I am a substitute teacher and found this fudge recipe in a very old book in our school library. It was written before microwaves, so I modified it to make a quick treat. The faculty and staff gave it rave reviews. -Peggy Key, Grant, Alabama

1 can (14 ounces) sweetened condensed milk
1 package (12 ounces) butterscotch chips
1-1/2 cups miniature marshmallows
2/3 cup peanut butter
1 teaspoon vanilla extract
1 cup chopped salted peanuts

Steps:

  • In a microwave-safe bowl, combine the milk, chips and marshmallows. Microwave, uncovered, at 80% power for 3 minutes or until chips and marshmallows are melted, stirring frequently. Stir in peanut butter and vanilla until combined. Fold in the peanuts., Pour into an 11x7-in. pan coated with cooking spray. Cover and refrigerate for 2 hours or until firm. Cut into squares. Store in the refrigerator.

Unsalted butter, softened, for brushing
1 14-ounce can sweetened condensed milk
2 cups bittersweet chocolate chips
2 pinches salt
2 cups peanut butter chips

Steps:

  • Line an 8-inch-square baking pan with foil, pressing it into the corners and up the sides; leave an overhang on 2 sides. Brush the foil with butter.
  • Combine 3/4 cup condensed milk, the chocolate chips and a pinch of salt in a medium saucepan. Combine the remaining condensed milk, the peanut butter chips and a pinch of salt in a separate saucepan. Put both pans over low heat and cook, stirring occasionally, until the chips are melted and smooth.
  • Spoon the chocolate mixture into the prepared pan, leaving spaces between the spoonfuls. Spoon the peanut butter mixture into the gaps. Brush an 8-inch square of parchment paper with butter and lay it directly on top of the fudge; press to flatten evenly and fill any gaps. Refrigerate until firm, about 45 minutes. Lift the foil to remove the fudge from the pan and cut into 1-inch squares. Store up to 1 week in an airtight container.

● 2/3 cup (5 fluid-ounce can) NESTLÉ® CARNATION® Evaporated Milk
●2 tablespoons butter or margarine
●1/4 teaspoon salt
●2 cups miniature marshmallows
● 1 2/3 cups (11-ounce package) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels
●1/2 cup chopped nuts
●1 teaspoon vanilla extract

Steps:

  • Line 8-inch-square baking pan with foil.
  • Combine sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
  • Stir in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.

¾ cup butter
3 cups white sugar
¾ cup milk
¾ cup peanut butter
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 teaspoon vanilla extract
1 (7 ounce) jar marshmallow creme

Steps:

  • Lightly grease a 9x13 inch dish.
  • In a 2-quart saucepan over medium heat, combine butter, sugar and milk. Bring to a boil, stirring constantly. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and stir in peanut butter, chocolate chips and butterscotch chips until melted. Stir in vanilla. Fold in marshmallow creme. Pour into prepared pan. Chill in refrigerator until firm.

3 cups white sugar
1 cup evaporated milk
¼ cup cocoa
½ cup peanut butter
1 tablespoon margarine
1 tablespoon butter

Steps:

  • Butter one 9x9 inch pan.
  • Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.
  • Remove from heat, add peanut butter and margarine. Beat by hand until creamy; pour into prepared pan. Allow to cool and cut into squares.

1 14 oz sweetened condensed milk
1/2 c peanut butter, creamy
1 12 oz milk chocolate chips (my secret is i use half chocolate and half butterscotch
3/4 c chopped pecans
1 tsp vanilla

Steps:

  • 1. In a heavy sauce pan, heat sweetened condensed milk and peanut butter over medium low heat until a few bubbles appear,STIRRING CONSTANTLY!
  • 2. Remove from heat. Stir in milk chocolate and butterscotch chips until smooth. Immediately stir in pecans and vanilla.
  • 3. Spread evenly into wax paper lined 8 or 9 inch square dish. Cool in fridge until firm, about 2 hours. Turn onto smooth surface and remove paper. Cut into small squares and store in airtight container in fridge.
