1 cup whipping cream
12 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
Crust and filling
30 chocolate wafer cookies (about 7 ounces), broken into pieces
5 tablespoons unsalted butter, cut into 1/2-inch cubes
3/4 pound fresh Bing cherries, pitted, coarsely chopped
1/4 cup sugar
1 tablespoon brandy (optional)
1/8 teaspoon almond extract
1 quart purchased vanilla ice cream, slightly softened
1/2 cup (about 3 ounces) miniature semisweet chocolate chips

Steps:

  • For sauce:
  • Bring whipping cream to simmer in heavy medium saucepan; remove from heat. Add chopped chocolate; whisk until smooth.
  • For crust and filling:
  • Preheat oven to 350°F. Grind cookies in processor until coarse crumbs form. Add butter and blend until crumbs cling together and are evenly moistened. Press crumb mixture over bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until slightly puffed and darker, about 10 minutes. Cool crust on rack. Combine cherries, sugar and brandy, if desired, in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil. Reduce heat; simmer until thick syrup forms, stirring often, about 10 minutes. Remove from heat. Mix in almond extract. Cool to room temperature.
  • Place ice cream in large bowl. Fold in cherry mixture and chocolate chips. Pack ice cream mixture into prepared crust. Cover pie and freeze. (Sauce and pie can be prepared 3 days ahead. Cover and refrigerate sauce. Keep pie frozen.)
  • Rewarm sauce over low heat. Cut pie into wedges; serve with sauce.

1/2 cup chilled heavy cream

For hot fudge sauce
1/3 cup heavy cream
3 tablespoons light corn syrup
3 tablespoons packed brown sugar
2 tablespoons Dutch-process unsweetened cocoa powder

Steps:

  • Make chocolate layer:
  • Put oven rack in middle position and preheat oven to 350°F. Line a 9-inch square baking pan with foil, allowing 2 inches of foil to hang over 2 opposite ends of pan, and lightly brush foil (except overhang) with oil.
  • Melt chocolate with butter, sugar, and salt in a double boiler or a large metal bowl set over a pan of barely simmering water, whisking occasionally, until smooth. Remove top of double boiler or bowl from heat and whisk in eggs and vanilla, then stir in peanuts.
  • Pour batter into baking pan and bake until set and edges are slightly puffed, about 15 minutes. Transfer cake in pan to a rack to cool completely.
  • Make peanut butter layer:
  • Beat cream cheese, peanut butter, confectioners sugar, and salt in a bowl with an electric mixer at medium speed until combined well, about 4 minutes.
  • Beat cream with vanilla in a bowl with cleaned beaters at medium-high speed until it just holds stiff peaks, then gently fold into peanut butter mixture until just combined.
  • Spread mixture evenly on top of chocolate layer and freeze, pan covered with foil, until firm, about 2 hours.
  • Make hot fudge sauce:
  • Bring cream, syrup, sugar, cocoa, salt, and chocolate to a boil in a 1-quart heavy saucepan over moderate heat, stirring until chocolate is melted. Reduce heat and simmer, stirring frequently, until thickened, about 3 minutes, then remove from heat. Stir in vanilla until incorporated. Cool sauce to warm.
  • To serve:
  • Carefully lift cake from pan by grasping overhang. Trim 1/4 inch from edges of cake and discard, then cut into 8 bars. Peel off foil and serve bars with sauce.

Steps:

  • Whisk first 7 ingredients in large bowl to blend. Stir 6 tablespoons warm water and espresso powder in small bowl until powder dissolves. Stir chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Remove from heat. Whisk in oil, vanilla and espresso mixture. Cool to lukewarm.
  • Whisk eggs, then 1 1/4 cups buttermilk and ground hazelnuts into chocolate mixture; add to dry ingredients and whisk to blend well.
  • Preheat waffle iron to medium heat, following manufacturer's instructions. Pour about 1/2 to 3/4 cup batter (depending on size of waffle iron) into center of waffle iron; spread evenly with spatula.   • Brownies: Preheat oven to 180°C or 350°F.
  • Cook the sugar, margarine and cocoa powder on stove over medium until the margarine is melted.
  • Remove from heat, add eggs and vanilla. Stir.
  • Add remaining ingredients (flour, baking powder and salt).
  • Stir in nuts.
  • Put in greased 20cm (8 inch) square pan.
  • Bake at 180°C or 350°F for 25 minutes.
  • Sauce: Combine melted margarine, sifted cocoa and water in a microwave proof bowl.

  • To preserve: Leave to cool, put in jar with lid and refrigerate.
  • To reheat: Remove lid from jar and microwave. If the sauce is too thick, add some water.

1 cup water
1/2 cup butter, cubed
1 cup all-purpose flour
4 large eggs
CHOCOLATE CREAM FILLING:
3/4 cup sugar
5 tablespoons baking cocoa
3 tablespoons cornstarch
1/2 teaspoon salt
2 cups 2% milk
2 large egg yolks, lightly beaten
1 tablespoon butter
1 teaspoon vanilla extract
Hot fudge ice cream topping and citrus sugar, white chocolate shavings or confectioners' sugar, optional

Steps:

  • In a large saucepan, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by rounded tablespoonfuls 3 in. apart onto greased baking sheets. 340 g shortcrust pastry
65 g plain flour (plus additional for rolling out)
100 g dark chocolate (70% cocoa solids)
115 g unsalted butter
4 eggs
200 g caster sugar
2 teaspoons camp coffee (or coffee essence)
150 g granulated sugar
200 ml water
4 clementines
6 tablepsoons orange marmalade
6 tablespoons orange juice
2 tablespoons granulated sugar
1 teaspoon cornstarch (cornflour)
1 tablespoon water
4 tablespoons Cointreau liqueur

Steps:

  • Preheat oven to gas mark 6 roll out the pastry and use to line a 20cm flan tin. Chill for 20 minutes. Prick the base with a fork and lay baking paper on this and some dry baking beans. Bake for 10 minutes. Take off paper and beans.
  • Reduce oven temp to gas mark 3. Break chocolate into squares and put in a bowl with the butter. Stand over a pan of simmering water, making sure base of the bowl does not touch the water, stir until smooth and all melted.
  • Whisk the eggs sugar coffee essence and flour until mixed whisk into the chocolate mixture. Pour into the flan case and bake tfor 25- 30 minutes until set. Leave to cool.

  • Place sugar and water in pan and heat gently until dissolved, simmer for 2 minutes.
  • Cut the Clementine's into slices and drop into the syrup simmer for 5 minutes or until the rind looks translucent lift out and allow to cool on a plate.

  • Heat the marmalade, orange juice and sugar stirring until sugar is just dissolved.
  • Mix corn flour with water and stir into juice and marmalade mix, heat until simmering pour into a jug add Cointreau, leave to cool.

2 ripe bananas
1 ripe pineapple
1 cup sugar
1 cup amber rum
Chocolate Rum Fudge Sauce, recipe follows
1 cup heavy cream and 1 tablespoon confectioners' sugar whipped to soft peaks
Plantain Crisps, recipe follows
Coconut Sorbet, recipe follows
1 cup white sugar
1/2 cup good quality Cocoa Powder
4-ounces unsalted butter
1 cup dark rum
1 cup heavy cream
1 tablespoon vanilla extract
1/2 cup vegetable oil
2 green plantains, cut into thin slices lengthwise
Sugar
Ground cinnamon
1 can Coco Lopez
1 can unsweetened coconut milk
1 can water
2 tablespoons lime juice

Steps:

  • To assemble the banana split, slice the bananas lengthways and cook in a saute pan with a little butter. Peel the pineapple and cut into 1-inch rings. Remove the core. Add the pineapple to pan and cook until both are golden brown. Add the sugar and the rum. Flambe and stand aside. Place on the plate, bananas first, face up. Top with the pineapple ring. Pour any pan juices over the fruit. Drizzle a little of the Chocolate Rum Sauce over the dessert and the plate. Garnish with whipped cream and plantain chips. Serve with Coconut Sorbet.
  • Bring all ingredients to a gentle boil, cool and reserve until needed.
  • Heat the vegetable oil in a large saute pan until approximately 350 degrees. Fry the plantain slices until golden brown and crisp. Remove from the oil and dust with sugar and cinnamon. Drain on paper towels, and reserve for garnish.
  • Mix all ingredients together in bowl. Transfer to freezer friendly container and freeze until set. Serve with the banana split or enjoy alone.

CAKE
200 g chocolate broken into pieces
200 g butter
90 g cake flour
60 ml best cocoa powder
14 ml baking powder
2 ml salt
6 large eggs
200 g pecan nuts
FUDGE SAUCE
30 g butter
35 g castor sugar
250 ml cream
100 g dark chocolate, broken into pieces

Steps:

  • 1. BROWNIES: Melt the chocolate and butter together in a glass bowl, over a pot of simmering water. Dont stir until the chocolate has melted.
  • 2. Remove from the heat and stir in the flour, cocoa, baking powder and salt. Beat the eggs lightly and stir into the mixture along with the nuts.
  • 3. Pour into a lined and greased 30cm square baking tin. Bake in a preheated oven for 50 minutes at 180 degrees centigrade. Let cool for about 10 minutes and remove from tin. Cut into squares.
  • 4. FUDGE SAUCE: Heat butter and sugar together in a saucepan. Stir in the cream and cook very gently, stirring occasionally for 10 minutes.
  • 5. Add the chocolate and continue to cook gently until chocolate has melted. Stir to form a smooth sauce. Remove from the heat and pour over brownies. Serve as a decadent dessert or tea time treat

2 cups brown sugar
1/2 cup vegetable shortening
1 cup buttermilk
1 teaspoon vanilla
2 ounces unsweetened chocolate, melted
3 eggs
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (4 ounce) bar German chocolate
1/2 ounce unsweetened chocolate
8 tablespoons unsalted butter or 8 tablespoons unsalted margarine
3 cups powdered sugar
1 2/3 cups evaporated milk
1 1/4 teaspoons vanilla

Steps:

  • Cake:.
  • Preheat oven to 350°F.
  • Cream the brown sugar with the shortening in an electric mixer.
  • Add the buttermilk and vanilla then the melted chocolate.
  • With the mixer running, add eggs, 1 at a time.
  • Sift the flour with baking soda, and salt.
  • Add the dry ingredients to the sugar mixture and beat for 2 minutes.
  • Butter and flour a 13x9x2-inch rectangular cake pan.
  • Pour the batter into prepared cake pan and bake until the cake is springy and a toothpick can be inserted and removed cleanly, about 40 minutes.
  • Allow the cake to cool for 10 minutes the turn it out onto a rack to finish cooling.
  • Sauce:.
  • Melt the German chocolate with the butter in a saucepan over very low heat.
  • Stir in the powdered sugar, alternating with the evaporated milk and blending well.
  • Stirring constantly, brin the mixture to a simmer over medium heat.
  • Simmer until the sauce becomes thick and creamy, about 8 minutes.
  • Stir in the vanilla.
  • Serve slices of cake topped with warm fudge sauce.
  • Grab a cold glass of milk and enjoy!

1 1/4 cups fat-free milk
3 ounces bittersweet chocolate, chopped
1 teaspoon vanilla extract
1 large egg yolk
6 large egg whites
Sauce:
1 tablespoon butter
1/3 cup sugar
2 tablespoons unsweetened cocoa
1 tablespoon all-purpose flour
1/2 cup fat-free milk
1/2 ounce bittersweet chocolate, chopped

Steps:

  • Position oven rack to the lowest setting, and remove middle rack. Preheat oven to 425°. To prepare the soufflés, lightly coat 6 (8-ounce) soufflé dishes with cooking spray. Sprinkle evenly with 2 tablespoons sugar. Set aside. Combine remaining 1/2 cup sugar, 3 tablespoons flour, 3 tablespoons cocoa, and salt in a medium saucepan over medium-high heat, stirring with a whisk. Gradually add 1 1/4 cups milk, stirring constantly with a whisk; bring to a boil. Cook 2 minutes or until slightly thick, stirring constantly with a whisk; remove from heat. Add 3 ounces chocolate; stir until smooth. Transfer mixture to a large bowl; cool to room temperature. Stir in vanilla and egg yolk. Place egg whites in a large mixing bowl; beat at high speed with a mixer until stiff peaks form (do not overbeat).
