1 (18.25 ounce) package devil's food cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 cup sour cream
1 cup milk
½ cup vegetable oil
½ cup water
4 eggs
2 cups semisweet chocolate chips
6 tablespoons butter
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  • In a large bowl, combine cake mix, pudding mix, sour cream, milk, oil, water and eggs. Beat for 4 minutes, then mix in 2 cups chocolate chips.
  • Pour batter into prepared pan. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool 10 minutes in the pan, then turn out onto a wire rack and cool completely.
  • To make the glaze: Melt the butter and 1 cup chocolate chips in a double boiler or microwave oven. Stir until smooth and drizzle over cake.

1 1/2 teaspoons baking powder

1 large egg
1/2 cup 1% low-fat milk
2 tablespoons canola oil
2 teaspoons vanilla extract
3/4 cup semi-sweet chocolate chips (optional)
1 1/3 cups hot brewed coffee
2/3 cup packed light brown sugar or 2/3 cup Splenda granular
1/4 cup chopped walnuts or 1/4 cup pecans, toasted
confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350°F
  • Coat a 1 1/2- to 2-quart baking dish with cooking spray.
  • Whisk whole-wheat flour, all-purpose flour, sugar (or Splenda Sugar Blend), cocoa, baking powder and salt in a large bowl.
  • Whisk egg, milk, oil and vanilla in a glass measuring cup.
  • Add to the flour mixture; stir with a rubber spatula until just combined.
  • Fold in chocolate chips, if using.
  • Scrape the batter into the prepared baking dish.
  • Mix hot coffee and brown sugar (or Splenda Granular) in the measuring cup and pour over the batter. Sprinkle with nuts. (It may look strange at this point, but don't worry. During baking, cake forms on top with sauce underneath.)

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a shallow 1 quart baking dish.
  • Whisk flour, baking powder, white sugar, 2 tablespoons cocoa powder, and salt together in a large bowl. Mix in the milk, oil, and vanilla extract. Stir in nuts. Pour batter into prepared baking dish.
  • Mix brown sugar and remaining 1/4 cup cocoa powder together; sprinkle over batter in baking dish. Pour the boiling water slowly over the top of the batter and topping.

1/2 cup butter margarine, divided
1/3 cup water
1 (3 1/2 ounce) package jello chocolate flavor instant pudding and pie filling mix
3 cups powdered sugar

Steps:

  • Microwave 4 of the chocolate squares, 6 TBSP of the butter and water in large microwaveable bowl on High for 2 minutes or until butter is melted, stir. Add dry pudding mix; stir until well blended.
  • Add powered sugar, 1 cup at a time, stirring until well blended after each addition. Press into foil lined 8 inch square pan.

I tried these last night at a Christmas party and just HAD to get the recipe before I left. Super easy and oh so delicious! They taste just like chocolate mousse. I'm not exactly sure how many shots this makes, it all depends on the size of plastic shot glasses/containers used. I'm making a batch tonight, just for fun, but I'm going to fill parfait glasses with it for a Christmas eve dessert (for the grown-ups). I will make it the same way for the kids, only a "virgin" alternative, replacing the booze with more milk. I hope you enjoy! *Note: If you've never heard of "Rum Chata", just google it. It's a rum liqueur. (The stupid ingredient list keeps posting it incorrectly). I've drank "Rum Chata", before as a sipper, but I've also been told that it's great as an alternative to creamer in your morning coffee for a quick "hang-over" cure.

1 cup milk
1 cup rum, chata
1 (8 ounce) container Cool Whip Topping (thawed in fridge)

Steps:

  • Combine first 3 ingredients in a medium bowl. Beat with a wire whisk or electric blender on low for 1 - 2 minutes. Let stand for 5 minutes to soft-set.
  • Gently fold in whipped topping (that has been thawed in the fridge). Once fully incorporated, divide the mixture amongst plastic shot glasses, line them on a tray and place the tray in the freezer until ready to serve (they will not freeze solid because of the alcohol).

1 teaspoon baking powder

25 g butter

1/2-1 cup raspberry preserves (optional)

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 10 inch Bundt pan.
  • In a large bowl, combine cake mix, pudding mix, sour cream (you can use light sour cream), milk, oil, coffee (you can use water instead of coffee) and eggs. Beat for 4 minutes, then mix in 2 cups chocolate mini chips.
  • Pour batter into prepared pan. Bake 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool 10 minutes in the pan, then turn out onto a wire rack and cool completely.
  • To make the glaze: Melt the butter and 1 cup chocolate chips in double boiler or microwave until smooth. At this point you could spread raspberry preserves over the top of cake and then drizzle glaze over the preserves.
  • Hint: You could use raspberry chips in place of chocolate chips if you desire. Also, if you decide to use the raspberry preserves they might spread better if warmed first.

1/4 cup cocoa powder*
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1/4 cup unsalted butter, (melted)
1 teaspoon pure vanilla extract
1/2 cup white granulated sugar
1/2 cup packed light brown sugar
3 tablespoons cocoa powder ((I like unsweetened cocoa powder. (*See notes))
1-1/4 cups boiling water

2 1/2 cups nonfat milk
2 tablespoons unsweetened cocoa powder
3 tablespoons cornstarch
1/2 cup sweetened evaporated skim milk
3 tablespoons Hersheys Chocolate Syrup
1 dash salt
1/2 teaspoon vanilla extract

Steps:

  • In a saucepan, combine the milk with the cocoa powder and cornstarch and whisk thoroughly until the powders are dissolved.
  • Add the condensed milk, chocolate syrup, and salt to the saucepan. Set the pan over med/low heat. Heat the mixture, stirring constantly, until it comes to a boil and thickens (about 6 min).
  • Remove from heat and let sit, covered, for about 5 minutes and then add the vanilla.
  • Transfer into serving cups, cover each with plastic wrap and chill 2-3 hrs before serving.
  • 3 Points per serving (3/4 cup).
