BANANA FRITTERS WITH CHOCOLATE SAUCE

2 eggs, separated
2/3 cup milk
1 tablespoon butter, melted
1 cup sifted flour
Pinch kosher salt
2 tablespoons sugar
Confectioners' sugar, for dredging
4 bananas, halved and split lengthwise
Peanut or vegetable oil, for deep frying
Chocolate sauce, recipe follows
Mint leaves, for garnish
6 ounces semisweet chocolate, chopped
4 tablespoons water
1 tablespoon spiced rum

Steps:

  • In a bowl, whisk together the egg yolks, milk, and butter. Add the flour, salt, and the sugar to the egg mixture, combine well, beat until mixture is smooth, and allow to rest in the refrigerator for about 2 hours.
  • In a dry clean bowl whip the egg whites until stiff, but not dry. Fold the egg whites into the batter with a rubber spatula.
  • In a large heavy-bottom saucepan, pour enough oil to fill the pan about a third of the way, about 3 to 5 inches.
  • Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. dredge the banana pieces in the confectioners' sugar then dip the pieces into the batter. Deep-fry the bananas in batches until golden brown, about 3 to 4 minutes.
  • Drizzle with chocolate sauce. Garnish with mint leaves.
  • In a heavy bottom saucepan, put chocolate and water. Over low heat, melt the chocolate, while stirring. Boil the mixture for 1 minute. Remove from the heat and add the rum.

2 tablespoons confectioners' sugar
2 teaspoons baking powder
Pinch sea salt
Small pinch baking soda
3 ripe bananas, mashed
1/2 cup smooth organic peanut butter
2/3 cup milk
1 egg
Peanut or Canola oil, for deep frying
1/2 cup dark chocolate chunks
1/2 cup whipping cream
1 cup water, for double boiler

Steps:

  • To make the fritters: Combine the flour, sugar, and baking powder in a bowl and mix. Add the bananas, peanut butter, milk, and egg and whisk until the consistency is such that it can be balled up in a spoon. In a medium sauce pan, heat the peanut oil to 375 degrees F. Using a teaspoon, delicately spoon the peanut-butter-banana batter into the oil, a few balls at a time and deep fry until they fluff up and become crispy and golden brown, about 5 minutes. Strain on wire rack.
  • To make the chocolate sauce: In a pot, bring a cup of water to a simmer. Add a large metal bowl over top of the pot. In the metal bowl, add the chocolate chunks and whipping cream, then whisk until it melts together.
  • Generously drizzle the chocolate sauce over the fritters and serve.

1 2/3 cups all-purpose flour
1/3 cup cocoa, sifted
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3 large eggs
1 tablespoon margarine, melted
2 cups finely diced peeled cooking apples (like Mcintosh)
1/2 cup semi-sweet chocolate chips
oil (for frying)
icing sugar, for dusting

Steps:

  • Stir first 6 ingredients in a large bowl, make a well in the center.
  • In a seperate bowl beat eggs until foamy and light.
  • Pour into the well.
  • Add margarine, apple and chocolate chips.
  • Stir just until moist.
  • Drop by rounded tablespoonfuls into 375F oil.
  • when they start to brown turn over and cook other side.
  • Remove to paper towel and cool completely.
  • Dust with icing sugar.

This is my own take on beignets, a classic French dessert recipe. I take fresh strawberries, coat them with batter, then fry them, beignet-style. These strawberry fritters make my mouth water, they are so good. I love the combination of airy, crisp pastry, with lightly cooked fresh strawberries, and rich chocolate sauce.

1 cup all-purpose flour
¼ cup unsalted butter, melted
¼ cup heavy cream
3 eggs
¼ teaspoon salt
2 tablespoons packed brown sugar
1 teaspoon ground cinnamon
2 cups hulled strawberries
1 quart vegetable oil for frying
1 cup semisweet chocolate chips
3 tablespoons butter
1 teaspoon vanilla extract
¼ cup heavy cream
2 tablespoons confectioners' sugar for dusting

Steps:

  • In a large bowl, whisk together the flour, 1/4 cup butter, 1/3 cup cream, eggs, salt, brown sugar, and cinnamon. Add the strawberries to the batter and fold gently to coat.
  • Heat the oil in a large heavy pot over medium-high heat to 360 degrees F (180 degrees C).
  • Meanwhile, make the chocolate sauce by combining the chocolate chips, 3 tablespoons butter, vanilla extract, and 1/4 cup cream in a microwave-safe dish. Place in the microwave and cook on medium-high heat stirring every 30 seconds until the chocolate chips are melted and the chocolate sauce is smooth. Set the dish on a kitchen towel and cover to keep warm.
  • Working in batches, carefully drop the batter-coated strawberries into the hot oil. Fry until the batter is golden brown, flipping the strawberries to brown both sides evenly. Remove the cooked strawberry fritters and place on paper towels to drain. Dust with confectioners' sugar and drizzle with chocolate sauce to serve. Serve remaining chocolate sauce on the side.

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1/2 cup club soda
1/4 cup vegetable oil, plus 6 to 8 cups for frying
1 large egg, lightly beaten
2 ounces bittersweet chocolate, finely chopped*
1/2 cup whole hazelnuts, toasted lightly and skinned (about 4 ounces)
Accompaniments: Chile or cayenne powder, confectioners' sugar, ground cinnamon, and/or unsweetened cocoa powder
*If you keep kosher and are serving these fritters with a meat meal, be sure to use kosher dark chocolate, which contains no milk solids

Steps:

  • In large bowl, whisk together flour, cocoa, sugar, baking powder, and salt. In medium bowl, whisk together club soda, vegetable oil, and egg. Whisk wet ingredients into dry, then fold in chocolate and nuts.
  • In heavy 4-quart pot, heat 3 inches of oil until thermometer registers 350°F. Working in batches of 4 and returning oil to 350°F between batches, drop batter by rounded tablespoons into hot oil and fry fritters until crisp, 3 to 4 minutes. Transfer to paper towels to drain.

Pinch salt
2 1/2 tablespoons sugar
1 lemon, zested
1/4 cup extra-virgin olive oil, plus 2 cups extra-virgin olive oil, for frying
2 tablespoons sweet white wine
1/2 cup bittersweet chocolate, chopped medium fine
1/3 cup hazelnuts, toasted and coarsely chopped
1/4 cup apricot jam
1 egg, lightly beaten
Honey, for brushing the fritters

Steps:

  • Place the flour on a clean work surface and add the salt, sugar, lemon zest, oil, and enough wine to make a firm but tender dough. Knead for 5 minutes, then wrap the dough in plastic and let it rest 30 minutes. In the meantime, make the filling by combining the chocolate, nuts, and jam and mix with a spoon. Set aside, covered. Roll the dough out to 1/4-inch thickness and, using a 3-inch cookie cutter, cut out as many circles as possible. Place a dab of filling on each circle of dough, moisten the edges with a bit of beaten egg, and fold each round in half, pressing them shut with finger pressure or a fork. In a tall-sided pot, heat the oil to 350 degrees F and fry the until they are deep golden brown. Remove with a slotted spoon and drain on paper towels. 1/4 cup minced pitted dates
1 (3.1-ounce) disc Mexican or bittersweet chocolate, such as Ibarra, chopped into 1/4-inch pieces*
1 cup whole- milk ricotta cheese
2 large eggs, lightly beaten
2 tablespoons granulated sugar
1 1/2 teaspoons pure vanilla extract
Vegetable oil for frying
Powdered sugar for dusting
Mexican Hot Chocolate (recipe follows)

Steps:

  • Whisk together the flour, baking powder, mandarin peel, salt, dates and chocolate in a bowl. Whisk together ricotta, eggs, granulated sugar, and vanilla in another bowl. Mix in the flour mixture to form a chunky batter.
  • In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. (If you don't have a thermometer a cube of bread will brown in about 4 minutes.)
