⅓ cup packed brown sugar
¼ cup white sugar
¼ cup vegetable oil
2 teaspoons vanilla extract
2 egg whites
1 ½ cups quick cooking oats
¾ cup all-purpose flour
½ teaspoon baking powder
⅛ teaspoon salt
⅓ cup mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat pan with vegetable oil spray.
  • In a medium bowl, cream together sugar, brown sugar, vegetable oil, egg whites, and vanilla with an electric mixer. Sift together the flour, baking powder, and salt; stir into the creamed mixture. With a wooden spoon, stir in the quick cooking oats and chocolate chips.
  • Drop dough by level tablespoonfuls onto the prepared cookie sheet. Bake in the preheated oven for 8 to 10 minutes. Remove from baking sheets to cool on wire racks.

1 1/4 cups packed brown sugar
2 eggs
1 cup pumpkin
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon clove
1 cup raisins
1 cup chocolate chips
1/2 cup dates
1/2 cup chopped nuts

Steps:

  • In a bowl, cream shortening, sugar.
  • Beat eggs, pumpkin and vanilla.
  • In a bowl mix flour, baking powder, baking soda, cinnamon, salt, nutmeg,allspice,and cloves.
  • Stir in creamed mixture.
  • Stir in raisins, chocolate chips, dates and nuts.
  • Drop by teaspoons on greased baking sheet.
  • Bake 350 10-12 minutes till golden brown.

1 1/3 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup shortening
1 cup sugar
1 egg, well beaten
3 ounces unsweetened chocolate, melted
1 teaspoon vanilla
1/3 cup milk
1 cup chopped raisins
1 cup chopped nuts

Steps:

  • Sift together flour,baking powder,salt and cinnamon.
  • Cream shortening,add sugar gradually,cream until fluffy.
  • Add egg to creamed mixture with chocolate,blend well.
  • Add vanilla and milk.
  • Stir in dry ingredients,rasins and nuts.
  • Mix well.
  • Chill 30 minutes.
  • Drop by teaspoonfuls about 2 inches apart onto greased baking sheet.
  • Bake at 350 degrees for 15 minutes.
  • Remove cookies and cool on wire rack.
