- Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
- Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
- If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.

- Gently rinse strawberries and dry on paper towels (berries must be completely dry). Line cookie sheet with waxed paper.
- In 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring frequently. Remove from heat.
- Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into saucepan. Place on waxed paper-lined cookie sheet.
- Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve. Store covered in refrigerator so chocolate does not soften (if made with oil, chocolate will soften more quickly at room temperature).

- Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt semisweet chocolate and 1 tablespoon shortening at 50% power; stir until smooth. - Wash strawberries and allow to dry completely.
- Place the chocolate chips and shortening in a microwave safe container and heat on high for about 1 minute or until melted and smooth when stirred.
- Place the white chocolate coating wafers in another microwave safe container and heat on high for about 1 minute or until melted and smooth when stirred.
- Holding by the leaves, dip half the strawberries in the chocolate mixture and half in the white chocolate. Allow excess to drip off.
- Place on wax paper and sprinkle with chopped nuts or coconut or sprinkles or drizzle with the opposite color or chocolate.

- Wash the strawberries. Then, slice the bottom point off the strawberry, so that it can stand up straight. Next, pluck the stem off. Using a paring knife or strawberry huller, scoop out the top to make room for the cheesecake.
- This is the most important step...dry off the strawberries individually with paper towels. If the strawberries are wet, the chocolate will not stick.
- Melt the chocolate in a double broiler or microwave. (Note: if using a microwave, only melt it in 20-second increments to make sure it doesn't burn). I use Ghirardelli 60% Cacao Bittersweet Chocolate Chips.
- Line a cookie sheet (that will fit in your freezer) with waxed paper or a Silpat. Dip the bottom half of each strawberry into the melted chocolate and place on the lined pan. Once the pan is full, place it in the freezer for about 5 minutes or until the chocolate has hardened.
- While the chocolate is cooling, make the cheesecake filling. In a small bowl, beat together the cream cheese, powdered sugar and milk, until smooth. If it seems too thick, add a splash more milk.
- Spoon the cheesecake mixture into a piping bag with a star tip. If you don't have a piping bag, scoop it into a large Ziploc bag and snip off the corner. Remove the strawberries from the freezer and pipe in the cheesecake filling. Top with a slivered almond and serve or refrigerate until ready to serve.

- Melt both the semisweet and white chocolate in separate glass bowls set over saucepans of simmering water or in the microwave. Line a baking sheet with parchment paper.
- Grab a strawberry and gently lay it on its side in the bowl of melted semisweet chocolate. Hold it by the stem and twist it so that it's mostly covered with chocolate. Gently lay it on its side on the sheet of parchment. Repeat with the rest of the strawberries.
- Let the strawberries sit at room temperature to set slightly, about 30 minutes. (If you're in a hurry, you may place them in the fridge.)
- Transfer the melted white chocolate to a small piping bag and drizzle stripes all over the chocolate on the strawberries--you can do any designs you like! Then store the strawberries in the fridge to set completely.

- Rinse strawberries, drying them with paper towels.
- Melt chocolate in top of double boiler or in microwave (full power in 30 second intervals, until chocolate is melted, stirring often).
- Note 1: CHOCOLATE SHOULD NOT BE TOO HOT - IF IT GETS TOO HOT IT WILL DRIP ON THE BERRIES INSTEAD OF ADHERING TO THE BERRIES.

- using a small melon baller (or a paring knife) scoop out the top of the strawberry removing stem and some of the center.
- melt chocolate in microwave at medium heat. use small intervals like 30 - 45 seconds. mix between each interval, do not overheat.

- While they are drying mix the cream cheese, sugar and syrup using an electric mixer.

- 1. Wash strawberries and let dry completely. If they are not all the way dry the marshmallow will not stick.
- 2. spred out and lightly greas enough wax paper to place strawberries on after they are dipped.
- 3. In a larg mixing bowl (I use my kitchen aid mixer bowl) sprinkle gelatin over 1/2 cup water; set aside.
- 4. In a large heavy saucepan, combine sugar, corn syrup, salt, and remaining water. Bring to a boil, stiring occasionally. Cook without strring, until a candy thermometer reads 240* (soft-ball sstage)
- 5. Remove from heat and gradully add to gelatin in small stream while beating. Beat on high speed until mixture is thick and the volume has doubled, about 15minuts, it should look like marshmallow cream, beat in vanilla extract. Start next step immediately
- 6. Either buy holding on to the stem or by inserting a wood or bamboo skewers into the stem end carefully dip in marshmallow then set on wax paper. work quicky marshmallow will start to set kinda fast.
- 7. When you are done dipping the strawberries in the mashmallow let them set for about 45min to and hour to let set up a little. There will probably be marshmallow remaining I drop it by spoon full onto the greased wax paper, then toss in powdered sugar (some times I add cocoa power to it) when set up, and store in an air tight container. I like to play around with the extra! You can try all sorts of fun stuff!
- 8. After strawberries with marshmallows have set up a little melt chocolate almond bark or just chocolate in microwave or double boiler. If you are in a hurry I would use almond bark, it sets up way faster then real chocolate. Dip strawberries in chocolate far enough so you can just see the marshmallow peaking out. return to wax paper and allow chocolate to harden.
- 9. Peal strawberries from wax paper and serve! I like to sprinkl with a little powdered sugar.
CHOCOLATE-DIPPED STRAWBERRIES
Steps:
- Rinse the strawberries and let dry completely on paper towels. Line 2 baking sheets with parchment or waxed paper. Melt and temper the chocolate (see pages 25-30).
- Hold a strawberry securely between your thumb and forefinger, and with the pointed end down, dip the berry into the chocolate, covering three-quarters of the berry. Remove the berry from the chocolate, gently shake off the excess chocolate, and place the berry on the prepared pan. Repeat with the remaining berries. Let the chocolate set up at room temperature, or chill in the refrigerator for 15 minutes. The dipped berries must be served within 4 hours of preparation; if not served immediately, refrigerate until 15 minutes before serving.
