SHRIMP STIR-FRY

This shrimp stir-fry recipe is simple and fast. It cooks in about 5 minutes, so be sure to prep all your ingredients and cook the rice in advance.

1 pound large shrimp, peeled and deveined
Kosher salt
2/3 cup chicken stock or low-sodium chicken broth
2 tablespoons Shaoxing wine or dry sherry
1 tablespoon soy sauce
1 tablespoon cornstarch
2 teaspoons sugar
Freshly ground black pepper
1/4 teaspoon crushed red pepper flakes, optional
3 tablespoons vegetable oil
3 cloves garlic, minced (about 2 tablespoons)
1 teaspoon finely grated fresh ginger
1 scallion, chopped, white and green parts separated
6 ounces snow peas, strings removed if necessary
2 ounces red bell pepper, thinly sliced (about 1/2 cup)
4 cups cooked rice, for serving

Steps:

  • Put the shrimp in a medium bowl with 2 cups cold water and 2 tablespoons kosher salt. Stir to combine and let sit for 5 minutes. Drain and rinse the shrimp under cold running water and place them on a paper towel-lined plate. Pat the shrimp with more paper towels to thoroughly dry.
  • Combine the chicken stock, Shaoxing wine, soy sauce, cornstarch, sugar, 1 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper and crushed red pepper in a medium bowl. Stir until the cornstarch is fully incorporated and the mixture is smooth.
  • Heat a wok or large nonstick skillet over high heat for 2 minutes. Add the oil to the pan and swirl to coat. Carefully add the shrimp in a single layer. Allow to cook for 2 minutes, using a wooden spoon or spatula to stir-fry them. Add the garlic, ginger and scallion whites and stir-fry for 1 minute. Add the snow peas and bell pepper and stir-fry for 1 minute. Add the cornstarch mixture and scallion greens and stir-fry until the sauce has thickened, about 15 seconds. Immediately transfer the stir-fry to a dish. Serve with rice.

JANETTE'S JERK MONKFISH STIR-FRY



Janette's Jerk Monkfish Stir-Fry image

1/4 cup lime juice
3 tablespoons dry jerk seasoning mix
3 tablespoons rice vinegar
3 tablespoons low-sodium soy sauce
1 tablespoon grated lime zest
1 jalapeno, seeded, and finely chopped
1 1/2 pounds monkfish fillet, cut into 1 1/2-inch pieces
5 teaspoons peanut oil
2 cups diced fresh pineapple (1/2 to 3/4-inch pieces)
1 cup snow peas
2 cups red bell pepper strips (1 1/2 by 1/2-inch pieces)
2 cups diced fresh mango (1/2 to 3/4-inch pieces)
1 cup carrot strips (1 1/2 by 1/4-inch pieces)
Salt and freshly ground black pepper
Serving suggestion: cooked wild rice

Steps:

  • In a large bowl, combine the lime juice, jerk seasoning, vinegar, soy sauce, lime zest, and jalapeno. Add monkfish and turn to coat. Cover and let marinate in the refrigerator for 10 to 20 minutes.
  • Meanwhile, heat 2 teaspoons of the oil in a large nonstick skillet over medium-high heat. Add the pineapple and cook, shaking the pan, until slightly softened, about 2 minutes. Transfer to a bowl and set aside. Repeat with the snow peas, followed by the red peppers, mango and carrot (cook for 3 to 4 minutes), placing the ingredients in the bowl as they're done and adding another teaspoon of oil, if needed.
  • Remove the monkfish from the marinade and pat dry. Wipe out the skillet with paper towels, taking care as the pan is very hot. Heat the remaining oil over medium-high heat. Add the fish and cook, shaking the pan from time to time, until nicely browned and just cooked through, about 3 to 4 minutes.
  • Return the vegetable-fruit mixture to the pan with the fish and cook, stirring gently just to combine, until heated through. Season with salt and pepper, to taste, and serve immediately over wild rice.

1 large egg white
1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon plus 1 teaspoon soy sauce
1 1/4 pounds medium shrimp, peeled and deveined
2 teaspoons hoisin sauce
1 1/2 teaspoons sherry vinegar or rice wine vinegar
1/2 cup low-sodium chicken broth or water
2 tablespoons vegetable oil
4 scallions, cut into 1/2-inch pieces, white and green parts separated
1 tablespoon finely grated peeled ginger
1 clove garlic, finely grated
1 pound Napa cabbage (1/2 head), cut into 1-inch pieces
Cooked white rice, for serving (optional)

Steps:

  • Whisk the egg white, 1 tablespoon cornstarch and 1 teaspoon soy sauce in a large bowl until frothy. Add the shrimp and toss to coat. Refrigerate 10 minutes. Meanwhile, whisk the hoisin sauce, vinegar and the remaining 1 tablespoon soy sauce and 2 teaspoons cornstarch in a small bowl, then whisk in the chicken broth. Set aside.
  • Drain the shrimp. Heat the vegetable oil in a wok or large skillet over medium-high heat, then stir-fry the scallion whites, ginger and garlic, about 30 seconds. Add the shrimp and stir-fry until almost cooked through, about 3 minutes. Add the cabbage and stir-fry until wilted and the shrimp are just cooked through, about 2 more minutes.
  • Stir the hoisin sauce mixture, then add to the wok and simmer, stirring occasionally, 2 minutes. Stir in the scallion greens. Serve with rice, if desired.

1 large egg white
3 tablespoons Shaoxing rice wine, mirin or dry sherry
3 tablespoons soy sauce
2 tablespoons cornstarch, plus more for coating (about 3/4 cup)
1 pound large shrimp, peeled and deveined (tails intact)
1/3 cup Thai-style sweet chili sauce
3 tablespoons vegetable or peanut oil, plus more for deep-frying
2 bunches broccolini, trimmed
1 bunch scallions, cut into 1 1/2-inch pieces
2 cloves garlic, minced
1/2 to 1 teaspoon red pepper flakes
4 cups cooked white rice, for serving

Steps:

  • Whisk the egg white with 1 tablespoon each rice wine, soy sauce and cornstarch in a large bowl. Add the shrimp and toss; refrigerate until ready to fry. Whisk the chili sauce, the remaining 2 tablespoons each rice wine and soy sauce, 1 tablespoon cornstarch and 1 cup water in a bowl; set aside.
  • Heat 2 tablespoons oil in a wok or large Dutch oven over medium-high heat. Add the broccolini; stir-fry until charred in spots, 3 minutes. Add 1/2 cup water and stir-fry until crisp-tender, 1 to 2 minutes; transfer to a plate. Reduce the heat to medium; add the remaining 1 tablespoon oil, the scallions, garlic and red pepper flakes. Stir-fry until tender, 2 minutes. Add the chili sauce mixture and cook, stirring occasionally, until thickened, 1 minute. Cover and set aside.
  • Heat 1 inch of oil in a deep saucepan over medium-high heat until a deep-fry thermometer registers 365 degrees F. Working in batches, toss the shrimp in cornstarch to coat, then fry until crisp and golden, about 3 minutes. Remove with a slotted spoon and drain on paper towels.
  • Return the wok to medium heat and reheat the sauce if needed. Add the broccolini and shrimp and cook, tossing, until warmed through, 2 minutes. (Add up to 1/2 cup water if the sauce is too thick.) Serve with the rice.

1 tablespoon butter
1 tablespoon olive oil
2 pounds jumbo shrimp, peeled and deveined, tails on
4 cloves garlic, minced
2 large zucchini, diced
2 large ears of corn, kernels removed
3/4 cup red grape tomatoes, sliced in half lengthwise
3/4 cup yellow grape tomatoes, sliced in half lengthwise
Salt and freshly ground black pepper
12 to 18 fresh basil leaves, cut in chiffonade
Parmesan shavings
Juice of 1 lemon
Rice or pasta, for serving, optional

Steps:

  • Melt the butter with the olive oil in a large skillet over a medium-high heat. Add the shrimp and garlic, then saute until the shrimp are opaque, about 3 minutes. Remove the shrimp to a plate.
  • Increase the heat to high, then throw in the zucchini. Stir it around for about 45 seconds, then scoot the zucchini to the edges of the pan. Throw in the corn and cook it for a minute, then push it to the edges of the pan. Throw in the grape tomatoes, stir them around for a minute, then sprinkle on some salt and pepper to taste.
  • Then throw the shrimp back in. Stir everything around for about 45 seconds, or until it's all combined and hot. Then pour it onto a big platter.
  • Sprinkle on the fresh basil and some Parmesan shavings then ... this is the best part ... squeeze the lemon all over the top. This adds a wonderful, indescribable freshness.
  • You can serve this with rice, with pasta or it's just perfect on its own.

CAJUN SHRIMP STIR FRY

I got this out of a magazine called "Clean Eating" This is low in fat and sugar. Both DH and I found it to be outstanding. It may say fry but there is nothing fatty about it. It would also be great on the Weight Watchers program.

1 lb large shrimp, peeled and deveined
1 tablespoon cajun seasoning
2 teaspoons canola oil
2 green peppers, seeded, inner ribs removed and cut into strips
2 red peppers, seeded, inner ribs removed, and cut into strips
2 garlic cloves, minced
1/2 cup white wine (have a glass while cooking if you need to unwhine)
1 tablespoon lemon juice
hot sauce
2 cups cooked brown rice

Steps:

  • Toss shrimp with Cajun spice seasoning and set aside.
  • Heat 1 tsp oil in large skillet and saute' peppers for 6 minutes over medium-high heat.
  • Turn heat down and add minced garlic, stirring constantly so that garlic doesn't burn.
  • Remove peppers and garlic from pan, wipe pan out with paper towel.
  • Return pan to medium-high heat, and heat remaining tsp of oil.
  • Add shrimp and cook approximately 3 minutes, stirring frequently.
  • Add wine (don't forget about yours) and lemon juice, peppers and garlic, and cook for 2 to 3 minutes.
  • Season with hot sauce; serve each portion over 1/2 cup cooked brown rice.

CARIBBEAN JERK STIR-FRY

This combination of Asian stir-fry and fiery Caribbean seasoning makes sweet and spicy dish. Serve over hot cooked white rice.

1 tablespoon vegetable oil
1 green bell pepper, seeded and cubed
1 red bell pepper, seeded and cubed
¼ cup sliced sweet onions
¾ pound skinless, boneless chicken breast, cut into strips
2 ½ teaspoons Caribbean jerk seasoning
½ cup plum sauce
1 tablespoon soy sauce
¼ cup chopped roasted peanuts

Steps:

  • Heat the oil in a large skillet over medium-high heat. Cook and stir the bell pepper and onion in the oil until slightly tender, 5 to 7 minutes. Remove pepper and onion from the skillet and set aside. Add the chicken to the skillet; season with jerk seasoning; cook and stir chicken until no longer pink inside. Pour the plum sauce in with the chicken; add the bell peppers and onions; toss to combine. Cook until the peppers and onions are heated completely, 3 to 5 minutes. Sprinkle with soy sauce and chopped peanuts to serve.
