Simple and simply delicious! Cake mix and ready-to-spread frosting mixed with melted chips-what could be easier?

1 box Betty Crocker™ Super Moist™ devil's food cake mix
Water, vegetable oil and eggs called for on cake mix box
1 cup white vanilla baking chips
1 container Betty Crocker™ Rich & Creamy vanilla frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for 24 cupcakes.
  • In medium microwavable bowl, microwave baking chips uncovered on High 45 seconds. Stir; if necessary, microwave in 15-second increments, stirring until melted and smooth. Cool 5 minutes. Stir in frosting until well blended. Immediately frost or pipe frosting on cupcakes.
  • If desired, tie ribbons around cupcakes for decoration. Store loosely covered.

Rich Chocolate Cake with Ganache Frosting and Truffle-Egg Nest image

Tucked inside nests of milk-chocolate shavings are truffle eggs tinted robin's egg blue and dusted with metallic luster. The accompanying marbled eggs are created by dipping more truffles into melted white chocolate swirled with blue food coloring.

Vegetable-oil cooking spray
1/2 cup cocoa powder, plus more for dusting
1 cup (2 sticks) unsalted butter
1 tablespoon instant espresso powder
3/4 cup water
2 cups sugar
2 large eggs
1/2 cup low-fat buttermilk
2 tablespoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Whipped Ganache Frosting
8 ounces semisweet chocolate, finely chopped
3/4 cup heavy cream
2 tablespoons corn syrup
1 pound bar of milk chocolate
Truffle Eggs

Steps:

  • Preheat oven to 350 degrees. Coat two 3-inch-high, 7-inch-round cake pans with cooking spray; line bottoms with parchment paper. Coat parchment with cooking spray, and dust with cocoa powder, tapping out excess.
  • Melt butter in a large saucepan over medium heat. Add cocoa and espresso powders and water; whisk until dissolved. Whisk in sugar until smooth. Remove from heat, and whisk in eggs, buttermilk, and vanilla. Add flour, baking soda, and salt; whisk until combined.
  • Divide batter among prepared pans. Bake until a cake tester inserted into centers comes out clean, about 45 minutes. Let cool 20 minutes. Unmold, and remove parchment; let cool.
  • Trim tops of cake layers level. Place 1 layer, cut side up, on a wire rack set over a rimmed baking sheet. Spread with 1/2 cup ganache frosting. Place remaining layer, cut side down, on top. Coat top and sides with remaining cup frosting. Refrigerate until firm, about 15 minutes.
  • Put semisweet chocolate, cream, and corn syrup into a heatproof bowl set over a pan of simmering water, and stir until smooth. Let cool 5 minutes. Pour over cake, and then refrigerate until firm, about 15 minutes.
  • Using a chef's knife, scrape milk chocolate bar at a 90-degree angle, forming enough curls and shards to measure 1 1/2 cups. Transfer to a rimmed baking sheet, and refrigerate until ready to use.
  • Transfer cake to serving dish; form a nest with chocolate shavings on top, and fill with truffle eggs.

Nonstick baking spray
3 cups cake flour (or 2 3/4 cups all-purpose flour plus 1/4 cup cornstarch)
2 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
2 sticks (16 tablespoons) unsalted butter, at room temperature
2 cups sugar
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon red food coloring
1/2 cup whole milk
1/2 cup pink prosecco or sparkling rose wine
1/4 cup raspberry liqueur, such as Chambord (or substitute more prosecco)
1 1/2 cups heavy cream
2 1/2 cups bittersweet chocolate chips
1/2 teaspoon kosher salt
1/2 cup seedless raspberry jam
Sprinkles, for garnish (optional)

Steps:

  • For the pink prosecco cake: Preheat the oven to 350 degrees F. Grease two 10-inch round cake pans with nonstick baking spray and line with parchment paper.
  • Whisk the flour, baking powder and salt in a large bowl.
  • Combine the butter and sugar in a stand mixer fitted with the paddle attachment until light and fluffy, at least 5 minutes. (Don't skip this step!)
  • Add the eggs, one at a time, waiting until each one is completely combined before adding the next. Stir in the vanilla, red food coloring, milk, prosecco and raspberry liqueur. Stir in the flour mixture with a wooden spoon until just combined.
  • Pour the batter into the prepared pans. Bake until golden and the cake slightly pulls away from the sides, 30 to 35 minutes. Cool the cakes in their pans for 10 minutes, then flip them onto a wire rack to cool completely.
  • For the chocolate truffle frosting: While the cakes bake, heat the heavy cream in a medium saucepan until bubbles begin to form. Remove the saucepan from the heat and whisk in the chocolate chips and salt until the chocolate melts and the mixture is smooth. Let cool to room temperature.
  • To assemble the cake: Place one cake layer on a serving dish or cake stand. Spread the raspberry jam on top of the cake. Put a generous spoonful of the chocolate frosting on top and spread it to the edges. Put the cake in the refrigerator to set. Once set, add the second cake layer and finish frosting the sides and top of the cake with the remaining chocolate frosting. Decorate as desired.

Luscious chocolate truffle frosting for chocolate cakes. Dust the frosted cake with cocoa powder for a beautiful, velvety finish. Makes enough to cover a 8-10 cm high cake baked in a 22 cm round cake tin, so if you're making a big cake, you might want to make a double batch.

100 ml heavy cream
170 g semisweet chocolate
50 g butter, cubed
50 ml powdered sugar
1 tablespoon cognac or 1 tablespoon coffee (optional)

Steps:

  • Whip the heavy cream until stiff.
  • Melt the chocolate over a double boiler.
  • When the chocolate has melted, add the butter and stir until the butter melts.
  • Allow the mixture to cool a bit.
  • Add the whipped cream, the powdered sugar and cognac or coffee (if using), stir to combine.
  • If the frosting is very liquid-y at this point, let it sit in the fridge until it becomes thicker and spreadable.
  • Frost your cake and transfer to the fridge, allow the frosting to set before serving.
