3 cups whole milk, divided
¼ cup cornstarch
⅓ cup white sugar, or more to taste
1 cup semisweet chocolate chips
1 pinch salt

Steps:

  • Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
  • Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. Cook, whisking as needed to prevent lumps from forming, until mixture begins to thicken, 8 to 10 minutes. Add chocolate chips and salt. Continue stirring until chips are completely melted and pudding is smooth and thickened, about 7 minutes more.
  • Pour pudding into 1 large bowl or 6 individual bowls. Place plastic wrap directly on top of the pudding to prevent a skin from forming; smooth it gently against the surface. Refrigerate for at least 3 to 4 hours before serving.

This delightful pudding is always a treat and easy to whip up using common pantry ingredients. I usually top the pudding with M&M's. My husband likes whipped topping on his and our daughter loves to dip fresh strawberries in hers. -Carrina Cooper, McAlpin, Florida

1 cup sugar
1/2 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon salt
4 cups whole milk
2 tablespoons butter
2 teaspoons vanilla extract
OPTIONAL: Sweetened whipped cream and M&M's

Steps:

  • In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. If desired, garnish with whipped cream and M&M's.

Im particularly fond of puddings, and this is one of my favourites, especially as the colder nights are approaching. It's an old traditional recipe but with a little addition that gives it that extra something. This pudding should be a sin! Chocolate Eves Pudding.

Number Of Ingredients 8

12 ounces apples
2 ounces sugar
1 clove (or 2 if you like a stronger taste)
2 ounces butter
2 ounces caster sugar
1 egg
2 ounces flour
chocolate (as much or as little chocolate as you want to indulge in!)

Steps:

  • Slice the apples finely.
  • Grease a 1 pint fireproof dish and place half the apples in it. Add the sugar and cloves then place the remainder of the apples on top.
  • Cream the butter and sugar together then add the beaten egg a little at a time. Add the sifted flour to this mixture and mix well.
  • Grate as much of a good quality chocolate bar as you wish into the mixture and mix well again.
  • Spread over apples and bake until the sponge is firm and lightly browned.
  • Serve directly from the dish and enjoy! If you're not serving it to the kids, you may wish to substitute the chocolate for chocolate liqueur.
  • How much you use is again, entirely up to you!

Here's a little reminder of a delicious British pudding you probably haven't eaten in years

6 large Bramley apples, finely sliced
200g unsalted butter
140g raisins
100g soft brown sugar
4 eggs
200g self-raising flour

Steps:

  • Heat oven to 180C/160C fan/gas 4. Peel, core and slice the apples. Grease a large serving dish, about 2.5 litre/3 litre with 25g/1oz of the butter and tip in the apple. Scatter the raisins over the top.
  • In a separate dish beat the remaining butter and sugar together for 10 mins until the butter turns pale and the sugar starts to dissolve. Beat in the eggs, then carefully fold in the flour with a large spoon. Spread the batter over the apples, then bake for 45 mins until golden. Serve with the custard, below.
