CHOCOLATE ISLAND COOKIES

I've been making this recipe for about 35 years now, and it's still my family's all-time favorite cookie.

Yield about 4 dozen.

Number Of Ingredients 16

1/2 cup shortening
1 cup packed brown sugar
1 large egg
3 ounces unsweetened chocolate, melted and cooled
1/4 cup strong brewed coffee
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk
1/3 cup sweetened shredded coconut
FROSTING:
1-1/2 ounces unsweetened chocolate, melted and cooled
1/4 cup sour cream
1 tablespoon butter, softened
1 to 1-1/2 cups confectioners' sugar
2/3 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg, chocolate and coffee. Combine the flour, baking soda and salt; gradually add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in coconut. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 12-15 minutes or until edges are browned. Remove to wire racks to cool. , For frosting, combine the chocolate, sour cream and butter in a small bowl until smooth. Add enough sugar to achieve spreading consistency. Frost cooled cookies. Sprinkle with coconut.

The combination of white chocolate, coconut and macadamia nuts make this delicious cookie exceptional.

Number Of Ingredients 12

1 2/3 c flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c butter, softened
3/4 c brown sugar, firmly packed
1/3 c sugar
1 tsp vanilla
1 large egg
2 c vanilla or white chocolate chips
1 c coconut, flaked, toasted, if desired
3/4 c macadamia nuts, chopped

Steps:

  • 1. Sift dry ingredients.
  • 2. Beat butter, brown sugar, sugar and vanilla until creamy. Beat in egg.
  • 3. Gradually beat in flour mixture.
  • 4. Stir in white chocolate chips, coconut and nuts.
  • 5. Drop by rounded tablespoon onto ungreased baking sheets.
  • 6. Bake at 375 degrees for 8-11 minutes.

1/2 tsp baking soda
1/2 tsp salt
3/4 c butter or margarine, softened
3/4 c brown sugar, packed
1/4 c granulated sugar
1 tsp vanilla extract
1 egg
2 c white chocolate chips
1 c sweetned flaked coconut
3/4 c macadamia nuts, chopped

Steps:

  • 1. Preheat oven to 375 degrees. Combine flour, baking powder, baking soda and salt in a small bowl; set aside. Beat butter, brown sugar, granulated sugar and vanilla in a large nmixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in chips, coconut and nuts. Drop by rounded teaspoonfuls onto greased cookie sheets. Bake at 375 degrees for 8-10 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes. Remove to wire rack to cool completely. Makes about 3 dozen cookies.
