1 bunch scallions
2 tablespoons extra-virgin olive oil
2 medium onions, chopped (1 1/2 cups)
4 garlic cloves, finely chopped
1 1/4 teaspoons salt
1/2 teaspoon black pepper
6 oz Spanish chorizo (cured spiced pork sausage), cut into 1/4-inch dice
1 1/2 lb yellow-fleshed potatoes such as Yukon Gold (about 4 medium), peeled and cut into 1/4-inch dice
9 large eggs
3/4 cup sour cream
5 oz Manchego or white Cheddar, coarsely grated (2 cups)

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Lightly oil a 13- by 9-inch baking pan or dish.
  • Finely chop white and green parts of scallions and reserve separately.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook onions, garlic, white parts of scallions, 3/4 teaspoon salt, and 1/4 teaspoon pepper, stirring occasionally, until onions are golden, about 6 minutes. Add chorizo and cook, stirring occasionally, until just beginning to brown and release oil, about 4 minutes. Reduce heat to moderate, then stir in potatoes and cover skillet. Cook, stirring occasionally, until potatoes are tender, about 10 minutes. Transfer mixture to a large bowl and cool slightly.
  • Whisk together eggs, sour cream, cheese, scallion greens, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl, then pour into baking pan. Sprinkle potato mixture over eggs (some potatoes will stick out). Bake until custard is set, about 20 minutes. Cool in pan on a rack to warm or room temperature. Trim 1/2 inch off each side, then cut tortilla into 1 1/2- by 1-inch rectangles.

1 (10 ounce) package tube chorizo (such as Cacique®)
1 (14.5 ounce) can Hunt's® Diced Tomatoes, drained
1 pound fresh pizza dough
1 cup shredded Monterey Jack cheese, divided (or more to taste)
1 cup crumbled Cotija cheese, divided (or more to taste)
¼ cup chopped fresh cilantro

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet.
  • Heat a skillet over medium heat. Add chorizo and cook, gently breaking it up after a couple minutes. Allow it to bubble, stirring infrequently, until most of the bubbles have stopped and sausage is firm. Remove from heat.
  • Place tomatoes into a bowl. Break into smaller pieces with the back of a fork, if desired.
  • Divide dough into 16 small pieces, flattening each into a small circle. Place each circle on prepared baking sheet. Divide tomatoes and then the chorizo among the circles. Top with shredded Monterey Jack and crumbled cotija cheese.
  • Bake in preheated oven until dough is golden brown and cheese has melted, 8 to 15 minutes. Check after 8 minutes to ensure chorizo is not burning.
  • Top with minced cilantro leaves.

1/2 pound medium shrimp (about 30 shrimp), peeled and deveined if necessary
1 (7.9 ounce) package of Spanish chorizo, sliced into 1/4-inch rounds
1 clove garlic, finely minced
1/2 teaspoon dried oregano
1 Tablespoon red wine vinegar
1 Tablespoon dry Sherry
1/4 cup extra virgin olive oil, plus more for the pan
2 Tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a medium bowl, combine the shrimp, garlic, oregano, vinegar, Sherry, and 1/4 cup of the olive oil; toss to coat. Marinate in the refrigerator for 30 minutes. Skewer one shrimp and one round of chorizo onto wooden toothpicks or skewers. Repeat with the remaining shrimp and chorizo. Working in batches, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. 3 parsnips (1 1/2 pounds), peeled and chopped into 1/2-inch rounds and halved if large (4 cups)
2 tablespoons extra-virgin olive oil
Coarse salt

1/8 teaspoon ground cinnamon
1/8 teaspoon kosher salt
6 tablespoons plum jam or scuppernong jelly
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350°F. Lightly grease a baking sheet. Stir together sausage, baking mix, cheese, mashed sweet potato, cinnamon, and salt in a large bowl. Roll into 48 (1 1/2-inch) balls, and place about 1 inch apart on prepared baking sheet. Bake in preheated oven until sausage balls are cooked through and deep golden brown, about 20 minutes. Stir together jelly and mustard in a small bowl until well blended. (If your jelly is too stiff to blend, microwave mixture at HIGH in 15-second increments until soft enough to stir.) Steps:

  • 1. Place the mayonnaise, peppers, paprika, and lime zest into a blender and blend until smooth. Season with salt and pepper.

320 g puff pastry
100 g chorizo sausage
plain flour, for dusting
1 egg yolk

Steps:

  • Preheat the oven to 180 degrees centigrade.
  • Grease an oven proof baking tray.
  • Cut the chorizo in to thin rectangular sticks ½ inch wide and 3 inches long.
  • On a clean surface scatter some plain flour and roll out the puff pastry until it is an inch thick.
  • Then cut the pastry in to long thin strips about a half an inch wide and 9 inches long.
  • The next bit is a bit fiddly using one pastry strip wrap it around the chorizo a bit like a twister until the chorizo is fully covered with the pastry, if the pastry is bit short it doesn't matter too much.
  • Refrigerate the chorizo and puff pastry bites for roughly 10-20 minutes.
  • Once they have been refrigerated place the bites on to the baking tray making sure they are not over crowded.
  • Then use a pastry brush and paste the bites with egg wash.

1/2 cup grated romano or parmesan cheese
1/2 cup walnuts, coarsely chopped
1 clove garlic
2 big handfuls of packed arugula leaves
A drizzle olive oil
salt and pepper

1 X 8 inch piece Chorizo Sausage, hot
Dash oil
Dash Sherry vinegar

  • Arugula Pesto Grate your cheese. Pop all ingredients in a food processor or blender and while it's running drizzle in about ½ cup good olive oil. This will be used to garnish your Chorizo pieces. Season to taste with S&P. If too thick you can thin out with a bit of water. Chorizo Cut sausage in large 1 ½ inch (3.8 cm) chunks. 2 big packed handfuls arugula leaves
1 clove garlic
1/2 cup grated Romano or Parmesan cheese
1/2 cup walnuts, coarsely chopped
1/2 cup olive oil
Salt and freshly ground black pepper
Water, as needed
1 (8-inch) link chorizo sausage, cut into 1 1/2-inch chunks
Dash oil, for sauteing
Dash sherry vinegar

Steps:

  • To make the pesto: Add the arugula, garlic, cheese, and walnuts to the bowl of a food processor or blender, and puree. As the processer is running, drizzle in the olive oil. This will be used to garnish the Chorizo. Season the mixture with salt, and pepper, to taste. If the pesto is too thick, you can thin it out with water.
  • To make the sausage: Cut the sausage link into large 1 1/2-inch chunks. Heat the oil in a saute pan, and saute the sausage until the edges start to brown, about 3 to 4 minutes. Toss the pieces while they fry so they cook all over.
  • Add a dash of sherry vinegar to the pan to deglaze and release all the flavors. Transfer the sausage to a platter and serve with dollops of the arugula pesto. Add little cocktail sticks or toothpicks to each piece for easy eating.

16 jumbo shrimp or prawns, deveined and butterflied with tail left intact
Olive oil, for liberal drizzling
Salt and pepper
1 tablespoon thyme, finely chopped
Zest of 1 lemon
16 1-inch thick slices cut on a bias Spanish chorizo, preferred brand Gaspar's
1 tablespoon butter
1 large clove garlic, crushed
1/2 cup dry sherry or white wine
Juice of 1 lemon
Scallions, thinly sliced on a bias
Long toothpicks

Steps:

  • Toss shrimp with a little olive oil and dress with salt, pepper, thyme and lemon zest. Skewer the shrimp near the tail end then thread a slice of chorizo with cut sides facing out, nesting the chorizo in the natural curve of the shrimp. Heat a little oil in a large skillet over medium-high heat and melt butter into it. Add garlic and swirl for a minute or 2 then remove. Add the shrimp and chorizo bites and cook until the chorizo is crisp and the shrimp are pink and opaque. 1 pound (about 3 cups) frozen Tater Tots
10 ounces fully cooked (not dried) chorizo sausage, diced
12 large eggs
1/2 cup half-and-half
Kosher salt and freshly ground pepper
1 1/2 cups shredded monterey jack cheese (about 6 ounces)
4 scallions, sliced
1 tablespoon unsalted butter

Steps:

  • Bake the Tater Tots as the label directs and set aside. Reduce the oven temperature to 375 degrees F.
  • Meanwhile, cook the chorizo in a medium ovenproof nonstick skillet over medium-high heat until lightly browned, about 5 minutes. Transfer to a paper towel-lined plate and wipe out the skillet.
  • Whisk the eggs with the half-and-half, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Stir in the Tater Tots, cheese and scallions.
  • Melt the butter in the skillet and add the egg mixture, spreading it out with a rubber spatula. Scatter the chorizo over the top; transfer the skillet to the oven and bake until the eggs are set, about 30 minutes. Let stand 10 minutes, then slide onto a cutting board and cut into bite-size pieces.
