Number Of Ingredients 4

pastry for a double-crust 9-inch pie, unbaked
6 medium apples
12 tablespoons granulated sugar (the pie is not extremely sweet, so if you're used to very sweet things or your apples are tart, don')
2/3 cup semisweet chocolate, pellets

Steps:

  • Peel, core and quarter apples. Slice very thinly.
  • Place 1 layer of apple slices on the bottom crust. Sprinkle with 2 tablespoons (or to taste) of sugar. Repeat twice.
  • Spread chocolate pellets over top.
  • With remaining apples, make 3 more apple/sugar layers.
  • Top with 2nd crust and seal edges. Make an incision on the top.
  • Bake in preheated oven at 450F for 15 minutes, or until golden.
  • Lower heat to 350F and continue baking for another 25-30 minutes, or until apples are tender.

VERMONT APPLE PIE

3 pounds peeled, cored, sliced tart apples
3/4 cup granulated sugar
3 tablespoons cinnamon
4 tablespoons all-purpose flour
Pinch nutmeg
Two 9-inch pie crusts
2 tablespoons butter
1 egg
1 tablespoon water

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix sliced apples with sugar, cinnamon, flour, and nutmeg. Place 1 of the pie crusts into a 9-inch pie plate. Place the apple mixture into the piecrust and cover with a crust top. Add butter into apples, if desired. Combine the egg and water and beat to make an egg glaze. Brush the top crust with the egg glaze for a nice glossy appearance. Bake in the oven for 50 to 55 minutes. Make sure to place pie on a tray to prevent juices from spilling into the oven.
  • Test pie with a sharp knife to feel if apples are tender enough for your taste. If necessary cook pie for 5 minutes more and test again. Repeat process if desired.
  • Cool and serve with ice cream or any of your favorite toppings.

CHOCOLATE APPLES

Make these chocolate apples as a treat for a kids' party. Great for Bonfire Night or Halloween, cover in chopped nuts, sprinkles and honeycomb pieces

200g milk chocolate, finely chopped
4 small eating apples
sugar strands, finely chopped nuts, sprinkles, honeycomb pieces
50g of each white and dark chocolate, chopped (optional)
4 skewers, wooden chopsticks or large lolly sticks

Steps:

  • Put the chocolate in a heatproof bowl set over a pan of just simmering water, being careful that the bowl doesn't touch the water. Stir frequently for 10 mins until completely melted, smooth and shiny. Remove from the heat. Alternatively, heat the chocolate in short bursts in the microwave, stirring between each burst, until melted.
  • Put the apples in a heatproof bowl and pour over boiling water from the kettle. Drain carefully, and wash under hot water to remove any residual wax on the skin. This helps the chocolate stick better. Pat dry with kitchen paper, remove the stalks and push a lolly stick or skewer in its place.
  • Line a baking tray or large board with baking parchment. Hold the apples by their sticks and dunk into the melted chocolate. Use a spoon to coat the tops of the apples if you like. Once the apples are completely coated, hold over the bowl for a few seconds for excess chocolate to drip back into it, then place, stick pointing up, onto the prepared tray. Leave to set for a minute or two.
  • Tip the decorations into separate bowls. When the chocolate on the apples is just starting to set but not fully firm, sprinkle the decorations onto the apples. Hold them on their side and rotate using the stick to completely cover. Place back on the tray and leave until completely set.
  • If using the white and dark chocolate to decorate, heat each separately, as you did the milk chocolate in step 1, then leave to cool slightly. Melt the dark chocolate first, then when the chocolate apples are set hard, use a teaspoon to drizzle this over them, again holding the stick so the apple is on its side and rotating the apple. Have a sheet of baking parchment underneath to catch any drips. Place back on the tray and leave to set, then repeat the process using the white chocolate. Will keep in an airtight container in a cool place for two days.

2 eggs
1 1/4 cups sugar
1/4 cup milk
60 g bittersweet chocolate, melted (2 ounces)
1/2 cup butter, melted
1 teaspoon vanilla
1 pie crust (for 26cm/10 inch pie pan)
3 apples (thinly sliced)
1/3 cup walnuts

Steps:

  • Preheat oven to 180°C (350º) (heat and timing are basing it on convection oven).
  • Prick pie crust and par- bake for 5 minutes.
  • Beat eggs well.
  • Add sugar and beat again.
  • Add milk, vanilla, chocolate and butter and mix well again.
  • Pour apple, walnuts and finally the chocolate mix into pie crust.
  • Bake at 180°C (350º) for 30-35 minutes or until pie begins to crack on top.
