7 slices white bread, crusts removed and cubed
2 cups shredded cheddar cheese
6 large eggs, lightly beaten
3 cups 2% milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked and crumbled

Steps:

  • In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

This was the casserole my mom made every year for Christmas morning.

cooking spray (such as Pam®)
2 cups diced cooked ham
2 tablespoons butter, or as needed
7 slices bread, crusts removed
½ pound American cheese, cubed
3 cups milk
6 eggs, beaten
¾ teaspoon dry mustard
¾ teaspoon salt

Steps:

  • Spray a 9x13-inch casserole dish with cooking spray.
  • Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.
  • Whisk milk, eggs, mustard powder, and salt together in a bowl; pour over American cheese layer. Cover dish with aluminum foil and refrigerate 8 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from casserole.
  • Bake in the preheated oven until cheese is melted and eggs are set in the middle, about 1 hour.

1 pound bacon
2 onions, chopped
2 cups fresh sliced mushrooms
1 tablespoon butter
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
¼ teaspoon garlic salt
½ teaspoon ground black pepper
4 eggs
1 ½ cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Steps:

  • Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain and set aside. Add the mushrooms and onion to the skillet; cook and stir until the onion has softened and turned translucent and the mushrooms are tender, about 5 minutes.
  • Grease a 9x13-inch casserole dish with the tablespoon of butter. Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with crumbled bacon, then add the onions and mushrooms.
  • In a mixing bowl, beat the eggs with the milk and parsley. Pour the beaten eggs over the casserole and top with grated cheese. Cover and refrigerate overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven for 1 hour or until set.

My family demands this casserole every Christmas morning. I've only once dared to try something new, and this was sorely missed! Make this for a brunch and I guarantee you will get recipe requests. This family-favorite is not very healthy, so it only comes out for special occasions.

½ cup butter
1 (16 ounce) package cottage cheese
1 pound shredded Monterey Jack cheese
2 (4 ounce) cans diced green chiles
10 eggs
¼ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Set butter in a 6x10-inch casserole dish; place dish in the preheating oven until butter is melted.

2 pounds bulk pork sausage
1 large onion, chopped
2 cups cooked rice
3 cups crisp rice cereal
3 cups shredded cheddar cheese
6 large eggs
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
1/2 cup whole milk

Steps:

  • In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Place in a lightly greased 13x9-in. baking dish. Layer with the rice, cereal and cheddar cheese.
