A local fast-food restaurant by me sells a pretty good chopped salad but, I got tired of paying $7 for a salad. So, I did what I could to make the recipe my own. My sister actually likes mine better and said I should post it. So here is the recipe for my soon-to-be famous chopped salad.

1 head iceberg lettuce, cleaned and chopped
1/2 cup ditalini
4 slices bacon
1 tomatoes, seeded and chopped
1/2 medium red onion, chopped
4 ounces crumbled blue cheese
1 avocado, peeled and chopped
1 -2 teaspoon season salt
1 small chicken breast (optional)

Steps:

  • Cook pasta per package instructions.
  • After draining pasta in colander, rinse the pasta in cold water to cool off. Once drained and cooled, sprinkle with Season Salt, to taste. (I use Tastefully Simple but I am sure other brands would work as well).
  • Fry bacon on stovetop. Once crisp, pat to remove excess oil and crumble.
  • If using chicken, boil chicken to cook. Once cooked through, chop into small pieces. Please note: I do not often use chicken but, when I do I use a small breast or 1/2 of a breast.
  • Combine all ingredients in a large bowl and toss.
  • Although I do not use salad dressing, my family uses a light vinigrette (their current favorite is sun-dried tomato) as a dressing with the salad.
  • Also, ingredients can be removed or their amounts adjusted to meet the tastes of people eating the salad although the basic ingredients remain the same.

Steps:

  • Blend 1/3 cup feta, 2 tablespoons olive oil, 1 tablespoon each lemon juice, water and dill, 1 small grated garlic clove, and salt and pepper to taste in a mini food processor. Toss with 1 chopped romaine heart, 1 small chopped cucumber, 5 chopped radishes, 1 drained can chickpeas, 2 chopped celery stalks, and 1/3 cup each thawed frozen peas and toasted sliced almonds. Season with salt and pepper.

You can gather all the ingredients in advance, including cooking the bacon and the eggs. But don't toss everything together until just before serving - and, preferably, do so at the table for maximum impact.

1 lemon
1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper
3 romaine hearts (about 1 pound), trimmed and torn into bite-size pieces
1 cup cherry tomatoes, halved
3/4 cup (about 6 ounces) chopped cooked bacon
3/4 cup thinly sliced cucumber
1/2 cup crumbled blue cheese or feta
1/4 cup thinly sliced scallions
1 ripe avocado, pitted, peeled and sliced
2 hard-cooked (or jammy) eggs, quartered

Steps:

  • Make the dressing: Zest the lemon into a small bowl, then halve the naked lemon and squeeze the juice into the bowl. Whisk in oil and season to taste with salt and pepper; set aside.
  • Put the romaine into a large bowl, then top with tomatoes, bacon, cucumber, blue cheese and scallions. Drizzle in about two thirds of the dressing, then toss until well coated.
  • Place sliced avocado and eggs on top of salad, and season lightly with salt and pepper (especially the avocado, which can take a lot of salt). Drizzle salad with remaining dressing, and serve.

1/2 cup finely chopped red onions
1/4 cup water
1/2 cup red wine vinegar
2 teaspoons kosher salt, plus additional as needed
2 teaspoons coarsely ground fresh black pepper, plus additional as needed
1/2 to 1 cup extra virgin olive oil
1 large head iceburg lettuce, cut into 1/2-inch pieces, 6 to 8 cups
1 cup Roasted Marinated Peppers , cut into 1/2-inch pieces
1/2 cup pitted green olives, such as Cerignola, halved
1/2 cup pitted black olives, such as Cerignola, halved
1 cup haricots verts, cut into 1-inch pieces
1 cup English cucumber, peeled and cut into 1/2-inch pieces
2 tablespoons fresh marjoram leaves
1/4 cup flat-leaf parsley leaves
1/4 cup coarsely chopped dill, large stems removed

Steps:

  • 1. In a small bowl, combine the onions, water, vinegar, salt, and pepper. Let sit at room temperature for 5 minutes to allow the flavors to develop.
  • Add 1/2 cup of the oil to the vinegar mixture. Add additional to taste.
  • 2. In a large bowl, combine the lettuce, roasted peppers, olives, haricots verts, cucumber, and herbs. Toss with enough dressing to coat, and season to taste with additional salt and pepper. Serve any remaining dressing on the side.

BBLT CHOPPED SALAD

6 ounces (about 9 cups) fresh baby spinach, coarsely chopped
1 bunch broccoli, cut into small florets
2 cups grape tomatoes, halved
1 package (2.52 ounces) ready-to-serve thick-cut fully cooked bacon, cut into 1-inch pieces
1 cup Miracle Whip
2 tablespoons white vinegar
2 tablespoons sugar

Steps:

  • In a large bowl, combine the first four ingredients. In a small bowl, mix Miracle Whip, vinegar and sugar until blended. Just before serving, spoon dressing over salad; toss gently to coat.
