CHOCOLATE SPOONS
The amount of spoons you'll get will depend on the size of the spoons you use. I used standard-sized spoons, which can hold about a tablespoon of melted chocolate.

- Make sure the spoons are clean and dry, then set them on a sheet pan lined with parchment paper. Set the handle of the spoons on the edge of the pan to make the well of the spoon level (if the edge is too high, try the handle of a wooden spoon or something similar). Place the chocolate in a small microwave-safe dish. Microwave for 30 seconds, then stir well. Continue this in 30-second increments until the chocolate is almost melted but is not melted completely (reduce the time to 10-15 seconds as you go if necessary). Once the chocolate pieces are all almost melted but there are still a few pieces that remain, stir the chocolate vigorously until it's completely melted and smooth. Place the chocolate into a piping bag (or just use another spoon for this step, although piping it looks the best and is less messy). Pipe the chocolate onto the well of a spoon. If you're making swirls, pipe the opposite colored chocolate in very small dots onto the chocolate, then make swirls using a toothpick. Immediately add any toppings, then repeat the process with all the remaining spoons. Allow the chocolate spoons to set at room temperature until the chocolate has completely cooled and hardened.

HOT CHOCOLATE STIRRERS

- You will need:6 cupcake cases, pencil, pastry brush, 6 empty 47g fromage frais pots (washed and dried), 6 wooden lolly sticks, cellophane and string or ribbon for wrapping, 6 gift tagsPush a small hole in the middle of the cupcake cases with a pencil and put aside for later.
- Dip the pastry brush in the sunflower oil and paint a very thin layer of oil over the insides of the fromage frais pots.
- Put the chocolate in a bowl and heat in the microwave in 30-sec bursts until runny, stirring after each blast. Or melt it in a heatproof bowl set over a pan of simmering water (get an adult to help you). If you're using different types of chocolate, you should melt them separately.
- Carefully pour the melted chocolate into the pots. Put a lolly stick in the middle of each and sprinkle your chosen decorations around it.
- Sit a cake case on top of each pot so that it covers the chocolate and the stick pokes through the hole. Put them in the fridge to set overnight.
- The next day, carefully pull the chocolates out of the pots and throw away the paper cases. Wrap each in cellophane tied with string and write a tag to read: 'Simply stir into hot milk.'

CHOCOLATE MARSHMALLOW SPOONS
From Crafting Traditions. A diferent spin on the typical chocolate covered spoon. Use these to stir your coffee with. This recipe makes a very small amount, but doubles well.

- In a small saucepan, melt chocolate chips and 4 tsp of the butter, stirring often.
- Turn off heat once smooth and dip the bowl ends of each spoon into the chocolate to coat.
- Immediately place 4 marshmallows on top.
- Using a spoon, pour any remaining chocolate over the marshmallows.
- Place on waxed paper set on a plate and chill until hardened, about 15 minutes.
- In a clean small saucepan, melt white chocolate chips with the remaining 1 tsp butter, stirring often until melted and smooth.
- Using a fork, drizzle the white chocolate over the chilled spoons.
- Chill until hardened, about 5 minutes.
- Store in fridge if not using immediately.

HOT COCOA AND HOMEMADE MARSHMALLOWS

- Combine all the dry ingredients in a large bowl and mix well. Take the bittersweet chocolate and roughly chop it up to give a chunky but consistent size. Mix well with a wooden spoon and then store in a dry airtight container. To make the hot chocolate, simply add 1 cup of water per 1/2 cup of hot cocoa mix. Heat in a small saucepan over low heat, stirring with a whisk. Heat until hot, but do not boil, about 6 to 7 minutes. Serve with marshmallows.
- In a medium sized saucepan soak the gelatin in the cold water. After the gelatin has softened, approximately 10 minutes, add the regular sugar and then gently dissolve over low heat, approximately 8 minutes. Remove from the heat and allow to cool to room temperature.
- In a mixer, beat the egg whites until stiff peaks and then fold in the sifted confectioners' sugar. While the mixer is on low, slowly pour in the cooled gelatin mixture. Increase the speed and beat until white and thick. The volume should double in size and should form between soft and firm peaks.
- Line an 8 by 8-inch baking dish with high sides with foil, grease slightly with butter, and coat with confectioners' sugar. Alternatively, you can use a baking sheet, but the marshmallows will not be as tall. Pour marshmallow mixture in and top with more sifted confectioners' sugar. Leave out overnight or for at least 3 hours to set. The marshmallow should be light and spongy when set.
- Loosen marshmallow from edges of tray and invert onto a large cutting board. Peel off foil and use a large knife to cut the marshmallows into cubes. Dredge each piece in confectioners' sugar.
