
½ cup white sugar, or to taste

Steps:

  • Lay two slices of bacon across the bottom of a large pot. Cover with a layer of cabbage. Sprinkle a light dusting of flour and a pinch of caraway seed. Season with a little salt and pepper. Repeat layering as many times as possible until you run out of room.
  • Fill the pot with enough water to come about 3/4 up the side. Bring to a boil, and cook for about 45 minutes, or until the cabbage is soft, stirring occasionally. Let cool slightly, then stir in the vinegar and sugar. Use your own judgment. Add sugar carefully to taste. The idea is to strike a balance between the sweet and the sour, and therein lies the trick.

1 large red cabbage (about 1kg/2lb 4oz)
25g butter
2 red onions, finely chopped
finely grated zest and juice 1 orange
1 cinnamon stick
150ml port
1 tbsp red wine vinegar

Steps:

  • Peel off the outer leaves of the cabbage, then cut into quarters and slice out the core. Use a sharp knife or the slicing attachment of a food processor to thinly slice the cabbage.
  • Heat the butter in a large saucepan, then tip in the onions and gently fry until softened, about 5 mins. Add the orange zest to the pan along with the cinnamon stick, then cook for 1 min more. Add the shredded cabbage, then pour over the port, red wine vinegar, orange juice and 150ml water. Bring up to the boil, then reduce the heat to a simmer, cover the pan and cook for 45 mins-1 hr until the cabbage is softened.

2 apples (I use Pink Lady or Gala), peeled and coarsely shredded
2 tablespoons butter
1 cup apple cider vinegar
1/2 cup red currant juice (the real thing, no high fructose corn syrup stuff)
1 cup sugar
1 teaspoon salt

Steps:

  • Mix all ingredients in a large pot over medium high heat. Bring to a boil, lower heat and simmer cabbage for 1 hour and 15 min., stirring often. Cool cabbage and transfer to clean jars, refrigerate. Cabbage can be stored, refrigerated for up to two weeks.

  • A tasty sausage, sliced, or smoked pork hock can also substitute for the bacon, but there ought to be some flavor and fat in it. I sometimes add a couple of bouillon cubes too.

6 cups green cabbage, cut into large pieces
3 cups baby carrots
2 medium onions, wedged
3 potatoes, sliced
12 ounces cooked ham, cut (leftovers)
4 cups low-fat chicken broth
1 cup crushed pineapple, including juice

Steps:

  • Layer cabbage, carrots, onions, potatoes and ham pieces in crock pot. (add ham bone if you have one, remove it before serving).
  • Add chicken broth and pineapple.
  • Cook for about 4 hours on high or until potatoes are done.

6 tablespoons butter
1 large onion, chopped
1 large head cabbage
4 eggs, beaten
1 cup warm milk
2 tablespoons butter
15 saltine crackers, crumbled
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 6 tablespoons butter in a large skillet over medium heat; cook and stir onion in the melted butter until lightly browned, 10 to 15 minutes.
  • Remove and set aside several large leaves of cabbage. Core cabbage and cut into very fine shreds. Mix cooked onion, chopped cabbage, eggs, and milk together in bowl; transfer mixture to a 9x13-inch casserole dish. Cover mixture with reserved whole cabbage leaves.
  • Bake in the preheated oven until cabbage mixture is cooked through and set, about 50 minutes.
  • Heat 2 tablespoons butter in a skillet over medium heat; cook and stir cracker crumbs in the melted butter until lightly browned, about 5 minutes.
  • Remove cabbage leaves from top of casserole dish and sprinkle cabbage-egg mixture with buttered cracker crumbs.
  • Bake in the preheated oven until topping is browned, about 10 more minutes. Season with salt and black pepper.

1 tablespoon marmalade
