SUPER MOIST ZUCCHINI CHOCOLATE CHIP CAKE / BREAD!
I am in love with this! I can not wait till zucchini season ever year! I have gotten everyone I know addicted to this recipe and only shared it with family until now! You will not be disappointed! We even have a little slice for breakfast. The flavors and moist dense cake-y texture just melt in your mouth!

Steps:
- 1. Preheat oven to 350 degrees Mix egg sugar, oil and vanilla
- 2. in separate bowl stir with fork all dry ingredients (flour, salt, baking soda, cinnamon and baking powder)
- 3. Add dry to wet ingredients
- 4. stir in zucchini then stir in chocolate chips (and walnuts if desired)
- 5. Spray metal 9X13inch pan with butter flavored PAM Bake 45 mins Tooth pick test when done will come out clean unless you hit chocolate :)

Steps:
- Preheat oven to 350 degrees.
- Lightly grease 2 9X5 loaf pans.
- In a bowl combine eggs sugar, oil, zucchini, vanilla, and chocolate; beat well.
- Sift together flour, baking soda, salt cinnamon and nutmeg; stir into liquid mixture to combine.
- Blend in chips, raisins, nut and or coconut.
- Pour into pans.
- Bake for 50-60 minutes.

- 1. PREHEAT your oven to 350 degrees. Grease 2 - 5" x 9" loaf pans. GRATE zucchini, and I after I measured, I cut the 3 cups of grated zucchini again with my kitchen scissors to make smaller pieces.
- 2. IN A MEDIUM BOWL... mix the eggs, oil, vanilla, sugar and zucchini (grated) with a large spoon until well mixed.
- 3. IN A LARGE BOWL...combine the flour, cocoa, baking soda, cinnamon, salt, and baking powder. I used a wire whip to mix the dry ingredients.
- 4. ADD the chocolate chips and nuts to the dry ingredients and stir again.
- 5. ADD the zucchini mixture to the dry ingredients and mix with a large spoon until mixed thoroughly.
- 6. POUR into 2 greased 5" x 9" loaf pans.
- 7. BAKE for 45 minutes, until bread tests done.
- 8. Opt: Omit chocolate chips and cocoa powder and add: 1 tablespoon lemon rind
ZUCCHINI FUDGE BUNDT CAKE WITH CHOCOLATE GLAZE {OR} CHOCOLATE ZUCCHINI BREAD
Zucchini Fudge Bundt Cake with Chocolate Glaze is so moist and decadent, nobody will ever guess that it's concealing a pound of zucchini and 100% whole wheat flour! If you prefer, you can bake it in two loaf pans and leave off the glaze to call it Chocolate Zucchini Bread instead.

- Adjust rack to center position of oven and preheat to 350°F. Generously coat a 9- to 10-inch (12 cup) Bundt pan with baking spray (the kind that includes flour).
- Using a box grater or food processor, grate the zucchini (you should end up with approximately 3 cups). Stir in 2 tablespoons sugar and place in a large colander set over a bowl. As you prepare the rest of the batter ingredients, the sugar will draw the moisture out of the zucchini. Occasionally press down on it to squeeze more water into the bowl.
- Finely chop unsweetened chocolate, place in a bowl, and heat in the microwave for 30 seconds; stir. Heat in additional 15-second increments, stirring after each one, until chocolate is completely melted and smooth. Allow to cool.
- In a medium bowl, whisk together whole wheat pastry flour, cocoa powder, baking soda, and salt. In a large bowl, use an electric mixer to blend together eggs, sugar, melted chocolate, melted butter, applesauce, and vanilla until smooth. Mix in drained zucchini. Turn mixer down to low and stir in half of the flour mixture, followed by all of the sour cream and then the remaining flour mixture. In a small bowl, toss mini chocolate chips with tablespoon of flour. Add to batter and mix until just incorporated, taking care not to overbeat.
- Evenly pour/spread batter into prepared pan, place in preheated oven, and bake for 1 hour, or until a toothpick inserted in center comes out clean. Remove cake from the oven and allow it to rest on a cooling rack for 10 minutes before turning it out onto the rack to finish cooling.
- In a small pot, melt butter over low heat. Remove pot from heat and add chocolate chips, stirring until they are melted and combined with butter. Stir in corn syrup and vanilla until smooth. Immediately pour glaze over warm cake, gently spreading it so that it trickles down sides. Allow cake and glaze to cool completely before slicing.
CHOCOLATE ZUCCHINI BREAD/CAKE
This recipe was given to me by my sister Bonnie back in the 1970's. I've tweaked it some to make it my own and you can substitute Splenda Blend in place of sugar and sugar free chocolate chips.

- 1. Beat eggs til lemon color, add sugar & oil, beat well then add cocoa mixture and applesauce.
- 2. Add vanilla, mix well, add zucchini mix with mixer, add flour, salt, cinnamon, baking powder, baking soda, and mix with mixer. Add chopped nuts, mix well.
- 3. Grease 2 loaf pans or bundt pan with margarine and flour or vegetable spray, pour in batter and bake at 350 for about 50 to 60 minutes. Check with toothpick when comes out clean done. Do not overbake. Cool on wire rack about 10 minutes then invert and let cool.
- 4. Topping: 1 cup confectioner's sugar, add little bit of milk, touch of salt, 1 teas vanilla, use wire whisk and drizzle over cooled cake.
