1/2 cup (1 stick) unsalted butter, room temperature, plus 2 tablespoons melted
1/4 cup packed light-brown sugar
1 1/4 cups all-purpose flour (spooned and leveled)
1/2 teaspoon salt
3 large eggs
3/4 cup light corn syrup
1/2 cup granulated sugar
1 package (11.5 ounces) semisweet chocolate chips (2 cups)
2 cups coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees. Line the bottom and sides of a 9-by-13-inch baking pan with aluminum foil. In the bowl of an electric mixer, beat 1 stick room-temperature butter, brown sugar, flour, and salt until coarse crumbs form. Pour mixture into prepared pan; press firmly into bottom.
  • Bake until lightly browned, 25 to 30 minutes. Let cool, 10 minutes.
  • Meanwhile, in same large bowl, mix eggs, corn syrup, granulated sugar, and melted butter until well combined. Add chocolate chips and pecans; spread over crust. Bake until set, 25 to 30 minutes. Cool completely in pan before lifting out (using foil to lift). Cut into 32 bars (8 rows by 4 rows).

⅓ teaspoon salt
⅔ cup margarine
1 ½ cups light corn syrup (such as Karo®)
1 cup brown sugar
4 eggs

1 ½ cups chopped pecans
1 (11 ounce) package chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 10x15-inch jelly roll pan.
  • Stir flour, white sugar, and salt together in a large bowl. Cut in 2/3 cup margarine until mixture resembles coarse crumbs. Press mixture into the bottom of the prepared pan.
  • Bake in the preheated oven for 20 minutes.
  • While the crust is baking, prepare the filling by mixing corn syrup, brown sugar, eggs, margarine, vanilla extract, and salt together in a large bowl until smooth. Stir in pecans.
  • Remove the crust from the oven and sprinkle with chocolate chips. Spread filling evenly over the chocolate chip covered crust.

1/2 cup butter, softened
1-1/2 cups packed brown sugar, divided

  • Place egg whites in a small bowl; let stand at room temperature 30 minutes., Preheat oven to 325°. In a large bowl, cream butter, 1/2 cup brown sugar and sugar until light and fluffy. There is a very famous pie named after a very famous horse race that shall remain nameless. It combines pecan pie with chocolate chips and a splash of Bourbon (because it was invented in Kentucky and if it will sit still we will throw Bourbon in it in this state). My brother Donnie has always loved chocolate chip pecan pie, and I have been trying for years to improve on the classic. Made into bar form, this dessert becomes the perfect treat for your Derby Party or Holiday potluck. You can leave out the Bourbon if you feel so inclined, but I love the way the smoky, spicy flavor pairs with the orange. These little babies also keep really well, making them a staple in my Christmas cookie exchange basket.

12 tablespoons (170 grams) cold unsalted butter, diced
2 cups (250 grams) all-purpose flour, plus more for dusting
1/4 teaspoon fine salt
2 tablespoons sugar
3 to 4 tablespoons ice water
1 2/3 cups (165 grams) pecans
1 cup (240 milliliters) honey
2/3 cup (145 grams) packed light brown sugar
3 large eggs
2 tablespoons unsalted butter, melted
2 tablespoons all-purpose flour
2 tablespoons Bourbon
Grated zest of 1 orange
1 teaspoon pure vanilla extract
1 cup (170 grams) semisweet chocolate chips

Steps:

  • For the crust: Adjust the oven rack to the bottom position and preheat the oven to 400 degrees F (205 degrees C).
  • Coat the bottom and sides of a 9-by-13-inch (23-by-33 centimeter) baking pan with cooking spray. Line the pan with parchment paper, letting the paper overhang the edges of the pan by a few inches on two sides (this will help you lift the bars out of the pan).
  • In a food processor, pulse together the butter, flour, salt and sugar until the butter is in pea-sized pieces. Remove the weights and foil and continue to bake until the crust is just golden, about 5 minutes more. Let cool completely.
  • For the filling: Preheat the oven to 400 degrees F (205 degrees C). Spread the pecans in an even layer on a baking sheet. Toast until fragrant and golden, 8 to 10 minutes. Let cool slightly, then roughly chop.
  • Beat the honey and brown sugar with an electric mixer until smooth. Beat in the eggs. Add in the melted butter and continue to beat. Add the flour, Bourbon, orange zest and vanilla. Sprinkle the pecans and chocolate chips over the crust and pour the honey mixture over the top. Bake until the top of the filling is golden brown and the center sets up, 30 to 40 minutes. Cover and put in the refrigerator until cool. When ready to serve, cut into 12 to 24 bars.

1/4 c butter, unsalted
1 c coconut, sweetened flaked

Steps:

  • 1. Preheat oven to 350°.
  • 2. Arrange pecans in a single layer of a shallow baking pan. Bake 8-10 minutes or until lightly toasted. Stir halfway through baking.
  • 3. Line bottom and sides of a 9"x 13" baking pan with aluminum foil, leaving an overhang on two short sides. Grease foil.
  • 4. Whisk together flour, confectioners' sugar, and cocoa. Add cold butter, and combine with a pastry blender* until mixture resembles coarse meal. Press mixture into bottom and about 3/4-inch up sides of prepared pan.
  • 5. Bake crust for 15 minutes. Remove from oven and immediately sprinkle chocolate chips evenly over crust. Allow to cool on a wire rack at least 30 minutes.
  • 6. Place eggs in a large mixing bowl, and beat lightly. Add brown sugar, corn syrup, and melted butter. Whisk together until smooth. Stir in coconut and pecans. Pour evenly over partially baked crust.
  • 7. Bake 28-34 minutes, or until edges are golden and filling has set. Cool completely on a wire rack. Then, refrigerate for an hour.
  • 8. Using foil overhang, lift bars from pan and place on a cutting board. Use a sharp knife or pizza cutter to cut into bars.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In medium bowl, cut 6 tablespoons butter into cake mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Press firmly in bottom of ungreased 13x9-inch pan. Bake 13 to 14 minutes or until crust is dry.
  • Sprinkle pecan halves evenly over baked layer. In 2-quart saucepan, heat 2/3 cup butter and the brown sugar to boiling over medium heat, stirring occasionally; boil and stir 1 minute. Spoon mixture evenly over pecans.
  • Bake 13 to 16 minutes or until bubbly and light brown. Sprinkle chocolate chips over warm bars. Cool completely, about 1 hour. For bars, cut into 8 rows by 4 rows. Store covered.

1/3 cup pecans
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon salt
1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into cubes
3/4 cup dark corn syrup
1/2 cup granulated sugar
1/2 cup packed light brown sugar
4 large eggs
4 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract
Pinch of salt
1 1/2 cups pecans, roughly chopped
3 ounces bittersweet chocolate, roughly chopped

Steps:

  • Make the crust: Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on two sides; coat the foil with cooking spray. Pulse the pecans in a food processor until finely ground. Add the flour, granulated sugar and salt and pulse to combine. Add the cold butter and pulse until the dough starts clumping together (it will still be crumbly). Transfer to the baking dish and press into an even layer with your fingers. Bake until golden brown and set, 25 to 30 minutes.
  • Meanwhile, make the topping: Whisk the corn syrup, granulated sugar, brown sugar, eggs, melted butter, vanilla and salt in a large bowl until smooth, then stir in the pecans.
  • Spread the topping over the warm crust and sprinkle evenly with the chocolate. Return to the oven and bake until the top is set and no longer jiggly, 25 to 30 minutes. Transfer to a rack and let cool completely in the pan. Remove and cut into diamonds or squares.

CRUST
1 3/4 c all purpose flour
1/2 c light brown sugar, tightly packed
3/4 c butter, chilled and cubed
1/4 tsp salt
FILLING
1 c light brown sugar, tightly packed
4 large eggs, beaten
1 c light corn syrup
1/4 c butter, melted
3 Tbsp rum, spiced or dark
1 tsp vanilla extract
1/4 tsp salt
1 1/2 c chopped pecans
1 c chocolate chips, milk, semi-sweet or dark

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 13" x 9" baking pan.
  • 2. Crust Combine crust ingredients with a pastry blender (or two forks) until crumbly. Press into pan. Bake crust for 15 to 17 minutes or until lightly browned. Remove and allow to cool for 15 minutes.
  • 3. Filling Whisk brown sugar, eggs, corn syrup, rum, butter, vanilla extract and salt until well blended.
  • 4. Sprinkle pecans and chips evenly over the crust. Carefully pour sugar mixture over pecans and chocolate chips.
  • 5. Bake for 30 - 35 minutes or until edges are set and bars are golden brown. Center will still be "wiggly". Cool and cut into bars.

20 chocolate wafer cookies, finely crushed
1 cup Fisher Chef's Naturals Pecan Chips, chopped
3 tablespoons butter, melted
8 ounces white chocolate, finely chopped
1 lb cream cheese
1 teaspoon vanilla extract
2 large eggs, beaten
1/2 cup raspberry preserves
2/3 cup granulated sugar
1/4 cup granulated sugar

Steps:

  • Preheat an oven to 350°F.
  • In a bowl, combine the ground cookies and ½ cup of the pecans and melted butter. Using a spoon, mix well.
  • Press the mixture into an 8" square pan sprayed lightly with vegetable spray, then press the cookie mixture firmly into the bottom of the pan.
  • Fill a pot with 1-2 cups of water and bring to a simmer. Place white chocolate chips in a double boiler or a microwave safe bowl (the water should not touch the bottom of the bowl). Stir the chocolate constantly while the chocolate melts and remove from stove once completely melted.
  • Using a whisk beat in the cream cheese and vanilla until smooth. Add eggs one at a time and 2/3 cup granulated sugar, mixing well until very smooth.
  • Pour mixture over the cookie crust, tap the pan gently to smooth out and bake for 25-30 minutes until firm. Cool for 15 minutes.
  • Heat the preserves gently in a bowl over hot water just until melted. Spoon over the slightly cooled cheesecake. Cool completely and refrigerate for at least 6 hours.
  • In a saucepan, heat the remaining ¼ cup of sugar and add the remaining ½ cup of pecans. Stir over medium heat until pecans are lightly coated. Let cook a few minutes, cut into bars and sprinkle with the candied pecans and serve.

2 1/2 c bisquick baking mix
1/2 c firmly packed light brown sugar
1/2 c butter, cut into small pieces
2 c semisweet chocolate morsels
3/4 c chopped pecans, toasted
3/4 c sweetened coconut flakes

Steps:

  • 1. Preheat oven to 350. In work bowl of processor, mix baking mix and sugar; Pulse until blended.
  • 2. Add butter; pulse until mixture is crumbly. Pat mixture into bottom of a 13 x 9 inch baking pan, Bake for 15 minutes or until edges of crust are lightly browned.
  • 3. Sprinkle evenly with chocolate morsels. Bake for 5 minutes or until chocolate begins to melt.
  • 4. Remove pan from oven.
  • 5. Using a small metal spatula, spread chocolate over warm crust. Top with pecans and coconut; gently press into chocolate, using spatula.
  • 6. Cool completely on wire rack, about 1 hour. Chill for 30 minutes or until chocolate sets. cut into 16 bars. For best results, use a small offset metal spatula to spread chocolate and remove bars from pan.

1 cup all-purpose flour
24 vanilla caramels, unwrapped
1/3 cup whipping cream
2 cups pecan halves
1 teaspoon butter
1/2 cup milk chocolate chips
2 tablespoons whipping cream

Steps:

  • Heat oven to 325°F.
  • Grease a 9-inch square pan.
  • In medium bowl, combine 1/2 c powdered sugar, 1/2 c butter and 1 tablespoon whipping cream.
  • Blend well.
  • Lightly spoon the flour into measuring cup and level off.
  • Add the flour to the powdered sugar mixture and mix until crumbly.
  • With floured hands, press evenly in the greased pan.
  • Bake at 325° for 15-20 minutes or until firm to touch.
  • Meanwhile, in a medium saucepan, combine caramels and 1/3 cup whipping cream.
