Steps:

  • Pound the steaks with a meat tenderizing mallet until they are very thin. Set aside.
  • In a shallow bowl, whisk the buttermilk and eggs. In a shallow dish, mix the flour, thyme, cayenne, and salt. Spread the crushed crackers on a large plate.
  • Heat enough shortening in a large cast iron skillet over medium-high heat to make a depth of 1/4-inch. Dredge the steaks in the flour mixture, shake off the excess, then dip in the buttermilk-egg mixture. Coat with crackers and then place in the skillet.

Time 45m

Yield 4 servings

Number Of Ingredients 8

4 large pork sausage links (1 pound)
2 slices bacon
1 (12-ounce) beer
3 medium-size red potatoes, cut into 1/4-inch dice
1 medium onion, diced
Salt and freshly ground black pepper
2 tablespoons barbecue sauce
2 tablespoons chopped parsley leaves

Steps:

  • Put the sausage and bacon in a large cast iron skillet over medium heat. Cook, turning to brown evenly, until bacon is crisp, about 5 minutes. Remove bacon from pan and set it aside.
  • Add a 1/4 cup of the beer to the skillet and continue cooking the sausage until cooked through, about 10 minutes more. Remove the sausage from the pan and set aside.
  • Add the potatoes and onion to the skillet, along with another 1/4 cup beer. Cook, stirring and adding more beer as needed, until potatoes are tender, about 20 minutes. Season with salt and pepper, to taste.
  • Cut the sausages into 1/4-inch-thick rounds and stir into the potato mixture along with the barbecue sauce. Transfer to a serving dish and crumble the bacon over the top. Sprinkle with parsley and serve.
